Vegetables, without a doubt, can be called the basis of a complete diet. Everyone eats vegetables. Vegetarians and meat eaters, raw foodists and lovers of well-fried steak, all, one way or another, include vegetable dishes in their daily diet. Some eat vegetables as a side dish, for others vegetables are the main dish, but there is not a single person on earth who could do without vegetables. It would seem that everyone who has ever stood at the stove or simply chopped cucumbers and tomatoes into a salad knows everything about vegetables. At least everything you need to easily and effortlessly cope with their preparation. However, as in preparing dishes from any other products, preparing vegetable dishes has its own little mysteries and secrets. Today “Culinary Eden” will share with you the most useful, in our opinion, tips on how to prepare vegetables and preserve all the valuable nutrients and vitamins that vegetables are so rich in.

1. When buying vegetables, try to choose not only the ripest fruits and roots, but pay special attention to their freshness. Don't forget that vegetables begin to lose their beneficial properties immediately after they are harvested. Already in the first days after harvesting, even with proper storage, vegetables lose a fairly large percentage of vitamins and other nutrients. When you bring vegetables home, try to eat them as soon as possible; do not store vegetables for too long. If you need to store them for a long time, simply freeze them. When properly frozen, vegetables retain all their nutritional value in full.

2. When heated for a long time, vitamin C and B vitamins in vegetables are almost completely destroyed. These vitamins are also destroyed when peeled vegetables come into contact with metals such as copper and iron, and even simply under the influence of oxygen on peeled fruits. That is why it is so important not to overcook vegetables and generally expose them to as gentle an effect as possible during heat treatment. When preparing vegetable dishes, try to use stainless steel or enamel cookware. You can also use heat-resistant glassware, but it is better to avoid plastic and aluminum dishes. It is better to cook vegetables over low heat in a tightly sealed container.

3. Any vegetables you can eat raw, try to eat them raw. This does not mean that you should give up boiled, stewed or grilled vegetables. The point here is that raw vegetables and cooked vegetables have different effects on our body. For example, raw vegetables perfectly stimulate the production of gastric juice and many digestive enzymes, while boiled vegetables have a beneficial effect on the stomach in diseases of the digestive tract. Also, during heat treatment, carotene in vegetables is destroyed. For example, boiled carrots contain half as much carotene as raw carrots. This applies to most other vitamins as well. That is why you should not neglect fresh, raw vegetables.

4. Steam vegetables. It is this method of heat treatment of vegetables that helps preserve most of the vitamins and minerals that vegetables are so rich in. By steaming, you can save time and effort and retain all the important nutrients. You can easily and easily steam both fresh seasonal vegetables and frozen vegetables: carrots, broccoli, spinach, cauliflower or green beans. If you don’t have a double boiler, you can pour about one-third of the volume of water into the pan, place a metal colander on top of the pan, in which peeled and chopped vegetables are laid out in layers, and close the entire structure with a tight-fitting lid. Place the pan with the vegetables over medium heat and cook for about eight to ten minutes until the vegetables are soft. Make sure that the water in the pan does not completely boil away during cooking. The vegetable broth that remains in the pan after steaming the vegetables is also very healthy and rich in minerals, vitamins and other nutrients. Don't throw it away, but use it to make sauces and soups. Another advantage of steaming vegetables is that this method of cooking does not use any fats or oils, which is extremely important for many diets.

5. Blanching. This is another way to prepare vegetables, which will help to fully preserve their nutritional value and, at the same time, prepare a wonderful and tasty side dish from fresh young vegetables. It is best to blanch tender young fruits, ones that can be eaten raw. All you need to do is dip your vegetables in boiling water for just one minute to cook them on the outside but remain fresh and crispy on the inside, which will enhance both the taste and appearance of your vegetables. You can also blanch leafy vegetables such as spinach, this will help make them soft and tender. Blanched vegetables simply need to be seasoned with a little olive oil and a drop of fresh lemon juice. Preparing blanched vegetables takes literally a few minutes, and the result will please any gourmet.

6. Stewed vegetables were prepared by everyone who is at least a little familiar with cooking. The taste and aroma of stewed vegetables is familiar to everyone since childhood. Properly prepared stewed vegetables have a beneficial effect on digestion and delight our taste buds with their delicate and bright taste. If at some point you suddenly decide that stewed vegetables are a boring and hackneyed dish, remember that vegetables can be stewed not only in water. To stew vegetables, you can use cream and sour cream, vegetable, fish and meat broths, and even complex wine-based sauces. Quickly steam the zucchini and young bean pods cut into small cubes until half cooked, and then simmer them in cream, adding a little white wine at the very end of cooking. The result will not disappoint you.

