So let's get started. Today I will have a pie with apricot jam. Take butter. I try not to skimp on it. For me, this is important for two reasons: I do not give my child margarine and anything that contains it because of the harmful fats it contains, and the smell of baking with butter is much more pleasant and tastier than with any other. However, this is just my opinion, and if you wish, you can look for a replacement for it to suit your taste.

So, put the butter (you need to keep in mind that modern packs of butter contain only 180 g, so you need to add more than half) in a bowl for dough (I used a mixer), add sugar:

If you plan to use fresh berries or fruits instead of jam, then you need to sprinkle them with sugar so that the taste does not turn out to be too sour.

Then we roll out another circle, place it on top and mold the cakes together.

If you have time, you can decorate it. But this time my daughter urged me on, she liked the pie so much the previous time that she couldn’t wait to eat it again. Place the pie in the oven (preheat to 190-200 degrees) and wait for a beautiful golden brown color (about half an hour):

Take it out, let it cool and cut it (the filling may leak out of a hot pie). You can sprinkle with powdered sugar. Shortbread pie with apricot jam is ready!
