· 500 g flour;

Cooking method

1. Let's start with the test. It is best to cook it with an egg to make it stronger. Combine the egg with a glass of water, add salt, stir, add the recipe flour. Knead the dumpling dough and put it in a bag for half an hour, let it rest.

2. There is time to twist the minced meat, add herbs, one chopped onion, salt and pepper to taste. Stir the filling until it becomes homogeneous.

3. Immediately cook the vegetables. Chop everything into thin strips and lightly fry in vegetable or butter. There is no need to cook for a long time, much less brown.

4. Add pasta to vegetables. You can replace it with regular grated tomato, then stir and turn off the stove. Place the vegetables in the pan and level the layer.

5. Cut the dough into ten pieces, roll them all out at once to distribute the filling. Spread the minced meat over the flatbreads and roll into rolls. We place them on top of the vegetables; there is no need to press them tightly together.

6. Fill the rolls with salted water; the liquid should barely cover them. We stretch the foil and put it all in the oven. Cook for an hour at 180 degrees.

Dough rolls with minced meat (puff pastry)

Amazing puff pastry recipe. For these rolls, you can use chicken or any minced meat, even with a lot of fat. Puff pastry without yeast, one package is enough.

Ingredients

· 0.5 kg of dough;

· 700 g minced meat;

· 550 g flour;

· 2 tablespoons of oil;

Cooking method

1. Make the simplest dumpling dough. First, add half a teaspoon of salt to the egg, grind it, then pour in water and add flour, in the process add a couple of tablespoons of any oil. Knead for at least ten minutes, then let it sit for at least half an hour, preferably in a bag.

2. There is time to cut the onions into small cubes and mix with the minced meat. Add salt, pepper, stir. You can use onions and meat in equal proportions, as in manti, and you will also get a tasty filling.

3. Cut the dough into 8-10 pieces, roll out into thin flat cakes, and make regular rolls. Place on the tray of a steamer (cooker).

4. By the time you finish modeling, the water should boil. For better vaping, it is advisable to salt it. Place the rolls with minced meat and cook the dish for 40 minutes. Then transfer to plates and serve with ketchup, sour cream, garlic sauce or simple mayonnaise.

Dough rolls with minced meat and potatoes

A complete second course with dough rolls with minced meat. It is best to cook it in a cauldron or use another dish with thick walls. It is not necessary to fill the ingredients with water; you can also use meat broth.

· 8 potatoes;

3. Chop the carrots and the second onion, fry in a cauldron in oil, you can turn it off for now. We simply peel the potatoes and cut them into large pieces; you can simply cut each tuber into four parts.

4. Roll out the dough, put the filling on it, distribute it in an even layer, leaving a centimeter on each edge. Roll one roll, then cut into pieces no larger than three centimeters.

5. Pour potatoes into a cauldron onto the vegetables, stir, level, lay out the rolls with minced meat, pour boiling water over it all, and add salt. The water should cover the rolls. After cooking it will be much smaller.

6. Turn on the stove, cook after boiling for 40 minutes, turn on low heat. When serving the dish to the table, add potatoes and several rolls to each portion, pour over the broth, and sprinkle with herbs.

Dough rolls with Burekas minced meat

A wonderful dish that is traditionally served with mushroom sauce. But this is not necessary; without it, wonderful baked goods are obtained. The recipe for the sauce is also given here; it is prepared using ordinary champignons. For rolls, puff pastry is used without adding yeast.

Ingredients

· 400 g dough;

· 380 g minced meat with onions and spices;

· 200 g champignons;

· 200 ml cream (sour cream);

Cooking method

1. Add about five tablespoons of water to the minced meat with onions and spices, stir, the weak mass will be easier to distribute throughout the dough.

2. Roll out the dough to four millimeters, distribute the filling over the layer, and twist.

3. Cut the rolls into two centimeters. Place cut side up on a greased baking sheet. Be sure to leave space between the rolls.

4. Grease with egg and place in the oven. Bake at 200 degrees until golden brown.

5. There is time to prepare the sauce. Melt butter, add chopped onion. Let's start frying.

6. Wash the mushrooms, chop them into slices, and add them to the onion. Fry until done.

7. Shake the cream with starch. You can take sour cream. Salt, pepper, pour over the mushrooms. Let the sauce warm up until it thickens a little.

