I recently spent a vacation with relatives in Serbia, and for tea they served what we call the most ordinary, standard cupcake. However, its taste was such that I immediately asked to rewrite the recipe for me so that I could prepare the same for my family and friends. The effect was predictably violent, since no one from our circle thought that a classic cupcake could be so tender and delicate, melting in the mouth, and its aroma even attracted a neighbor to the house, who came to ask what this delicious thing was going on in my kitchen.
Today I am pleased to introduce you to the recipe. amazing poppy seed cake, how it is quickly and easily baked in neighboring Serbia - after trying it, you will be surprised, delighted and will begin to cook such a product very, very often, much like me.

Kitchen appliances

Use muffin or cupcake tins (I insist on silicone), but it is best to use a large round silicone baking dish, a pan with a non-stick coating with a volume of 500 ml, a small plastic bag, several deep bowls from 400 to 90 ml, kitchen scales or other measuring utensils, several tablespoons and tea spoons, a cut gauze, a metal whisk, a grater, a rolling pin, a sieve and a wooden spatula. I also highly recommend using a mixer or blender to mix the ingredients, as without it your cake will not have the right texture.
Be sure to make sure that the prepared dishes and utensils are well washed away from old fat using standard detergents, since delicate, gourmet baked goods in the oven do not tolerate unnecessary impurities.

You will need

You can easily replace walnuts, almonds or hazelnuts, and if you take a little of everything, it will be even better. However, in any case, make sure that they are not old and rancid, as in this case your cake will turn out bitter.

You shouldn’t use poppy seeds that have been sitting in an open bag for years for your cupcakes - this is sad, but it has already lost all its taste and beneficial properties and will feel unpleasant while eating, like sand that accidentally got into baked goods.

To quickly and without unnecessary hassle highlight white from yolk, pierce the egg shell with a sharp needle and allow the protein mass to flow out through the resulting hole. In this case, the yolk will remain inside the shell.


Bakery


Sunflower oil will not work; for these purposes, margarine is even a better solution than butter, because it will prevent your delicate product from sticking to the mold and burning. Butter quickly burns in the oven and, even worse, gets absorbed into the dough.

Fragrant and delicious homemade poppy seed cake, which we will prepare in a slow cooker. The baked goods will delight lovers of poppy seeds, juicy, moderately crumbly crumb and crispy crust. This cake keeps well for several days without losing its freshness - it will come in handy with a cup of morning coffee.

I offer the poppy seed cake recipe for a multicooker (I have a Scarlett SC-411, device power 700 W, bowl volume 4 l). If for some reason you have not yet purchased this useful electrical appliance, you can cook the cake in a simple oven. I advise you to use a mold with a diameter of 20-24 centimeters, after greasing it with vegetable oil (butter + flour). The baking time depends on the features of the oven, but set the temperature to 175-190 degrees and bake on a medium level until dry.

Ingredients:

(350 grams) (250 grams) (4 pieces ) (180 grams) (100 grams) (80 milliliters) (1 tablespoon ) (1.5 teaspoons)

Cooking the dish step by step with photos:


First of all, you need to prepare confectionery poppy seeds (100 grams). Here you decide for yourself which option you like best. Firstly, you can simply fry the seeds in a dry frying pan - this way the poppy seeds will be crispy and especially aromatic. Secondly, it can be crushed until milk is released. You can mince the seeds, grind them in a food processor, or use an immersion blender. I like it when these crispy seeds are in their whole form in the finished baked goods, so I simply dry them, stirring constantly, and let them cool.


Next, let's prepare the dry mixture: mix 350 grams of wheat flour (I use premium grade Lidskaya, but I think first grade will do) with 1.5 teaspoons of baking powder. After this, sift through a fine sieve.




At the next stage of preparing the poppy seed cake, put 250 grams of soft butter (take it out of the refrigerator in advance) and 180 grams of granulated sugar into a container suitable for whipping (you can reduce it by 50 grams if you don’t like sweets). Beat everything with a mixer at high speed for about 7-10 minutes until the butter turns white and becomes fluffy.


As a result, the sugar crystals should almost completely dissolve, and the mass should double in volume. After this, you can add chicken eggs one at a time (4 large or 5 small). Don't rush - don't add another egg until the previous one is completely combined with the sweet butter.


The result should be a soft and fluffy butter-egg mixture. I beat everything with a mixer (whisk attachment) at high speed for about 5 minutes. Pour in half of the dry mixture from step 5, pour in 80 milliliters of milk (room temperature).


Beat everything again, but not for long and at low speed - just until the ingredients are combined. Add the second half of the flour, poppy seeds and baking powder.


It works great to mix everything together using a spatula or hand whisk. In general, cake dough, as a rule, is not kneaded for a long time so that the crumb of the finished product does not turn out dense and clogged.


Lubricate the multicooker bowl with a small amount of refined vegetable oil or butter (take a teaspoon of the total weight), but then additionally sprinkle the surface with wheat flour (shake off the excess). This method of preparing a baking dish is called a “French shirt”.

