Recipe No. 6. Nut and cranberry bars

The main “hero” of this dessert is almonds: thanks to their antioxidant properties, as well as the high content of vitamins and minerals, the bar will become a truly healthy treat. Moreover, it is nutritious and therefore perfect for breakfast, especially in combination with almond milk.

Keep on the stove until the sauce becomes smooth. Then add it to the almond-cranberry mixture and mix everything thoroughly. Pre-prepare a baking pan (20 x 20 cm in size) by lining it with parchment paper. The resulting mixture thickens very quickly, so after adding the sauce, you need to quickly transfer it into the mold and distribute it evenly. You can use the bottom of a measuring cup for leveling. The dessert should cool to room temperature, this will take about 30 minutes. To speed up the process, you can place it in the refrigerator. Before serving, remove the nut bar from the container and use a knife to divide it into equal pieces on a cutting board. Dessert is ready.

People suffering from diabetes are forced to give up many of their usual pleasures. The need to follow a strict diet does not allow you to enjoy sweet baked goods.

But by adhering to certain restrictions, diabetics can please themselves with equally delicious baked goods without sugar.

Basic rules for baking

There are some restrictions in preparing flour dishes for patients with diabetes:

What kind of flour can I use?

If you have diabetes mellitus, both type 1 and 2, the consumption of wheat products is prohibited. It contains a lot of fast carbohydrates.

Flour in the arsenal of products for diabetics should have a glycemic index of no more than 50 units.

Products with an index of more than 70 should be completely excluded, as they contribute to an increase in blood sugar. Occasionally you can use whole grain grinding.

Different types of flour can diversify baked goods, changing their taste - amaranth will give the dish a nutty flavor, and coconut will make the baked goods especially fluffy.

For diabetes mellitus, you can cook from the following types:

  • whole grain – GI (glycemic index) 60 units;
  • buckwheat – 45 units;
  • coconut – 40 units;
  • oatmeal – 40 units;
  • linen – 30 units;
  • from amaranth – 50 units;
  • spelled – 40 units;
  • from soy – 45 units.

Prohibited species:

  • wheat – 80 units;
  • rice – 75 units;
  • corn – 75 units;
  • from barley – 65 units.

The most suitable option for patients with diabetes is rye. This is one of the lowest calorie types (290 kcal). In addition, rye is rich in vitamins A and B, fiber and microelements (calcium, potassium, copper)

Oatmeal is higher in calories, but is beneficial for diabetics due to its ability to cleanse the body of cholesterol and reduce the concentration of sugar in the blood. The beneficial properties of oatmeal include its positive effect on the digestive process and its content of vitamin B, selenium and magnesium.

Buckwheat has the same calorie content as oatmeal, but surpasses it in the composition of nutrients. So, buckwheat contains a lot of folic and nicotinic acid, iron, manganese and zinc. It also contains a lot of copper and B vitamins.

The use of flaxseed is also justified in a diabetic's diet. This type has a low glycemic index and contains few calories (260 kcal). Eating products made from flaxseed flour helps to lose weight, eliminate cholesterol, and normalize the functioning of the heart and gastrointestinal tract.

Amaranth flour has twice the calcium content of milk and provides the body with the daily requirement of protein. Low calorie content and the ability to lower blood sugar make it a desirable product in the arsenal of patients with diabetes of any type.

Allowed sweeteners

It is generally accepted that all food for diabetics must be unsweetened. This is wrong. Of course, patients are prohibited from consuming sugar, but it can be replaced with a sweetener.

Natural plant-based sugar substitutes include licorice and stevia. Stevia makes delicious porridges and drinks, and you can add it to baked goods. It is recognized as the best sweetener for diabetics. Licorice is also used to add sweetness to desserts. Such substitutes will also be useful for healthy people.

Even special sugar substitutes have been created for diabetics:

  1. Fructose– a highly soluble natural sweetener in water. Almost twice as sweet as sugar.
  2. Xylitol- Sources include corn and wood chips. This white powder is an excellent substitute for sugar, but can cause digestive upset. Dose per day 15 g.
  3. Sorbitol– transparent powder made from rowan fruits. Less sweet than sugar, but quite high in calories and the dose per day should not be more than 40 g. May have a laxative effect.

It is better to avoid using artificial sweeteners.