8. Place the rolls on plates, 2 or 3 for each serving. Next we place the sauce with mushrooms. Sprinkle everything together with fresh dill. Burekas is served warm.

· Unleavened dough must rest before rolling out, otherwise it will shrink, it will be difficult to work, and it will require a lot of effort.

· The filling will turn out much tastier if you use several types of meat, add poultry, you can twist a little lard into lean varieties or add grated butter.

· Thin minced meat is easier to spread over the dough. Therefore, you can add a little water to the filling, or even better, sour cream, cream, or tomato sauce.

The composition of “meat ears” includes:

  • Minced meat – 700g;
  • Onions – 2-3 medium heads;
  • Milk – 100 ml (if the minced meat is purchased and too soft, it is better to exclude milk);
  • Salt, pepper and other seasonings - to taste;
  • The dough - in the original recipe there was dumplings with vegetable oil, but I think that any dough will do.
  • Fat or vegetable oil - for frying.

Method for preparing “meat ears”:

We prepare the dumpling dough and let it stand for about 30 minutes. At this time, prepare the meat filling. To do this, place the minced meat in a small saucepan.

Finely chop the peeled onions or chop them using a blender, add them to the meat and mix.

Add seasonings and milk, stir thoroughly.

Cut a small piece from the dough and roll it into a thin layer (for me it turned out to be about the size of a sheet of A4 paper).

Spread the prepared meat filling onto the rolled out dough in an even, thin layer, leaving about 0.5 cm free on one edge. Roll the dough with the filling into a tight roll and cut into circles about 1cm thick.


If you want the ears to be thinner, it’s better to press the resulting circles a little with your hand so that they flatten. To make the ears easier to cut, the knife can be moistened with cold water.
Fry the meat rolls in a frying pan with hot fat or vegetable oil on both sides until cooked. Since they are thin, 5-7 minutes on each side is enough.

We first place the finished ears from the frying pan on paper napkins so that excess fat is absorbed into them.

  • one small onion;
  • semolina – 50 g;
  • a little dried basil;
  • minced beef – 0.5 kg;
  • salt and pepper to taste;
  • sour cream – 100 gr;
  • half a small head of cabbage;
  • three stalks of green onions;
  • one carrot;
  • stewing broth;
  • a bunch of parsley.

How to make minced meatloaf:

  1. Pour some hot water into a glass with semolina and stir, making sure that no lumps appear.
  2. Finely chop the peeled onion with a knife.
  3. Pour salt, basil and pepper into the meat mass, add semolina and knead the minced meat with your hands.
  4. Beat it in a plate for 5 minutes. This must be done so that the future roll does not tear during baking.
  5. Place the lump of minced meat in foil in the refrigerator for 10 minutes.
  6. Now let's prepare the filling. Finely chop the cabbage leaves and onion arrows.
  7. Cut the peeled carrots into thin slices.
  8. With the addition of oil, fry all the vegetables until soft.

  4. Pour the egg into a bowl with minced meat, add all the spices, 20 grams of breadcrumbs and mix with your hands.
  5. Take pickled bell pepper and cut it into strips.
  6. Cut milk cheese into slices.
  7. Preheat the oven to 200 degrees.
  8. Spread baking foil on a baking sheet and pour a little vegetable oil on it.

  3. Mix the mixture thoroughly and spread over cling film. The puree should be in the shape of a rectangle.
  4. Finely chop the onion and garlic. Saute vegetables in a frying pan in oil for 3 minutes.
  5. Add the frying to the minced meat. Next, add coriander, semolina, breadcrumbs, salt, and break the egg. Mix everything.
  6. Spread the resulting mixture over the mashed potatoes and smooth out gently.
  7. Wrap the layers in cling film, making a sausage. Wrap the package in special foil.
  8. Cook the roll in a saucepan with water for an hour over low heat.
  9. After this, cool the dish, sprinkle with grated cheese and place in a 200 degree oven for 15 minutes.

Mash the cottage cheese in a cup.
Cut the cheese into cubes.
Chop dill and onion
Mix all the minced meat ingredients, add the egg white and mix well.
Line a baking tray with baking paper and grease the paper with vegetable oil.
If the dough is in a roll, cut it into 2 parts. Roll out each layer into a square measuring approximately 30 by 30 cm. Place half of the filling on each layer and distribute it over the entire layer.
Let's roll it up. From the specified amount of products I get 2 rolls.
Place both rolls on a baking sheet. Let the dough rise for 1-1.5 hours.
Before baking the rolls, add 1 tablespoon of milk to the yolk, mix and spread the resulting mixture on them so that when baking they acquire a golden color. Bake at 180 degrees for 30 minutes.

