Burfi made from milk powder. Milk fudge "Burfi Recipe for burfi made from milk"

Burfi recipe, classic recipe

Compound:

Whole milk 1 liter
Butter 40 g (82.5%)
Powdered sugar 40 gr
Vanillin 1.5 g (optional)

Cooking time:

40-50 minutes

Step 1 Start cooking

A thick-bottomed, non-stick pan is ideal for making burfi.

Rinse the pan with cold water (to prevent the milk from burning), add milk and butter. Place on the fire, bring to a boil and cook, stirring regularly for 30-35 minutes.

ATTENTION!!! When you add butter, your milk will foam and run away from time to time. I place a ladle in the pan and this helps the milk not escape.
Step 2 Intermediate stage

After 30-35 minutes, the milk will boil down by 2/3, become darker (take on a golden hue) and begin to foam strongly. Stir the milk every 2-3 minutes.

After 10 minutes, your milk will thicken and become like condensed milk. Don't be distracted by anything else, stir the burfi constantly (I use a wooden spatula for this)

Step 3 Finish cooking

After 5-10 minutes, your burfi will thicken and resemble play dough.

Remove from heat and immediately (while the mixture is hot) add powdered sugar and vanilla. Stir. The mixture will become a little thinner and begin to stick. Leave the burfi to cool for 5 minutes.

After 5 minutes, the burfi will thicken. With wet hands, form into a shape that is convenient for you and you are ready to serve.

Milk burfi is one of the most popular lacto-vegetarian desserts in India, which locals and tourists alike are crazy about. A special feature of Indian cuisine is that local chefs add a lot of different herbs and spices to their dishes, but most of the desserts, which include burfi sweets, are sickly sweet.

The main product required to prepare burfi is milk, and there are quite a lot of variations in recipes for this delicacy (for example, sesame burfi, coconut burfi, with cream or sour cream instead of milk, etc.). The classic buffri recipe has been passed down by Indians from generation to generation.

The product tastes like fudge. Hindus consider the sweetness of “burfi” to be a real jewel, because... it is nutritious, tasty and quite easy to prepare. Anyone who has once tasted this delicacy will never forget its specific taste.

The easiest burfi recipe

This recipe is considered the easiest because you only need a minimum set of ingredients. Namely:

  • Homemade (but store-bought milk is also possible) is best - a couple of liters;
  • 7-8 large spoons of any sugar;
  • butter - about a quarter of a standard briquette.

Step-by-step instructions for preparing milk sweets from India:

  1. Place a thick-bottomed pan (preferably cast iron) over high heat and place all the ingredients into it;
  2. Stir the contents of the pan until the milk boils and all the ingredients are dissolved in it. At this point, reduce the flame to medium and continue to simmer, stirring frequently to avoid scorching;
  3. After a few minutes, you will notice that the milk began to thicken, and after 40-50 minutes it turned into a thick paste;
  4. Take a flat plate or baking sheet, grease it with butter and lay out the “porridge”, creating a plate about 2-3 cm thick. After the treat has hardened, cut the layer into pieces of any shape.

You can add any filling to the ingredients - chocolate, coconut, jam, and on top you can sprinkle the dish with sesame seeds, grated nuts or caramel...

Classic milk powder burfi recipe

It’s worth saying right away that the recipe for preparing the delicacy is quite simple. Below is the recipe for making burfi from milk powder. Some recipes use heavy cream or sour cream instead of liquid milk or water. In our case, we get a less calorie dish.

Ingredients:

  • 2 cups (400 g) dry milk powder;
  • half a glass of regular milk (or water);
  • 3/4 cup sugar;
  • 1/2 cup (100 g) ghee;
  • 1 tsp rose water (optional, needed for flavor);
  • 7-8 finely chopped pistachios;
  • 7-8 finely chopped almonds.

