When preparing liver pancakes from beef liver, the recipe very often advises adding vegetables to the minced meat. And the most common option is with zucchini. However, we offer a much more interesting and elegant version. For it, take a third of a kilogram of offal, a medium-sized onion and a handful of dried apricots (if it is too hard, the dried fruit should be scalded or soaked until soft). All these components are ground into minced meat. Fresh juicy zucchini is coarsely grated; excess juice is filtered through a colander. Both masses are mixed, the minced meat is seasoned (in this case it would be successful to use ground red pepper and soy sauce) and supplied with flour. And we already know how to fry such a dish.

Unexpected combination

If you are making liver pancakes from pork liver, it would be nice to dilute it with something. Unlike beef or chicken, pork offal is somewhat fatty. Cabbage makes surprisingly tender pancakes from it. It should be taken in almost half the amount compared to the liver. The result of your labors will be even more successful if you add a few cloves of garlic and carrots to the minced meat. All components are passed through a blender.