Perhaps the most beloved and relevant cake recipe today is the traditional poppy seed cake. It is pleasant and easy to prepare, regardless of the season, your place of residence or your mood, it will always be tender, tasty and soft.

The first step is to preheat the oven, setting the temperature to 180 degrees. The recipe calls for the following ingredients:

  • Two medium chicken eggs
  • Half a kilogram of flour (2 cups of 250 gr.)
  • One glass of granulated white sugar
  • 125 gr. sunflower oil, odorless
  • 125 gr. milk
  • 6 tbsp. spoons of poppy seeds
  • Vanillin and ripper

First, beat the eggs, gradually adding sugar in portions, you can beat it by hand, or with a mixer. Next, vegetable oil, milk, a pinch of salt and vanillin. In a separate bowl, mix poppy seeds with flour and baking powder. Mix everything thoroughly: egg mass and poppy seeds with flour, place the dough in the mold. It must be greased with vegetable oil and sprinkled with flour in advance.

Place in the oven for 30-45 minutes, it depends on the shape. As soon as the middle is baked, you can remove it. Before serving, cool and sprinkle with powdered sugar. All! An easy and simple recipe to note for every housewife.

Cupcake in a slow cooker

For those who do not have an oven or housewives who prefer to cook in a slow cooker, there is another easy and tasty recipe. To prepare this poppy seed cake you need to take:

  • A glass of white granulated sugar
  • Three medium chicken eggs
  • 150 gr. delicious butter
  • 50-100 gr. poppy (depending on how much the family likes)
  • Ripper
  • A glass of wheat flour
  • Optional – two spoons of blueberry (cherry, strawberry) jam

Before cooking, remove the butter from the refrigerator to soften slightly. Meanwhile, beat the eggs and sugar well. Add the already softened butter and continue beating until thick and fluffy. After this, add the poppy seeds, again beating the mass thoroughly. Add two tablespoons of jam, it is necessary to color the dough a little and gives it a sweet and sour aroma. The recipe calls for adding jam, but if you are very against it, you can omit it. Then your poppy seed cake will be golden in color with the aroma of poppy seeds and bread.

Place the mixture in the multicooker bowl and cook for about 65 minutes, turning on the baking mode. After cooking, remove the cake, cool and decorate with powdered sugar.

In the bread machine we will prepare poppy seed cake with lemon juice. It won't have a strong lemon flavor, but the citrus note will add a distinct flavor to this recipe. So, to prepare dessert we need:

  • One glass of flour
  • Half a glass of sugar
  • Two medium chicken eggs
  • Half a teaspoon each of baking soda and salt
  • 25 ml serum
  • 50 ml vegetable oil
  • 10 ml lemon juice
  • 50-100 gr. poppy

If desired, the whey can be replaced with milk, but then the taste of the cake will be completely different. And this is a completely different recipe.

First you need to sift the flour, combining it with soda and salt. In a mixer, beat eggs, butter, juice and whey, gradually adding sugar. Pour the whipped mixture into the flour, add poppy seeds and mix well. After this, grease the bread maker mold with oil and send the dough there. Set the required mode (Baking). The dessert will take approximately an hour to prepare.

As a rule, muffins prepared in a slow cooker and bread machine are slightly different from those prepared in the oven. They seem more tender and juicy. This recipe is special and I got it from my Polish mother-in-law, and I will pass it on to my children, and now I am sharing it with you.   • 5 eggs
  • 200 grams of sugar
  • 1 sachet vanilla sugar (or 2 tsp vanilla extract)
  • A pinch of salt
  • 150 grams of flour
  • 140 grams poppy seeds
  • 1 tsp baking powder
  • 170 grams butter, melt
  • 2 tbsp. alcohol or vodka
  • 1 tsp almond essence (or 2 tsp almond extract)
  • 100 grams of walnuts
  • 100 grams of raisins
  • Flour for rolling raisins
  • Butter for greasing the pan

For glaze and decoration:

  • 200 grams dark chocolate, finely chopped
  • 60 ml milk
  • 40 grams butter, coarsely chopped
  • 50 grams of walnuts
Cooking time: 1 hour 30 minutes

1) Preheat the oven to 170 °C. Beat the eggs with regular and vanilla sugar until fluffy.

2) Mix poppy seeds with flour and baking powder.

Continuing to beat the eggs, spoon by spoon, add the mixture of flour and poppy seeds. Continuing to beat, add ghee, almond essence and alcohol.

3) Place the raisins in a deep bowl, pour boiling water over them and leave for 5 minutes. Drain well and roll in flour.

Transfer to the dough along with the nuts. Mix well.

4) Grease the walls of a rectangular cake pan with a thin layer of butter, and place parchment on the bottom of the pan. Transfer the dough to the prepared pan.

Place the pan with the dough in the preheated oven and bake for 45-55 minutes, until a toothpick inserted in the center comes out clean.
