  5. Add 480 g of flour, a glass of sugar, half a teaspoon of soda and a pinch of salt.

  6. Rub the mixture with your hands until it becomes crumbly.


  7. Turn on the oven to preheat to 180°C. Grease the mold with butter.

  8. Place half of the crumbs and form sides with your hands.

  9. Pour in the prepared filling.

  10. Sprinkle the remaining crumbs on top. Gently smooth the top with a spoon or spatula.

  11. Place in a preheated oven and bake at 180°C for 40 minutes.

  12. Remove the finished, rosy pie from the oven. Let it cool, cut it into pieces once it has cooled down and you can call everyone to the table.

  1. Sift 400 grams of flour through a sieve into a deep bowl.

  2. Add all the bulk products there: 1 teaspoon of vanilla sugar, 70 grams of sugar, half a teaspoon of salt and baking powder (a teaspoon). Stir with a spatula.

  3. Take the butter (160 grams) out of the refrigerator, roll it in flour and grate it on a coarse grater (it’s easier to grate butter in flour).

  4. Mix the butter well with the flour.

  5. Take 2 eggs and carefully separate the whites from the yolks. You will need yolks in the dough. Set the whites aside; they will be needed to prepare the filling.

  6. Make a hole in the flour mixture and add 2 yolks and 130 grams of sour cream.

  7. Knead the dough. You don't need to knead it for a long time. Make sure that the mass becomes homogeneous and collects all the flour. The dough should not be stiff or clogged.

  8. Roll it into a sausage, divide it into 5 equal parts, wrap it in cling film and put it in the freezer for 1 hour.

  9. In a separate bowl, whisk two egg whites with a teaspoon of vanilla sugar. Stop when foam forms (no need to beat vigorously).

  10. Add 250 grams of apricot jam and 450 grams of cottage cheese to the proteins.

  11. Blend everything with an immersion blender until smooth.

  12. Finally, add a tablespoon of cornstarch and the filling is ready.

  13. Remove the pits from the apricots and divide each into 4 parts.

  14. Remove the dough from the refrigerator. Prepare the mold and grate the dough directly into the mold using a coarse grater. For the bottom of the pie you will need 3 pieces of dough.

  15. Distribute the dough evenly throughout the pan and make small sides.

  3. Sift 2 cups of flour into a deep bowl.
