Very often you have to go to work, but nothing has been prepared for lunch or dinner yet, and oh, how tired you are, you don’t want to cook anything else. In this case, a multicooker can help you out, because by preparing the dish in advance, it can prevent it from cooling down when you arrive.

If you work close to home and often go to your place for lunch, or you need to feed your child while you are at work and he has already come from school, then this simple and healthy recipe for meatball soup will come to your rescue along with a slow cooker. And the number of servings is enough for more than one time.

In addition, in a slow cooker soups turn out much tastier and richer than in a saucepan on the stove. And if you are looking after not only your health, but also your body, then this soup will come in handy, because it is rich in essential substances and not very high in calories.

Therefore, I suggest you immediately start preparing this delicious soup with beef meatballs in a slow cooker. The recipe is also interesting because it is classic and basic, and you can always supplement it with some of your own ingredients.

Ingredients and preparation

Kitchen appliances: multicooker.

You will need:

If you want the soup to have a richer taste, you can use your favorite set of spices, which you can buy at the store or mix yourself.

I take small onions and potatoes, but I only found large carrots, so I write one in the ingredients. But see for yourself what you choose - more thickening or less.

Cooking sequence

  1. First, let's make our meatballs. Finely chop one onion into the minced meat, squeeze out the garlic, beat in the eggs and add pepper and spices to taste.

  2. Mix all this thoroughly and knead with your hands until almost homogeneous.

  3. We divide the finished minced meat into approximately 12 even parts and roll them into our meatball balls. They turn out quite large, so if you like them smaller, then divide them into more parts accordingly.

  4. Next, turn on the “Fry” mode on the multicooker, pour oil into a bowl and lay out our raw meatballs. Fry on one side, turn over with a spatula and fry on the other.

  5. Chop the remaining onion into cubes and add to the slow cooker.

  6. While the onions are fried, chop the carrots and potatoes, or you can grate them and add them too.

  7. Throw in bay leaves, chopped dill and salt to taste.

  8. Fill it all with water. It took me about 2 liters of water.

  9. And now we close the multicooker with a lid, select the “Soup” cooking mode and cook for about 1-1.5 hours. If your cooking time turns out to be a little longer, it’s okay, the main thing is that the meatballs and vegetables do not boil over.

  10. That's it, the soup is ready.

Video recipes for soup with meatballs in a slow cooker

In the video below, you can see firsthand how to cook meatball soup in a slow cooker.

I propose to prepare for lunch, with me, a delicious and healthy soup with meatballs, for children and adults. We will cook it in a convenient saucepan or slow cooker. My model is Polaris 0517 ad, but the recipe is suitable for many that have a “soup” mode (Redmond, Panasonic, Phillips, etc.) The process is simple, and the result will please the whole family.

The meat in the soup is not fatty, no frying is used, all the added vegetables are suitable for feeding small children, so this soup can be offered even to a 1-year-old child, only you will first need to puree it using a blender. And children from 1.5 to 2 years old can already be offered soup with whole pieces.

Products:

  • Minced veal – 300 g
  • Potatoes - 4 pcs.
  • Carrots - 1 pc.
  • Onion - 2 pcs. (one for minced meat, the second for soup)
  • Rice - 0.5 tbsp.
  • Green beans - a handful
  • Spinach - two frozen circles (or a bunch of fresh)
  • Bay leaf - 1 pc.
  • Salt - 1 tbsp. without top.

Products are designed for 1.5 - 1.7 liters of water

Soup with meatballs in a slow cooker for children and parents:

1. Prepare the minced meat for the soup. To do this, grind it in a meat grinder with a fine grid.

2. Also grind one onion in a meat grinder.

3. Add one egg to the minced meat with onions and add salt to taste. Mix the minced meatballs.

4. Since not only adults, but also children will eat the soup, we will make the meatballs small (like a small walnut).

5. Meatballs for soup are ready. Now peel the onions, potatoes and carrots. Let's wash the rice. Prepare frozen or fresh green beans and some spinach. Bay leaf, salt and black pepper.

6. Finely chop the potatoes into arbitrary pieces. Grate the main part of the carrots, and leave a few rings whole to form funny carrot flowers from them. Then we will put these flowers in a children's plate with soup.

7. Place in a clean multicooker bowl: potatoes, carrots, whole onion, bay leaf and salt.

8. Pour 1.7 liters of water into the multicooker. Hot from the kettle is best.

9. We install a special grill on top, on which we tightly place small meatballs.

10. Set the multicooker to “soup” mode. Time - 1 hour.

11. Without waiting for the end of the program, 15 minutes before. (you can do it after finishing), remove the steam grate and add green beans, spinach and ready-made meatballs to the soup. The added vegetables will be cooked in 15 minutes.

12. Soup with meatballs in a slow cooker for a child is ready. Add carrot flowers to the children's bowl of soup.

13. For a 1 year old child, puree the soup.

In addition to the soup, you can also steam it.