These include:

  1. Aspartame- much sweeter than sugar and contains few calories, but it can only be consumed after consulting with your doctor. Aspartame should not be included in the diet if you have high blood pressure, sleep problems or suffer from Parkinson's disease.
  2. Saccharin– an artificial sweetener that loses its properties during heat treatment. Prohibited for liver and kidney problems. Often sold mixed with other sweeteners.
  3. Cyclamate– more than 20 times sweeter than sugar. Sold mixed with saccharin. Using cyclamate can harm your bladder.

Therefore, it is better to give preference to natural sweeteners such as stevia and fructose.

How to make charlotte without sugar: 5 recipes

Pies with berries and fruits are especially popular. This is both food and dessert at the same time. They are tasty, juicy and sweet. But there are categories of people who, for various reasons, limit sugar in their diet. What's a sweet pie without sugar?

It turns out that anything is possible. For example, everyone’s favorite and widespread charlotte. Indeed, a very easy apple pie to make. It doesn’t require a lot of products or hassle, and it always turns out tasty and aromatic. And just such a sweet pie can be prepared without adding sugar.

The best sugar substitute without affecting the taste - this is honey. For those who maintain a slim figure and limit the consumption of flour, some of it is replaced with oatmeal.

The usual ingredients for making charlotte are:

  • half a glass of flour;
  • half a glass of rolled oats;
  • eggs – 2 pieces;
  • half a teaspoon of soda;
  • two tablespoons of honey;
  • apples – 3-5 pieces.

How to cook:

1. First you need to cook the apples. Remove the core with seeds and stalks from washed and dried fruits. Then cut into slices. Everyone chooses the thickness of the slices according to their taste. Place the chopped apples in a bowl with honey. If the honey is candied, you should first melt it. Mix the mixture well, you can add vanilla and cinnamon to taste. Leave to soak while the dough is prepared.

2. Break the eggs into a deep container, always dry and cool. Eggs should also be cold, refrigerated. Using a mixer or whisk, beat the eggs until a thick, high foam forms. To do this, it’s good to add a little salt before starting to beat. Continuing to beat, add flakes little by little. Next, pour baking soda or baking powder into the resulting mass and mix gently with a wooden spatula from bottom to top so as not to knock off the foam.

3. Prepare a baking dish. You can use a special one with split edges, you can use a cake pan, or you can just use a non-stick frying pan without a handle, wide and deep enough. Grease the mold with margarine or unrefined vegetable oil (it’s good to distribute just a little fat over the entire surface of the bottom and sides so that there are no dry areas left). And now sprinkle with semolina or breading mixture. It is better to use just such sprinkles than flour, since the flour, having soaked very quickly, will become part of the dough and may not give the desired effect.

4. Then pour the dough into the prepared pan, place the apples on top, pour over them with the honey in which they lay for soaking. And place in the oven, preheated to 170 degrees. Leave to bake for about half an hour.

5. As soon as the charlotte is browned, pierce it in the thickest place with a match or other wooden stick. If the stick remains dry, the cake is ready. Remove it with baking mittens and shake a little. The finished charlotte will immediately move from its place on its own.

6. Cool the pie and then place it on a plate.

CHARLOTTE WITHOUT SUGAR WITH KEFIR

Another sugar-free charlotte recipe is very similar to the first, but it turns out more satisfying and fluffy. The fact is that the test includes kefir. The rest of the ingredients are the same. The cooking procedure is also similar. The difference is that when kneading the dough, some honey is added to it. Otherwise, apples are soaked in honey in the same way.

The charlotte is laid in the same way. First the dough, then the apples and honey.

Kefir dough with the addition of honey will be more fluffy and rich, and will double in size when baked. Due to this, the fruits placed on top will seem to drown in the rising dough, and you will get a single mass of pie.

UNUSUAL CHARLOTTE: RECIPE WITHOUT SUGAR AND WITHOUT FLOUR

You can also make charlotte not only without sugar, but also without flour - dream of losing weight ladies. In this recipe, flour will be replaced with semolina. Semolina, as you know, swells in liquid when heated, so it is required for a pie several times less than the same flour.

So, you will need:

  • several apples, preferably tougher and juicier ones;
  • a glass of semolina;
  • a glass of kefir;
  • one egg;
  • three tablespoons of honey.

Cooking process:

1. Knead a liquid dough like sour cream from semolina, flour, eggs, kefir and honey. You can add half a teaspoon of baking soda or baking powder.

2. Pour chopped apples or pears into the dough and stir until they are evenly distributed in the mass.

3. Pour the resulting dough with fruit into the mold prepared in a known manner and bake in the same way as the previous options.