Cooking instructions:

  1. To prepare milk powder burfi at home, first of all, take a plate or tray on which the dessert will be served in the future. Now brush the surface with ghee so that it is not sticky. Leave the tray aside because... you will use it a little later.
  2. Take a wok and place it on low heat. Add ghee, milk and dry milk powder. It is important to note that the milk powder must be added immediately because if the milk gets hot, the powder may clump. Now mix all the ingredients until they become a smooth paste. Do not overheat the resulting mixture; keep the cauldron on the fire for no more than two minutes.
  3. Once the mixture is smooth, add sugar and rose water for flavor (the latter is optional). You will notice that after adding sugar, the mixture became liquid. It is necessary to increase the temperature to medium level and put the pot on the fire again for about 6-7 minutes until it becomes thick. You should not cook the pasta for too long, because... in this case it will not be soft.
  4. To check whether you have achieved the desired consistency of the paste, you need to take a plate and apply a small amount of ghee to it. Now take some pasta and try to roll it out on the plate. If as a result of this a ball is formed, then this means that the mixture for making future candies is ready.
  5. Next, take the same tray that you prepared at the very beginning and rub the thick paste onto it using a kitchen spatula. Please note that the surface of the spatula also needs to be coated with oil so that the sweet mass does not stick to it.
  6. Now that the paste is evenly spread on the surface, you need to add chopped pistachios and almonds to give it a beautiful appearance (it can also be regular nuts or candies). Press them into the paste with your hands so that the “nuts” stick well.
  7. Now cover the tray with cling film and let the treat cool. If you're in a hurry, you can put it in the refrigerator to cool it down faster.
  8. When the mixture has cooled, take a tray and place it on a low flame for 4-5 seconds. This way, the frozen dish will peel off from the bottom, which will allow you to freely cut the plate into portioned pieces. Take a sharp knife, grease it with butter, and cut the layer into square pieces. Now the Indian dessert can be served.

Banana and Sesame Burfi Recipe

This Indian dessert can be prepared with sesame seeds or bananas. Below are step-by-step instructions for making banana sweets, which also uses chickpea flour. Ingredients:

  • 1.5 cups chickpea flour;
  • 250 g sugar;
  • one ripe banana (peeled and finely chopped);
  • 200 g milk;
  • sesame seeds - 1-2 small spoons;
  • butter - 300 g.

Cooking instructions:

  1. Fry the banana pieces in ghee until they turn brown.
  2. Sprinkle flour over remaining butter. Do not turn off the heat until the flour becomes fragrant.
  3. Add the rest of the ingredients, stir them thoroughly.
  4. Mix all products until a homogeneous mixture is formed. Do not turn off the heat until the mixture becomes thick enough.
  5. As in the previous case, take some paste and try to roll it out on a plate, which must first be greased with ghee. If a ball has formed during the process, and the mixture is already thick enough and does not stick to your fingers, the flame can be extinguished.
  6. After cooking, sprinkle the dessert with sesame seeds and place the tray in the refrigerator for a day, then cut the formed layer into square Indian burfis.

If you like your dish to have a lot of sesame seeds, then add half a glass of roasted seeds with all the other ingredients in the third point.

Have you ever tried Indian sweets? This ancient people carefully preserves both its history and traditions. This statement also applies to national dishes. We suggest you prepare burfi at home. The dessert is a famous milk delicacy in this mysterious country. Despite the well-known devotion of Indians to hot and spicy dishes, which has become almost part of their culture, the inhabitants of this state also adore sweet dishes. Indian burfi, translated from ancient Sanskrit, means “milk fudge”.

Sweet exotic

Is it possible to buy this dessert in domestic stores? In principle, Indian sweets are available for sale, but they are not cheap, although there is nothing complicated in their preparation. To do this, you need to know the required algorithm of actions and purchase the necessary products. Then you can make your own burfi at home. The sweet recipe is quite simple and is based on the use of milk powder. The dessert turns out tasty and light, much better than store-bought.

How to make burfi? Recipe based on milk powder

The main ingredient of the recipe is milk powder. You can also use cream. Products must be of good quality (without herbal additives) and have a fat content of at least 25%. Otherwise, the milk powder burfi may have a salty taste or may be runny.