Bon appetit!

On a note:

If you pour boiling water into the multicooker, then the meatballs can be cooked in a saucepan along with vegetables (rather than steamed), but in this case there will be more meat foam from the meatballs in the broth. And there is also a possibility that they will fall apart.

When they are cooked on the grill, the main foam and "meat flakes" remain on the grill.

Recipe Description

Today on the menu is an economical soup with meatballs in a slow cooker.
Why economical?
Because you don’t need to buy special meat for meatballs - you can leave some minced meat from the cutlets by putting them in the freezer of your refrigerator - I always do this, and vegetables are inexpensive and, as a rule, can be found in any home.

It's hard to imagine lunch without soup. Cooking a tasty, nutritious soup is not difficult for any housewife.
For those who don’t like soups, I want to say that the first course is very important for a person, especially for those who eat “dry” all day at work.

To prepare meatball soup in a slow cooker, you need:

  • 1 onion;
  • 1 carrot;
  • 2-3 medium potatoes;
  • 2-3 tbsp. spoons of rice;
  • 2-2.5 liters of water;
  • For the meatballs:
  • 1 egg;
  • 300 grams of minced meat;
  • Salt, spices to taste.

Cooking step by step:

Let's start by preparing the meatballs. I buy a piece of pork, 300 grams, take onions, carrots, bread soaked in milk and put it all through a meat grinder. I add an egg. Mix well. If the minced meat is too juicy, you can add a little breadcrumbs or flour.

We set the finished minced meat aside and begin to peel and cut the vegetables.
Fry onions and carrots in vegetable oil in a multicooker (“Baking” mode for 20 minutes).

Cut the potatoes into cubes, rinse the rice until the water runs clear.

We put all this in a slow cooker and fill it with hot water or broth.
I cook with water. Due to the meatballs, the soup turns out quite tasty and satisfying.
Salt (approximately 0.5 tablespoons of salt), add bay leaf, spices (“For first courses”) and turn on the “Stew” mode for 1.5 hours.

After all the ingredients are already in the slow cooker, form the meatballs.
To prevent the minced meat from sticking to your hands, you need to moisten them with water. Stick together meatballs and immediately throw them into the soup.
Close the lid and leave until the end of the program.

Products:

  • Minced beef - 200 gr.
  • Rice - 2 tbsp.
  • Potatoes - 3 pcs.
  • Carrots - 1 small
  • Onion - 1 pc.
  • Salt - to taste

The quantity of products is indicated for 2 liters of water.

Every day I get more and more used to mine, because it’s very convenient to cook in it. Today, for example, I put soup with meatballs to cook for lunch, and at that time I ran to the dentist, not thinking that my soup would run away or burn. Now I share the result.

In this soup, I decided to steam the meatballs separately so that they would not boil over while cooking in water. After all, I had to add all the ingredients at once, set the program and leave. In the end, the soup came out very good - the meatballs were whole, the potatoes and rice in the soup were tender, but not overcooked. The soup is light (without excess fat and fried ingredients), suitable for children (from 2 years old) and adults.

Soup with meatballs in the multicooker Polaris 0517 - photo recipe:

1. First you need to prepare small meatballs. To do this, grind the minced meat together with the onion in a meat grinder twice.

2. Add one egg, rice and salt. Mix.

3. Form small meatballs from the finished minced meat.

4. Prepare other ingredients for the soup in a slow cooker: chop the potatoes into cubes, grate the carrots, rinse the rice, and leave the onion whole. After preparing the soup, it can be caught and removed.

5. Add potatoes, onions and carrots to the slow cooker. Put the meatballs aside for now; we will steam them.

6. Add 2 - 2.5 liters of water to the multicooker (I added regular cold tap water, but passed through a filter). Add salt. You can add allspice. Mix.

7. Place a wire rack on top and place the previously prepared meatballs on it. I think that they can be added directly to the water if you fill them with boiling water rather than cold water. But I haven’t tried to do this in practice yet.

8. In the Polaris 0517 multicooker, set the soup mode. Cooking time 1 hour. The countdown begins immediately.

9. After 1 hour, the soup and meatballs are completely ready.

10. Remove the onion from the soup and add the meatballs. That's it, the meatball soup in the Polaris 0517 multicooker is ready!

Do you know how to get a very rich soup in a slow cooker? The secret is simple - put more food in the bowl than you usually put in the pan. In a slow cooker, the cooking process occurs under pressure, which means the ingredients are cooked faster. That's a plus. But for the same reason the broth remains less saturated. This is a minus. Therefore, it is worth adding more products in general and spices – seasonings in particular. Let's look at the example of soup with meatballs in a slow cooker - how to cook it using this device. One recipe will be detailed, with step-by-step photos so that the principle is clear, and then there will be more options that will have one thing in common - meat balls and kitchen appliances. And by the way, it can be different. Therefore, there will be recipes for a multicooker-pressure cooker and for the standard “Steam” mode.