CHARLOTTE UNSWEETENED

For it you need to prepare:

  • 4-5 pieces of apples;
  • half a glass of flour;
  • a glass of cottage cheese;
  • half a glass of kefir;
  • two eggs;
  • ghee 100 gr

This recipe is a little more complicated to prepare, but the results are worth it.

2. Knead the remaining ingredients into a dough.

3. Place the fruit in the prepared pan and pour the dough on top.

4. Bake the pie for about 25-30 minutes at 170-180 degrees.

CHARLOTTE WITHOUT SUGAR WITH FRUCTOSES: RECIPE FOR PATIENTS WITH DIABETES

Instead of sugar, you can use not only honey. For people with diabetes, you can use it instead. stevia

The ingredients are:

  • half a glass of natural yogurt, optionally with the addition of berries or fruits;
  • 1-2 tbsp. spoons of stevia
  • 4 eggs;
  • 6 tablespoons of bran, preferably oat or wheat;
  • a few apples or pears.

Cooking algorithm:

1. Mix yogurt and bran in a container, add stevia

2. Beat the eggs until foamy and add to the mixture.

3. Place the prepared chopped fruits in a greased and sprinkled baking dish. Spread them evenly over the surface.

4. Pour the dough evenly on top.

5. You can shake a little so that the dough is distributed over all the apples and between them.

6. Place in the oven at 170 degrees and bake for about half an hour.

All charlotte recipes are approximately the same. And it doesn’t matter whether you put the fruit first and then the dough or vice versa, or you can even mix all the ingredients in one container. This is a matter of the beauty of the pie itself, not its essence.

Some housewives do this: first lay out half the dough, then all the fruit, then the rest of the dough. There is a lot of room for creativity here. The main thing is that you can replace sugar with other sweet, but not harmful products, even flour can be partially or completely replaced. But the principle of making apple pie remains the same.

Charlotte with semolina and kefir will resemble manna, only lighter and less rich in composition, but not in taste. Having decided to exclude harmful foods, you can indulge in treats and desserts.

If you need to limit your sugar intake for some reason, you can bake a wonderful sweet pie without adding it. Charlotte will not become less tasty, but it will be healthy and light. And when cooking recipes without flour- also low-calorie.

Using cottage cheese will help give your favorite pie richness without extra calories.

An example is aspartame.

Sugar is also replaced with a product such as honey. Honey is also a high-calorie food. However, unlike sugar, it has great benefits for the body, since it contains a large number of beneficial compounds.

Basic rules for preparing baked goods

It is permissible to use only one specific type of flour, namely rye. In this case, it will be much better and more correct if it is coarsely ground and turns out to be of the lowest grade. Speaking about the use of butter, it should be noted that it should be replaced with margarine with an insignificant amount of fat. In addition, it is very important to pay attention to the fact that it would be incorrect to knead the dough with eggs. At the same time, it is quite acceptable to place pre-cooked items directly into flour products as a filling. Baking for diabetes will be most beneficial if:

  1. for the filling of each item, namely pies, rolls, cookies, muffins, select only those fruits, vegetables and berries that are suitable for consumption by diabetics;
  2. sugar will certainly need to be replaced with some kind of sweetener;
  3. When talking about a sugar substitute, it would be best to give preference to natural variations, for example, the Stevia sweetener.

It is not recommended to bake a pie or, for example, a large cake; it is better to prepare them in small portions. The algorithm for preparing dough for pies deserves special attention.

How to prepare dough for pies?

In order to ensure the preparation of the ideal dough for pies, it will be necessary to use only one rye flour in the amount of 500 g, as well as yeast (30 g), 400 ml of water, a small amount of salt and two tbsp. l. sunflower oil. All these components are thoroughly mixed together, and about 500 grams are added. flour and knead the dough to the most elastic consistency.

Then the prepared pies can be baked in a preheated oven. When talking about baking for type 2 diabetes and recipes, one cannot help but pay attention to exactly how the cupcakes are prepared.

Cupcake

In addition to very healthy pies for diabetics, it is always permissible to prepare a delicious and very aromatic cupcake. To do this, you will need to use one chicken egg, low-fat margarine in the amount of 55 grams, rye flour - four tbsp. l. In addition, you will need to use lemon zest, raisins and sweetener. Using the most ordinary mixer, the egg is mixed with margarine, the sweetener is poured in and the zest is added. Only after this, components such as flour and raisins are added to the mixture. The dough is laid out in a pre-prepared form and baked in the oven at a temperature of 200 degrees for 30 minutes.

