For the test:
1.5 cups flour;
0.5 cups of kefir;
1 tbsp. l. vegetable oil;
2 eggs;
0.5 tsp. soda;
a pinch of salt.
For filling:
turkey fillet - approximately 300 g;
broccoli - approximately 200 g;
bell pepper - 1 pc.;
eggplant - 1 pc.;
hard cheese - 200 g;
onion - 1 pc.;

garlic - 1-2 cloves;

vegetable oil;
salt, red pepper, black pepper, mixture of herbs (thyme + rosemary + basil), paprika.

Cooking steps

Prepare the ingredients for the pie filling.

Cut the turkey into small pieces.

Finely chop the onion and garlic.

Cut the pepper into small cubes.

Boil broccoli for literally 2 minutes in boiling salted water, then rinse with cold water (to preserve color). Fry the onion and garlic in oil until transparent, add the meat.

After 5 minutes, add broccoli and pepper, stir.

When the filling is ready (depending on the meat), season and leave to cool.

Cut the eggplant into thin slices, fry in a frying pan, adding just a little oil.

While the turkey and vegetable stuffing cools, make the pie crust.

Combine all the ingredients and mix, you should get a loose dough.

Cut the cheese into small cubes, add to the cooled filling, mix everything, add salt and pepper, if necessary.

Place slices of fried eggplant on the dough, place the filling on top, press down slightly.

Place the pie with turkey and vegetables in an oven preheated to 180-200 degrees for about 30 minutes.

Turkey Snack Pies

1. In a small bowl, dissolve the yeast in warm milk with added sugar and ½ cup flour. Cover the dough with a napkin and leave for 30-40 minutes in a warm place to ferment.

2. Add salt and melted and cooled butter. Adding sifted flour, knead into a soft, pliable dough, knead and leave in a warm place to rise for about 1 hour.

3. Let's prepare the filling. In a frying pan with vegetable oil, fry the diced onion, add chopped mushrooms and simmer, stirring, until the liquid evaporates. Add diced turkey and fry until golden brown.

4. Cut the tomatoes and bell peppers without seeds into cubes and add to the pan. Stir everything and simmer until as much liquid evaporates as possible. At the end of simmering, add flour to thicken the liquid juices into a sauce. This is necessary to prevent the filling from leaking out during baking.

5. Knead the risen dough and roll it out into a thin layer (about 5 mm), cut out circles with a glass. Place a little grated cheese in the middle of each circle and the filling on it. Pinch the edges to form crescent-shaped pies. However, you can choose the shape of the pies that you like.