It is better to divide the dough into two or three parts and prepare several rolls. (I cooked one and it turned out too large. I had to double the cooking time in the double boiler) Roll out the dough on a flour-dusted table. Place the minced meat on the dough, moisten the edges of the dough with water and roll up the roll. Carefully pinch the edges and place the roll in a steamer greased with oil.

We take chicken liver in equal proportions: half a kilo of heart, stomachs and liver. Grind in a meat grinder with a large grid. Then simmer the minced meat for 20-25 minutes in a deep frying pan until cooked.

Salt and pepper. Then add half a kilo of onion minced in a meat grinder to the hot minced meat. There is no need to stew the onions with minced meat. That's the point. Just quickly stir the onion with the hot minced meat and leave the filling to cool.

The dough for pies is very easy to make. Dissolve yeast and sugar in warm water. Let stand for 10 minutes, then add salt, all the flour, stir well. After 45 minutes the dough is ready. But it’s better to stir the dough again, 20 minutes after kneading.

The dough turns out to be very liquid, slightly thicker than dough.

And then the hardest part begins. Because making such pies without the skill is not an easy task. The most important thing here is not to be afraid to wrap the dough, and wash your hands often and wipe them dry before lubricating them with oil again.

First you need to heat the oil for deep frying. Lots of oil. The best way is right in the pan.

Then grease the table well with oil. You can pour oil into a bowl - it will be convenient to lubricate your hands. And it’s even more convenient to immediately put a bowl of cold water next to you and wash your hands.

Literally dip your palms in the oil and then pinch off pieces of dough.

After this, wash your hands again (!) and wipe them dry. Lubricate with oil again.

Place a piece of dough on your palm and flatten it into a flat cake.

Spoon the filling and spread it a little along the length of the pie.

Then simply roll up the dough from one edge.

The resulting pie is quickly lowered into deep fat.

Wet our hands again with oil and repeat the process. You need to make pies quickly.

The coolest thing about these pies is how they turn themselves over in the deep fryer as soon as one side is fried. And the dough sometimes takes on very funny shapes.

Ingredients: ready-made puff pastry - 1 plate, minced meat (I used beef) - 400 g, chopped mushrooms (champignons) - poured out half a package of 900 g, i.e. about the same amount as minced meat, 1 onion, 2 eggs, 3-4 tablespoons of breadcrumbs, which I didn’t have - I replaced them with wheat bran, it didn’t affect the taste, salt, pepper (to taste), 1 tbsp. spoon of vegetable oil.
While the dough is defrosting, make the filling.
Fry the diced onion in oil and the champignons without oil (until the water evaporates). If you use raw mushrooms, cut them into cubes like onions and after sautéing the onions, simply add them to the same frying pan. I had to do it on two. Transfer the onions to the mushrooms.
Fry the mushrooms and onions for a few minutes, then add the minced meat, mix, salt, pepper and fry (until the minced meat is fried). Let cool.
Add breadcrumbs (I used bran) and 1 egg to the cooled minced meat and mix.

Separate the meat from the bones of the drumstick, remove the skin, cartilage, veins and films. Grind the drumstick pulp in a meat grinder or processor. Add 50 grams of chopped nuts to the resulting minced meat,
cream, salt, pepper, aromatic herbs. Mix well.
Place the thigh layer on baking paper. Fight him off. Season the meat with salt and pepper.
Form the minced meat into a sausage and place it on the wider edge of the layer.

The dough can only be prepared in water if there are no eggs. Then you need to take a little more water than indicated in the ingredients. The water should be boiled. While the dough is settling, make the minced meat. Grind the meat and 2 onions in a meat grinder, chop the remaining onion very finely and set aside. Mix the minced meat and twisted onions, add salt and pepper. For juiciness, you can add a little water to the minced meat.


Roll out the dough into a thin layer.


Place a thin layer of minced meat on top, leaving a little space at the edges of the dough. The minced meat should be spread well over the dough.


Sprinkle finely chopped onion on top of the minced meat. This will make the finished dish more juicy. And then place small pieces of butter evenly on top of the onions. This should only be done if you do not have fatty meat.