7. Battered vegetables are another great way to cook vegetables in a way that fully preserves their flavor and juicy tenderness. This cooking method has been known since ancient times and is most popular in oriental dishes. Tempura in Japan and pakora in India are rightfully considered the pride of local and world cuisine. To prepare tempura, vegetables, cut into small pieces, are dipped into a liquid yeast-free batter and then deep-fried. But in India, the dough for pakoras, in which vegetables are dipped before deep-frying, is made not from wheat, but from pea (more precisely, chickpea) flour. In this case, the crust on the vegetables is much crispier and more tender, in addition, pea or chickpea flour contains more valuable nutrients than regular wheat flour. Often, when preparing pakoras, various spices are added to the batter, which shade and emphasize the taste and tenderness of vegetables hidden under a crispy, aromatic crust. Vegetables cooked in batter are usually served with various sauces and used as a hot appetizer or main dish.

8. Stuffed vegetables. There is hardly a single person who has never tried peppers stuffed with minced meat and rice, or fried stuffed zucchini. But if you want to cook something unusual, you will have to use your imagination. What do you think about baked potatoes stuffed with mushrooms and sour cream or cherry tomatoes stuffed with cheese and garlic as a cold appetizer? You just need to open the door of your refrigerator and take a fresh look at the products in it, so that your imagination will tell you the recipe for a new delicious dish. Cut bell peppers and large tomatoes in half, remove the core with seeds, fill with minced meat or minced vegetables and cereals, carefully place in a baking dish and pour over your favorite sauce. Place the vegetables prepared in this way in a well-heated oven and bake for half an hour over medium heat. The finished dish will delight you with its ease of preparation, and your guests with its bright colors and juicy, delicious taste.

9. Grilling is one of the hottest trends around the world. European and American chefs advise grilling any type of meat, poultry, fish and, of course, vegetables. Modern nutritionists recommend this method of cooking as a healthier replacement for fried foods. In addition to the fact that grilled vegetables have an appetizing appearance and are distinguished by a bright taste and pronounced aroma, such vegetables are also extremely healthy. By grilling, you don't use fats and oils that have to be mercilessly heated in a frying pan, as is the case with fried vegetables, which means that no carcinogens are formed in your dish. It is extremely difficult to spoil grilled vegetables, but even a completely inexperienced housewife can prepare a tender, delicious side dish of juicy vegetables with a crispy crust. Grilled vegetables can not only be used whole as a side dish for meat or fish dishes, but also used to make an amazingly tasty appetizer or vegetable caviar. Grill three sweet bell peppers, one medium hot pepper, one eggplant and a couple of tomatoes. Peel the fried vegetables, mash the pulp with a spoon or pestle, season with olive oil, salt and finely chopped cilantro or parsley. Mix thoroughly. Serve on a grilled piece of black bread.

10. Another interesting modern way to cook vegetables is to steam vegetables using their own juice. This method is called panning, from the English word pan - frying pan, pan. Pour a tablespoon of olive or any vegetable oil into a deep frying pan, lay out layers of vegetables cut into thin circles or strips, lightly sprinkle with your favorite seasoning and, tightly closing the lid, cook over medium heat for 5-8 minutes. It is very important that the lid closes your pot or pan as tightly as possible, so that all the steam that is released from the heated vegetables does not escape outside, but remains in the pan. When cooking vegetables this way, shake the pan frequently to prevent the bottom layer of vegetables from burning. Panning is best suited for cooking carrots, beans, pumpkin and zucchini. The vegetables turn out aromatic, tender and crunchy at the same time, while retaining all their beneficial properties. Vegetables prepared in this way can be served as a side dish with the main dish, topped with creamy or cheese sauce.

Everything that we talked about today about how to cook vegetables is only a small part of the methods of preparing vegetable dishes that exist in modern cooking. Don't be afraid to get creative and try new combinations of vegetables and their cooking. And “Culinary Eden” will always be able to offer you the newest and most interesting recipes and ideas for your creativity.

Various expensive restaurants are introducing special menus for vegetarians, and doctors and researchers are sounding the alarm that people are eating too much salt, oil, sugar and meat, but not enough vegetables. Therefore, every housewife who cares about her health and the health of loved ones should know what to cook from vegetables in any situation and on any day of the week.

This section on our culinary portal contains exclusively recipes in which vegetables are the main ingredients. Believe me, you just have to look at the names of the recipes to understand that there are dozens of interesting dishes and just as many new or well-forgotten old vegetables that can be included in your diet.

We need to try to change old eating habits and destroy stereotypes. Many men say that they definitely need meat, although they have not tried normal vegetable dishes, which, even for proper nutrition of athletes, can replace animal protein.