Pie

I would like to draw your attention to the pie recipe, which can also be used for type 2 diabetes. In order to ensure the preparation of a delicious and extremely healthy pie for each of the diabetics, you will need to follow these steps:

  • use rye flour in an amount of 90 grams, two eggs, and a sugar substitute in a ratio of no more than 90 grams;
  • the composition should contain 400 g. cottage cheese and a small amount of crushed nuts;
  • each of the components is thoroughly mixed, and the dough is laid out on a baking sheet;
  • The future pie is decorated with fruits on top, for example, unsweetened apples and berries;
  • It is highly recommended to bake it in the oven at temperatures from 180 to 200 degrees.

Of course, it would be wrong to eat such a pie every day. Experts point out that in case of type 2 diabetes mellitus, this can be done no more than once every seven to ten days.

The algorithm for preparing a fruit roll, which can also be consumed by a diabetic, deserves no less attention.

Fruit roll

In order to prepare a fruit roll, you will need to use rye flour in the amount of three glasses. In addition, the list of ingredients includes 200 ml of kefir, 200 g. margarine, a small amount of salt, half a tsp. soda and one tbsp. l. vinegar. The already prepared dough is kneaded, wrapped in cling film and placed in the refrigerator for 60 minutes. While the dough is in the refrigerator, prepare the filling. Speaking of this, it is strongly recommended to pay attention to the fact that no more than five to six sour apples and a similar amount of plums are crushed using a food processor.

If desired, use lemon juice and cinnamon, sugar substitute sucrasite. After this, the dough is rolled out into the thinnest possible layer, the fruit-based filling is laid out and only then rolled into a roll. It will need to be baked for 50 minutes at temperatures from 170 to 180 degrees. When talking about baking without sugar, of course, one cannot fail to mention the process of making cookies.

Cookie

To make oatmeal cookies, it is highly recommended to use two cups of oatmeal and one cup of rye flour.

Besides this, the list of ingredients contains two tsp. baking powder, one egg, 100 gr. margarine. We should not forget about the need to use sweetener, nuts, raisins and milk (or water) in the amount of two tablespoons. l. All presented components are thoroughly mixed, and the prepared dough is divided into proportional parts to give them a cookie shape, and then placed directly on a baking sheet. It is highly recommended to bake cookies at a temperature of 180 degrees until completely cooked.

Tiramisu

It will also be quite possible to prepare a truly exquisite delicacy for a diabetic, called Tiramisu, and do it at home. It is acceptable to use any type of unsweetened dry biscuit as a crust base. Then it is coated with the filling, which is prepared in advance from a mixture of Mascarpone cheese (Philadelphia is acceptable). Cream, soft cottage cheese with minimal fat content and fructose are also added. You can add ingredients such as amaretto and vanillin to taste. The cookies layered in this way are put into the refrigerator overnight.

Thus, not only the first, but also the second type of diabetes allows for home baking. However, in the latter case, sugar should in no case be present in the composition - various sweeteners are used together with it. Despite the comparative benefits of such baked goods, one should not get carried away with their consumption. It is strongly recommended that you first consult with a diabetologist regarding the quantity and other details of the use of baked goods.

Wild berries have a special aroma, as any housewife will confirm. When you decide to make a cake and please your family, find recipes that contain ingredients grown in a forest clearing.

Do not ignore the advice of experts who insist that baked goods should contain as little sugar as possible, or even none at all. A great example is a cake made from fresh berries with whipped cream.

To prepare it, take:

100 g each of wild blueberries and garden strawberries; 200 g cream 30% fat; 2 sponge cakes, baked without sugar.

Preparation:

  1. Bake the sponge cake in advance using whole wheat flour without adding sugar to the dough. Using a thread, cut the cake lengthwise into two equal parts.
  2. Using a blender, beat the sugar-free cream and apply half of it to the first cake layer.
  3. Wash the strawberries, dry them on a paper towel and cut into slices. Place the berries on the cream, pressing them in lightly.
  4. Cover with the second cake layer and cover it with the remaining cream, smoothing the surface.
  5. Distribute strawberry slices over the top of the cake, filling the gaps with blueberries. To make the pastry even more pleasing to the eye, decorate it with a rose made from strawberry slices.

Even if the cake does not contain refined sugar, it will still be delicious. The natural sweetness of the berries will help satisfy the body's need for carbohydrates without overloading the pancreas.
