The recipe for cottage cheese casserole with semolina in the oven, as puffy as in a kindergarten, is especially in demand. After all, everyone remembers the taste from childhood. But for cooking it is important to know a few secrets.

Cooking secrets

The culinary tricks that any experienced housewife keeps can be applied to such a seemingly simple dish as a casserole.

  1. Choice of cottage cheese.
    For cottage cheese casserole, the basis of which is cottage cheese, it is wise to take a good, real product with a moderate percentage of fat content and moisture. Too dry cottage cheese will prevent the casserole from being elastic, and too wet curd raw material can completely deprive it of volume and shape. Very fatty cottage cheese will ultimately result in a casserole of increased density. Therefore, dry cottage cheese is sometimes diluted with kefir, and wet cottage cheese with flour.
  2. The top of the casserole is greased with yolk or butter.
  3. Semolina casserole can be not only sweetish, but also have a spicy or salty taste. To do this, all sorts of additions are added to the base with cottage cheese: olives, cheeses, cauliflower, garlic, bell peppers, chili, fresh and dried herbs, spices, quail eggs, oatmeal, pears, quince, seaweed and many other ingredients.
  4. Cottage cheese that is too dry for a casserole can be saved by preparing it with the addition of berries.
  5. The heat-resistant form is always greased with butter. Vegetable fat will not work in this case, and the surface itself is sprinkled with some kind of bulk mixture: semolina, flour, breadcrumbs.

Cottage cheese casserole with semolina and poppy seeds in a slow cooker

Using an unusual recipe for casserole with poppy seeds, you can create a delicious dessert for the whole family.

Ingredients:

  • 500 grams of cottage cheese;
  • 2 grams of vanilla sugar;
  • a pair of chicken eggs;
  • 100 grams of sugar;
  • 100 grams of semolina;
  • 75 grams of fat sour cream;

  • 5 grams of baking powder;

  1. First, transfer the required amount of cottage cheese into a bowl and break the eggs into it. Mix everything thoroughly until smooth.

  4. The final step in preparing the dough is adding poppy seeds. Mix everything well, this is necessary for even distribution of poppy seeds in the curd mixture.
  5. Transfer the curd and poppy mixture into a multicooker bowl that has been previously greased with butter.
  6. Level the surface of the dough using a silicone spatula and place the container inside the multicooker. Select the “Baking” program, program the timer for 60 minutes. The multicooker can only be opened after the program has completed.
  7. Cool the finished casserole in a bowl, then carefully place on a plate.

The dessert can be decorated at your own discretion with fruit, powdered sugar, cocoa or ground cinnamon. The calorie content of the casserole is 234 kcal per 100 grams.

Cottage cheese casserole with semolina and raisins (video)

The variety of methods presented for preparing casseroles will help every housewife choose something that will suit the taste of every family member. Cook with pleasure!

As children, we took for granted the dishes that adults treated us to. Now that we have grown up, I want to try “that same” treat again, like in kindergarten, or treat my child to it. One of these wonderful tasty and healthy dishes is cottage cheese casserole with semolina in the oven. This dessert is loved by both children and adults. However, not every housewife knows how to properly prepare a casserole so that it does not turn out rough and bland.

The main component of any casserole is cottage cheese. You should not use low-fat cottage cheese for baking so that the casserole is juicy.

If you like the grainy texture of your casserole, it is not recommended to knead the dough with a mixer. If you grind the cottage cheese by rubbing it through a sieve, the finished casserole will be airy, soft, and its structure will be uniform.

If you like a loose casserole, then it is not recommended to wipe the cottage cheese.

The casserole turns out denser, with a rubber-like consistency, if the dough contains a large number of eggs. Usually two or three are enough for 500 grams of cottage cheese.

To bake a particularly delicate delicacy, you can separate the whites from the yolks, thoroughly beat the protein mass with the addition of a pinch of salt and add it to the dough last.

Almost always, instead of flour, cooks add semolina to the casserole to make the baked goods more tender and airy. It is recommended to take no more than three teaspoons of semolina per 700 grams of cottage cheese. However, judging by experience, more is possible. The cereal should first be diluted with hot water.

There is no need to add soda, the finished cake will be airy and will not settle.

To add sophistication to the casserole, many housewives like to add fillings to it, such as dried apricots, raisins, strawberries, apples and others. Dried fruits should be kept in water in advance, then washed thoroughly. It is better to simmer fresh fruits in a frying pan for a while to allow the excess juice to melt out.

To ensure that the cottage cheese casserole is completely baked in the oven, do not give it too high a shape. The thinner the layer, the better. The dough should be placed in a form that is generously oiled and sprinkled with semolina or breadcrumbs. The top can be decorated with a layer of sour cream.

Bake the casserole in a preheated oven at a temperature of 170-180 degrees until golden brown. To prevent the crust from cracking, load the pan with the dough before the oven has fully warmed up, literally a few minutes after turning it on.

It’s simple and quick to prepare, especially if you own a multicooker, and there are more and more such people lately.

1st recipe for cottage cheese casserole (curd casserole with semolina)

This recipe for cottage cheese casserole is a classic version of the cottage cheese casserole that you were given when you were a child in kindergarten for breakfast or for an afternoon snack (curd casserole as in kindergarten). I recommend this recipe for baby and diet food.

To prepare cottage cheese casserole you will need:

Cottage cheese - 500 gr.
- eggs - 3 pcs.
- semolina - 6 tbsp. spoons
- milk - 1 glass
- raisins - 1 glass
- sugar - 3 tbsp. spoons
- salt - 1/3 teaspoon

How to cook cottage cheese casserole.

1. Pour warm milk over semolina and leave for 10 minutes to swell

2. Separate the whites from the yolks.

3. Add yolks and sugar to the cottage cheese.

4. Beat the cottage cheese with a mixer or thoroughly mash the cottage cheese with the yolks and sugar using a fork.

5. Add salt to the whites and beat them well with a mixer or using a whisk or fork.

6. Add egg whites, raisins and semolina soaked in milk to the curd mass. Note: the raisins must first be washed and dried on a cloth. Stir the resulting cottage cheese casserole dough with a spoon.

7. Transfer the curd mass into a baking dish.

I prefer to cook the casserole in a slow cooker, because... in this case, there is no need to worry that the casserole will burn. If you, like me, prepare cottage cheese casserole in a multicooker, then find the “Baking” mode in the “Menu” and set the cooking time to 60 minutes.

Bake the cottage cheese casserole in the oven at 180 degrees for about 45 minutes, until golden brown.

This is the casserole I made!

I would like to note that the casserole according to my recipe is not very sweet, it is dietary. If you have a sweet tooth, you can top the finished cottage cheese casserole with jam, condensed milk, sour cream and sugar. Or you can simply add more spoons of sugar to the casserole dough. Bon appetit!

The described recipe for making cottage cheese casserole is t.s. basic, classic. You can experiment with it as you wish. For example, instead of raisins, add any other fillings to the cottage cheese casserole: dried fruits, berries, fruits (bananas, apples), lemon or orange zest, vanilla sugar or natural vanilla, finely grated raw carrots. You can prepare an unsweetened cottage cheese casserole by adding finely chopped fresh herbs and grated cheese to the dough.

Milk for soaking semolina can be replaced with sour cream or kefir. Don't be afraid to experiment!

Instead of semolina, you can use starch, in which case the taste of the cottage cheese casserole will be more delicate. The resulting cottage cheese dish will be more like a cottage cheese pudding or a cottage cheese soufflé. We'll talk more about this in our next cottage cheese casserole recipe.