Ingredients:

  • One stick of butter.
  • A glass of sugar.
  • A packet of vanilla sugar.
  • Powdered milk - 470 grams.
  • Cream (35% fat content) or sour cream (at least 20% fat content) - 235 ml.
  • Roasted cashews for garnish.

Step-by-step preparation

Burfi, the recipe for which we want to offer you, is prepared quite quickly and simply. And, as you can see, you need the most ordinary products. Cashews, which are exotic for us, can, in principle, be replaced with something else. For example, hazelnuts or walnuts.

Let's start cooking by combining sugar and vanilla in a saucepan. Let's put the dishes on the fire. It is not recommended to use Teflon utensils. The mixture should be kept on the stove until the butter melts and the sugar dissolves. The result should be a homogeneous mixture. Cream is added to it, the mass is brought to a boil and then cooked for another five minutes.

The finished mixture should be poured into another container and allowed to cool until warm.

Add powdered milk into the cooled mass and beat with a mixer until it becomes thick. Next, it should be transferred to the form. The mass should have a consistency that will not allow it to spread. With a wet hand you need to level the surface of the burfi and apply stripes with a knife along which we will cut the finished sweet. The markings can be made in the form of squares or rectangles, in the middle of each you need to press a cashew or any other nut.

After six to eight hours, you need to take the sweetness out of the refrigerator and cut it along the lines with a knife. Now our burfi is ready. The sweetness should be stored in the refrigerator, but at room temperature the dessert should not leak. The principle of preparing this dessert is vaguely reminiscent of our favorite “sweet sausages”.

  • Cinnamon - a teaspoon.
  • Powdered milk - 150 grams.
  • Sesame - 100 grams.

You can add a mix of cocoa, milk and cinnamon to the resulting mixture, mix everything thoroughly and add water. Reducing the heat, the mixture should be boiled until it becomes thick sour cream.

Banana burfi

Burfi is an Indian sweet that resembles milk fudge. In the homeland of the dessert, a whole arsenal of spices is used to prepare it. But for us this taste is not entirely clear, so we don’t need to use them. Otherwise, the recipe is quite simple, and the finished sweet has an incredibly delicate and refined taste.

As you may have noticed, the peculiarity of the dessert is the long hardening process. In addition to the standard square shape, burfi can be made into balls, rolled in sesame seeds and coconut flakes, and then set to set.

Ingredients:

  • Glass of water.
  • Bananas - 0.4 kg.
  • A glass of sugar.
  • Raisins - 50 grams.
  • Dried apricots - 50 grams.
  • Almonds - 50 grams.
  • Butter - 100 grams.
  • Powdered milk - 200 grams.

Over heat, dissolve sugar in water, then add chopped bananas and cook the mixture for about forty minutes. Next, finely chop the raisins, dried apricots, almonds and add to the bananas. Gradually add dry milk into the mixture and do not forget to stir. Separately, melt the butter and add it to the resulting mass. The burfi is mixed and put into a mold, after which it is sent to the refrigerator.

Instead of an afterword

Burfi is a preparation that you can safely experiment with. When preparing a sweet for the first time, you can use the simplest recipe using whole nuts. In the future, the dessert can be complicated by adding ground nuts, sesame seeds and coconut flakes.

Ingredients can be replaced based on your preferences. Chocolate lovers will certainly enjoy burfi with cocoa, and connoisseurs of coconut sweets will be amazed by the delicate delicacy with shavings. In general, when you prepare this dish, there is always room for imagination. Experts say that in India, preparing burfi is not complete without using a large number of spices. However, you need to know how to use them correctly. At the same time, the taste of the finished dessert turns out to be a little unusual for us. Therefore, if you are not a fan of Indian dishes, you should not spoil the sweetness with strange aromas. It is much more pleasant to enjoy the delicate milky taste. Try one of the suggested recipes and rate. Perhaps you too will become a fan of burfi, which is very healthy due to the high calcium content in milk and vitamins in nuts. Good luck!
