Add salt and sour cream to them and beat. If you need to make an omelet quickly, then you don’t need to take out the mixer. Beat with a fork and add sour cream. Bring until smooth. If desired, you can add your favorite natural seasonings (not powdered) and a little herbs.

If you add the more common milk instead of sour cream to this dish, the omelette will turn out softer, but less satisfying.

Wash the spinach leaves well and shake off excess water. Finely chop the greens and add to the bowl with the egg mixture.
Wash the green garlic feathers too and finely chop them with a knife. Place the garlic in a bowl and mix all the omelette ingredients thoroughly. Instead of garlic, you can use green onions, but then the omelette will not be able to please you with such a delicate and appetizing smell.

Grease the prepared omelette baking dish with a piece of butter so that the dish does not stick to the walls during baking.

Stir the egg mixture again until it is more or less uniform and place it in a greased pan. Light the oven and preheat it to 180 degrees.