Meatball soup - step-by-step recipe with photos in a slow cooker

Attention! This recipe is for a pressure cooker.

Ingredients:

  • beef – 500g;
  • potatoes – 3-4 pcs;
  • onion – 1 head;
  • carrots – 1 piece;
  • millet – 2 tbsp;
  • spices (suneli hops, dried Provençal herbs, bay leaves, peppercorns) - to taste;
  • salt - to taste.

How to make meatball soup in a slow cooker:

  1. We grind the beef in a meat grinder. Salt and pepper the minced meat. There is no need to add anything else to it.

  2. We form small balls. 3-3.5 centimeters will be enough.
  3. Peel and wash the onions and carrots. Grate the carrots on a coarse grater.

  4. Peel the potatoes and cut into medium-sized pieces.
  5. First place the potatoes in the multicooker bowl.
  6. Then a layer of carrots.
  7. When cooking meatballs in a multicooker-pressure cooker, we place them in the bowl immediately, unlike in a multicooker without this function.
  8. If you and your family are comfortable with boiled onions, then you can finely chop them and put them on the carrots. I put in a whole onion. It will give off the aroma and taste to the broth and we will remove it later.
  9. Add all spices and salt. Adjust the quantity to your liking. Usually a small pinch of each dry spice, one bay leaf and 3-4 peppercorns are enough.
  10. Pour water. Its quantity depends on the model of the device. I have 2 liters here.

  11. And add millet.
  12. Close the lid and turn on the “Soup” mode. And that’s it – you can go and do other things for now. The slow cooker will do the rest for you.
  13. When you hear the ready signal, do not rush to remove the bowl and pour it onto plates. Let it stand in the heating mode for about 20 minutes, so it will infuse and the taste will be even richer.

Using the same principle, you can cook soup with any meatballs. How to make them - see.

Soup with potatoes, rice in the “Frying” and “Steaming” modes of the multicooker

For those who like the so-called “roasting” - sautéed vegetables, you need to cook in two modes. And for this, a regular model is suitable, not a pressure cooker, and it may not even have a special mode for cooking soup. It is better to take short-grain rice for soup. Varieties that boil quickly, for example, “Krasnodar”.

Ingredients:

  • minced meat (pork + beef) – 400g;
  • potatoes – 4 pcs;
  • carrots – 1 piece;
  • onion – 1 piece;
  • rice – 40g;
  • sunflower oil – 2 tbsp;
  • spices - to taste;
  • salt - to taste;
  • tomato paste – 1 tbsp;
  • fresh herbs - for serving.

How to cook meatball soup in a slow cooker:

  1. Roll the minced meat into small balls and leave aside for now.
  2. Peel the onion and chop finely.
  3. Wash the carrots, peel and grate.
  4. We also peel the potatoes and cut them into cubes.
  5. Pour oil into the multicooker bowl. Turn on the “Frying” mode. Add carrots and onions.
  6. Fry a little until the onion is transparent, then add tomato paste and fry for another 2-3 minutes.
  7. Add potatoes, washed rice, spices and salt.
  8. Pour cold water and turn on the “Steam” mode, and set the time to 20 minutes.
  9. After this period of time, after the signal, open the lid and add the meatballs.
  10. We turn on the same mode again and the time is 5 minutes. But we don’t close the lid. Because during cooking of the meat balls, foam will form and it must be skimmed off, otherwise the broth will be cloudy and not beautiful.
  11. When the signal sounds again, add finely chopped greens. Cover the lid and let stand for a couple of minutes.

You can serve the soup with white bread croutons if desired.

Soup with chicken meatballs and noodles in a slow cooker

From this composition of ingredients you can prepare a dietary soup using only “Steaming” or “Soup”, then it can be given even to small children. But you can also pre-fry the vegetables as in the previous recipe - the choice is yours.

Ingredients:

  • minced chicken – 300g;
  • potatoes – 1-2 pcs;
  • vermicelli (or thin long noodles) – 100g;
  • carrots – 1 piece;
  • onion – 1 pc (optional);
  • bay leaf – 1 piece;
  • salt - to taste.

Cooking process:

  1. Peel the potatoes and cut them into cubes.
  2. If you sauté carrots and onions in oil, they must be finely chopped. For soup without sautéing, cut the carrots into circles and the onion into cubes.
  3. We make meatballs from minced meat.
  4. First, put carrots, potatoes and onions in a container. Pour two liters of water.
  5. Turn on the “Steam” mode and set the time to 20 minutes. The countdown will begin after the water boils.
  6. After the signal, open the lid and add the meatballs. Turn on “Cooking” again and set the time to 10 minutes. Without closing, wait for the foam to form and remove it.
  7. Salt and add spices.
  8. 3 minutes before the end of cooking, add the vermicelli. Let's close. After the signal, we do not open it, let it sit for 5 minutes while heating.

And that’s it – the soup is ready! You can invite everyone for lunch.
