But you can play around with other preservatives – vinegar and salt. The pattern here is this: the shorter the heat treatment time or no heat treatment at all, the more vinegar and salt.

The “Winter King” salad was invented by crafty home-cooking enthusiasts to stock up on leftover cucumber harvest for the winter. All substandard specimens will go here: crooked, oblique, too large to be put into the jar entirely. Thinly sliced ​​cucumbers, onions, dill and a simple marinade - that’s all that makes up the extremely tasty winter cucumber salad “Winter King”; sterilization is not required, so the volumes of preparation can be truly cosmic. The main thing is to find a larger vat so that you can cook, for example, five kilos of cucumbers and a kilo of onions in it at once. If you, like me, a city dweller, are not concerned about saving the harvest and prepare salads for the winter solely for gastronomic purposes, then a couple of kilos of cucumbers can be cooked in a four-liter saucepan. I just have one made of stainless steel - I do all my winter preparations in it.

Ingredients:

  • 2 kg cucumbers,
  • 400 g onions,
  • 5 sprigs of dill (green, not umbrella),
  • 2.5 tbsp. spoons of table vinegar 9%,
  • 1 tbsp. spoon of salt,
  • 2 tbsp. spoons of sugar
  • 5 black peppercorns (optional)

Method for preparing cucumber salad for the winter “Winter King”

Preparing “The Winter King” is elementary. We take the cucumbers, wash them thoroughly, immerse them in a saucepan with water and leave for an hour or two - thanks to this simple procedure, the cucumbers, even cut into slices, will remain slightly crispy. And they are guaranteed not to soften during cooking.

Then cut the cucumbers into slices. It can be thicker, it can be thinner. I cut it thin.

Place the cucumbers in a saucepan. Cut the onion into half rings, finely chop the dill.


Place the onion and dill in the same pan where the cucumbers are already located. Sprinkle the vegetables with salt, mix and leave for 1 hour. During this time they will release juice.

During this time we prepare the jars and lids. Everyone sterilizes them as best they can. I place the jars upside down on a steamer and keep them over steam for 15 minutes, boiling the lids in a ladle.

Winter King salad is made without sterilization. We will simply boil lightly salted cucumbers in the marinade. Pour sugar into a saucepan with cucumbers, pour vinegar. (If you make it with peppercorns, then add that too, but I don’t add it, I don’t understand how to pick it out later from the finished salad.) Put it on the stove. Bring to a boil.

Let's turn down the fire. After three minutes, stir. Without fail! Because cucumbers are heated unevenly. At the bottom they will begin to turn yellow, but at the top they will remain bright green.

Notice that the amount of juice in the pan increases. The cucumbers quickly change color to that which is usually the case with pickled cucumbers, and become transparent.

Immediately remove the pan from the heat. We put the hot cucumber salad “Winter King” into sterile jars, fill it with marinade (you get a decent amount of it) and roll up the lids. We turn the jars over and wrap them in a blanket.

When cool, put it away for storage.

My salad fit into 2 jars and there was still a little left for testing. I’ll be honest: I didn’t expect such a delicious salad to turn out. Firstly, I understood why they put so many onions in it. Pickled onions are incomparable. Crispy, not bitter at all. Secondly, I was surprised that the cucumbers, even when they became transparent, still remained elastic and not overcooked. Well, a special word for taste. It is completely unobtrusive and classic. These cucumbers can be safely added to salads, used as a snack, or placed on sandwiches or sandwiches. Wash it. Place in a bowl or pan. Fill with cold water and leave for 2-3 hours. The cucumbers will be saturated with moisture, and the salad will have a crunch.

Place the chopped cucumbers in a saucepan or bowl. Peel the onions, wash and cut them into halves of rings. Small onions can be cut lengthwise into half rings.

Wash and finely chop the dill.

Add dill and onion to cucumbers.

Mix all the ingredients for the Winter King cucumber salad.

Add kitchen salt (rock salt) and ground black peppercorns. After this, stir the salad again.

Cover the container with the cucumber salad and leave for 2 hours. During this time, the cucumbers should release juice.

A few minutes before you start cooking the salad, prepare the jars and lids in which you will preserve it. It is best to preserve “Winter King” cucumber salad for the winter in 300-600 ml jars.

The jars should be washed and sterilized very well. In addition to dishwashing liquid, you can additionally wipe them with soda. You can make them sterile in the oven, steamer, on the stove over steam or in the microwave. Boil the metal lids for rolling up the Winter King cucumber salad for 2-3 minutes.

Transfer the salad to a heavy-bottomed saucepan. Place it on the stove. Cook the cucumber salad over low heat. After boiling, reduce heat.

The most convenient way to spread the salad is with a tablespoon. First I catch them, and then I fill them with marinade. The cucumbers should be completely covered with liquid. Add salad to the very top of the jars.

Cucumber salad “Winter King” for the winter It can also be stored well in jars with screw caps. Regardless of which jars you take, closing the salad in them, they will need to be turned upside down. Like other types of salads for the winter, they will need to be tightly wrapped and allowed to cool.

On the second day, the jars can be taken out to a cold place for storage. If you want to take a sample and understand whether it turned out tasty, then remember that it is best to do this no earlier than three days after seaming.
