Pie with potatoes is a holiday every day without special expenses. Pie with potatoes in the oven: a simple recipe Recipes for pie with potatoes in the oven

Everyone has heard that a hut is not red in its corners. That is why today I prepared a pie with potatoes in the oven for my family. I made a simple recipe from the most available products, and the main one was potatoes. This is a universal product; many dishes can be prepared from it. And one of the most common is mashed potatoes. Well, in our case the puree itself will be the basis for the pie.

By the way, again this dish is from a series of aspics, which I loved for their uniqueness; it was also written about them. You can use any filling, the main thing is that the products combine to your taste. Our recipe today uses potatoes and onions, the most suitable, budget ingredients.

We will need:

  • flour and kefir of any fat content - 2 cups each;
  • potatoes - 6-7 medium-sized root vegetables;
  • chicken egg - three pieces;
  • onions - 2 heads;
  • granulated sugar -1 teaspoon;
  • soda - 0.5 teaspoon;
  • herbs or seasonings, salt, vegetable oil - as needed

Combine sugar, soda and kefir, mix, leave in a warm place for 30 minutes so that the reaction occurs and bubbles appear. This is necessary so that the soda is extinguished, which will make the dough soft, tasty, and airy.

While the kefir is quenching, let's start preparing the filling. Peel the washed potatoes and boil them in salted water until fully cooked. Cool the cooked potatoes a little.

Let the potatoes cool, let's get on with the onions. Peel the onions, chop finely, fry in a frying pan with vegetable oil until transparent.

Mash the potatoes until they become mashed potatoes, add finely chopped herbs (I sprinkled them with spices - herbes de Provence), combine with fried onions, mix well.

Turn on the oven and preheat it to 200 degrees.

We are kneading the dough. Beat chicken eggs into kefir, add salt, and beat with improvised means (fork or mixer). Add flour in small portions, after passing it through a sieve.

Pour one part into a greased form, put the puree filling on top, pour the rest of the dough on top, bake in the oven for 30-35 minutes.

Potatoes and onions are the most popular filling for pies.

Baking with such minced meat always turns out tasty, satisfying, these ingredients are found in every home, and there are an incredible number of recipes for such pies.

Open pie with potatoes and meat

The traditional version of baking is made from yeast dough. Let's bake a potato pie.

Dough:

  • 800 gr. flour (approximately);
  • 200 ml water;
  • 1 teaspoon salt;
  • 1 tablespoon sugar;
  • 1 tablespoon mayonnaise;
  • 5 tablespoons of vegetable oil;
  • 30 gr. butter;
  • 7 grams of dry yeast.

Filling:

  • 7 -8 potatoes;
  • 400 gr. lean boiled meat;
  • 1 onion;
  • spices to taste;
  • 50 gr. vegetable oil;
  • 1 yolk for lubrication.

Heat the water almost to a boil, add sugar, salt, butter and mayonnaise, stir. Let's wait until the water cools down to 40 degrees, then pour dry yeast into this solution, stir until dissolved, then add half the specified amount of flour. The dough will be runny, but that’s how it should be. Leave it until rising for one hour. Then mix well again, add vegetable oil, add more flour and knead. Leave the elastic dough, which does not stick to your fingers, to proof again for half an hour.

Boil the potatoes until half cooked (cook after boiling for about ten minutes). Cut into thin layers, preferably using a special grater. Fry the onion, cut into thin half rings, in oil, finely chop the boiled meat or pass it through a meat grinder. Mix the meat with the onion (do not drain the oil), season to taste.

We form the pie by rolling out a large flat cake from the prepared dough. Sprinkle it with flour, wrap it around a rolling pin and transfer it to a baking sheet that has been greased in advance. Unfold the dough over the baking sheet and level it. Place potato slices on the surface of the dough and sprinkle them with spices.

Place meat and onions on top of the potato layer. We tuck the edges of the cake, covering a small part of the filling. Let the product rest for about fifteen minutes, then grease the sides with yolk.

We send the product for baking at 180 degrees. Approximate cooking time is forty-five minutes.

Yeast pie with raw potatoes

Another version of the pie is made with raw potatoes.

Dough:

  • 300 gr. flour;
  • 200 ml milk;
  • 120 gr. potatoes;
  • 2 teaspoons dry yeast;
  • 4 tablespoons of vegetable oil;
  • 1 teaspoon salt;
  • 2 teaspoons sugar.

Filling:

  • 500 gr. potatoes, preferably small, of the same shape;
  • salt, pepper, nutmeg to taste;
  • 2 tablespoons vegetable oil;
  • 2 cloves of garlic.

To prepare the dough you will need boiled potatoes, thanks to this additive the dough will be very soft. We pour cold water over the boiled potatoes in their jackets and peel them. Knead until smooth.

Dissolve sugar and yeast in warm milk. After ten to fifteen minutes the yeast should be ready. Pour half the amount of vegetable oil into the risen yeast, add the cooled potatoes, stir. Add flour, mix thoroughly. Transfer the mass to a floured board and knead with your hands until elastic and the mass is no longer sticky. Pour the remaining oil into a bowl, place the dough ball in it, and turn it over several times so that it is completely covered with an oil layer. Leave in a warm place for two hours.

Line the bottom of the baking sheet with parchment paper and place the rolled out layer of dough on it. It is better to make the layer rectangular, measuring approximately 20 by 30 centimeters. Cover the base of the future pie with a second sheet of parchment paper and leave for half an hour to proof.

Flatten the garlic cloves with the flat side of a knife, pour vegetable oil over the crushed cloves, and leave to steep for half an hour. We cut raw potatoes into very thin slices, salt them, and season with spices to taste. Let it sit for about ten minutes.

Drain the resulting liquid from the potatoes and place the circles on the pie base in rows with a slight overlap. Remove the garlic cloves from the oil and pour the aromatic oil over the potato wedges. Place the baking sheet on the lower level of the oven and continue baking at 160 degrees for approximately forty minutes. We focus on the readiness of the potatoes.
