By the way, the website “Your Cook” presents a wide selection of pancake recipes for every taste, which you can find here:

So, 2 eggs and 1.5 tbsp. beat the sugar with a whisk until foamy, add milk, salt and flour, kneading everything until smooth, then pour in the sunflower oil and leave the dough to sit for about 20 minutes, after which we begin to bake the pancakes.

When all the pancakes are ready, leave them to cool while we prepare the fillings. In general, you can use any sweet curd filling here, but I decided to resort to a tandem of two different curd masses: with raisins and poppy seeds for greater originality.

It's easier to prepare them:

  • Place 3 tbsp in separate bowls. curd mass, 1.5 tbsp. sour cream and 1.5 tbsp. granulated sugar, after which add washed and boiled raisins to one of the bowls, and poppy seeds to the other.
  • Mix all the ingredients and we have 2 different fillings for pancakes ready.

Now let's fill the pancakes. Place a strip of filling on the edge of the spread pancake and roll it into a tube. We do this with all the pancakes until the filling is gone.

  • In a greased baking dish, place pancake tubes in the shape of a snail so that the entire bottom area is filled.
  • Let's prepare the gravy. Beat 2 eggs with the remaining sugar (1.5 tbsp), vanilla sugar and sour cream (3 tbsp) until a homogeneous liquid consistency.
  • After this, pour the gravy over the pancakes, distributing it evenly over the entire surface of the pie.

The pie should be baked for 20-30 minutes at a temperature of 190-200 o C. The aroma of this dessert is one and the same as the legendary cheesecake. Try it, you won't regret it.

  2. Now pour kefir into a large bowl. Add a pinch of salt. Breaking the eggs. Shake lightly to separate the eggs.
  3. Add flour. All at once. Don't be afraid of the lumps, they will disperse later. Stir and get a thick dough, not at all like pancake dough.

  4. Not scary! Pour soda into a glass, boil water and pour boiling water from the kettle over the soda. First half a glass, and when the bubbles subside, another half a glass.

  8. When it is well heated, pour a ladle of dough, rotating the pan so that it is evenly distributed over it.
  9. We bake on one side first, turn over and bake on the second. By the way, many, for some reason, when preparing pancakes with cottage cheese or any other filling, do not bake the second side of the pancakes. But I like them brown on all sides.
  10. Place the finished pancakes on a flat plate and brush with melted butter.
  11. When all the pancakes are ready. You can fill them with cottage cheese. We like it sweet. That's why I pre-mix it with sugar.
  12. Place the first pancake on the cutting board, place 1-1.5 tablespoons of cottage cheese on one edge of it, which is closer to you. The quantity depends on the diameter of the pancakes. I have two pancake pans, one large 22 centimeters, the second less than 18 centimeters. For pancakes, I add at least 1.5 tbsp from the first frying pan. with a heap of curd filling, for small ones maximum 1 tbsp.
  13. If you do not plan to further fry pancakes filled with cottage cheese in a frying pan or bake pancakes with cottage cheese in the oven, then you do not need to fold such an envelope. You can simply roll it up and serve. Which is what I often do, since I myself don’t really like hot cottage cheese.