All of the above factors prompted the site editors to include vegetable recipes in a separate section. Here you can find a wide variety of complex and simple vegetable dishes: recipes with photos are simple and tasty. The most delicious zucchini pancakes with semolina in the oven

Ingredients: zucchini, egg, salt, pepper, semolina, vegetable oil

Zucchini pancakes turn out not at all greasy and very tasty if you cook them in the oven rather than fry them in a frying pan. This is a great snack or vegetable side dish for the whole family.

Ingredients:
- 1 zucchini;
- 1 egg;
- salt to taste;
- pepper to taste;
- 2 tbsp. semolina;
- 1 tbsp. vegetable oil.

Many people underestimate the potential of vegetables, considering them something secondary, like an optional addition to meat or fish. Almost everything is prepared from the latter, except perhaps desserts; vegetables are destined for the role of a side dish, or, at best, an appetizer before the main course. At the very least, this is not fair. The vegetable fraternity should be respected no less than their more fortunate neighbors in the refrigerator, and the number of different ways in which they can be prepared will be the envy of many other products. Of course, I'm not encouraging anyone to become a vegetarian, but you may end up loving vegetables a little more after reading this article.

They deserve it.

Bake in the oven

Baked vegetables can serve as a main dish or as a side dish. The good news is that you can do this with many, if not most, vegetables. For example, place the carrots on a sheet of foil, season with salt, pepper and cumin, seal the foil and bake in the oven until tender. You can bake potatoes, beets, fennel, onions, and so on in various ways.

Fry

With this, I believe, there will be no questions. I can only recommend using it instead of a regular frying pan and cooking over high heat so that the vegetables do not lose their color and crispness. The thinner you cut the vegetables, the faster they will cook.

Glaze

In order to cook vegetables, such as carrots, in this unusual way, you should boil them until soft, then fry them in syrup, stirring constantly. There are a great many variations of this recipe, but the end result should be bright vegetables with a sweet taste, pleasing to the eye with a shiny glaze. You can also glaze beets, turnips, onions, or even sweet potatoes if you can get your hands on them.

Steam

Prepare the salad

The salad can be prepared from any vegetables, they seem to be created for this, so you shouldn’t be afraid of experiments. If you serve salad as a side dish, remember that, firstly, it should not be too heavy, and secondly, it should not distract the eater’s attention from the main dish (unless, of course, this was not intended by you from the very beginning).

Blanch

Blanching is a great method for all vegetables that can be eaten raw. If you plunge vegetables into boiling water for a few moments, they will cook on the outside but will remain fresh and crispy on the inside, enhancing both the flavor and texture. You can also blanch leafy vegetables, from regular lettuce to cabbage. Blanch the leaves, place in a colander to drain, then season with olive oil and salt and garlic.

Cook in batter

Tempura, a battered cooking method invented by the Japanese (or rather, borrowed from the Portuguese), is also suitable for vegetables. Carrots, sweet peppers, pumpkin, zucchini, green beans, broccoli, onions, mushrooms and so on are suitable for it. It's very simple - chopped vegetables are dipped in batter and then deep-fried. Vegetable tempura can be served with sauce as a hot appetizer or main course.

Put out

Stewed vegetables are a dish familiar from childhood, and probably no one needs to learn how to cook it. Well, if at some point it seems to you that stewing vegetables is boring and uninteresting, remember that you can use not only water for this. Give the zucchini a quick boil and then finish in the cream and you won't be disappointed.

Stuff

Zucchini or peppers with minced meat are familiar to everyone, so if we want to cook something unusual, we’ll have to use our imagination. How about potatoes stuffed with mushrooms or small cherry tomatoes stuffed with cheese as a cold appetizer? Just look at your existing products from an unusual angle and you will have no shortage of ideas!

Cook in

Sous vide is a relatively new method of cooking, for which food is sealed in vacuum bags and cooked in a water bath at the cooking temperature, and not a degree higher. This allows you to get dishes of amazing taste and texture, which retain a maximum of vitamins and nutrients, and vegetables, fortunately, can also be prepared this way.

Make a casserole

Vegetable casserole with a golden cheese or bread crust is another way to prepare a tasty, satisfying and warming vegetable dish. Grease a baking dish with butter, add chopped vegetables, add liquid (such as cream or wine) if necessary, season well, sprinkle with grated cheese or breadcrumbs, and bake until done.

Grill

The grill is the best compromise if you want to cook a tasty dish using a minimum of fat, and many vegetables do well on the grill. In the hot season, it is better to cook vegetables outdoors, but winter is also not a reason to deny yourself a grill: an electric grill for the kitchen will come to the rescue.

Make pancakes

Vegetable pancakes are a wonderful dish that is familiar to everyone since childhood. By the way, it is not at all necessary to prepare pancakes from long-familiar zucchini and potatoes. How do you like the idea of making tender, airy pancakes with leeks or the usual carrots?

— I believe that in a culinary sense, mushrooms can be considered as vegetables.
