I would like to treat you to pancakes traditional for Ukraine. Benderiki are triangular-shaped pancakes that are filled with various fillings (cheese, cottage cheese, mushrooms, raw meat), then dipped in egg and fried until golden brown.   • Milk 500 ml.
  • Egg 5 pcs.

Ingredients:

for pancakes: Milk - 500 ml. Eggs - 3 pcs. Flour - 1-1.5 cups (240 ml.). Sugar - 1/2 tbsp. spoons. Salt - 1/2 teaspoon. Vegetable oil - 1-2 tbsp. spoons.

for filling: Minced meat (pork + beef) - 500 g. Salt, pepper, spices to taste.

for breading: Eggs - 1-2 pcs.

In order for the minced meat to be thoroughly fried, it is better to fry the benderiki over medium heat with the lid closed. Or you can lightly fry it in a frying pan and then put it in the oven for 15-20 minutes.

Benderiki with minced chicken


Filling.
1 large chicken fillet
1 onion
1 clove of garlic
2-3 tbsp milk or cream
salt pepper.

Now for the filling.
Grind the chicken fillet, onion and garlic in a meat grinder, add salt and pepper, add milk or cream so that the minced meat becomes viscous and spreads easily over the pancake.

Cut pancakes in half.
Spread a thin layer of minced meat on the more fried side of the pancake.

How to cook

1. Break the eggs into a bowl and beat. Dip the benderiki into the egg mixture and fry until golden brown. Grate the cheese on a coarse grater.

2. Place the benderiki in a baking dish in one layer.

3. Mix mayonnaise, sour cream and cream in a bowl and pour this mixture over the benderiki.

4. Preheat the oven to 200 oC and bake the benderiki in it for 15 minutes.

5. After 15 minutes, sprinkle the pancakes with grated cheese and bake for another 5 minutes.

6. Place the finished dish on plates and serve with fresh vegetables.

Advice

To prevent the benderiki from sticking in the mold, you can pre-lubricate it with butter or vegetable oil.

Ukrainian benderiki with chicken and mushrooms


Ingredients:

  • One and a half cups of flour;
  • 3 eggs;
  • 2.5 glasses of water;
  • 2 tablespoons vegetable oil;
  • Black pepper and salt.

For filling:

  • 2 chicken breasts;
  • Onion head;
  • 200 grams of fresh mushrooms;
  • Half a glass of cream;
  • Salt.

For the batter:

  • 3 eggs;
  • A quarter glass of water;
  • A pinch of salt.

Preparation:

First you need to bake pancakes. To do this, pour the eggs into a bowl, mix with salt and sugar and beat. Add all the flour and knead the dough thoroughly. Then pour in half a glass of water, stir and, gradually adding the remaining water, make pancake dough. At the very end of the kneading, add vegetable oil. Fry the pancakes as usual: in a hot frying pan on both sides.

For the minced meat, first fry the washed and finely chopped mushrooms and place them in a colander to drain the oil. Peel the onion, cut it into quarters and put it in a food processor (blender), add salt and cream and grind it into a puree. Then put raw chicken meat there and beat everything again into a homogeneous mass. Mix chicken puree with fried mushrooms.

We form benderiki. Take a pancake and cut it in half. Spread one half with a thin layer of filling and roll it into a triangle. To do this, first wrap one edge of the pancake towards the center, and then wrap it with the free part of the spread pancake. Prepare the batter by beating eggs with salt and diluting with water. Dip each triangle on both sides and fry in a frying pan with vegetable oil.

Benderiki with mushrooms



The mushrooms must first be boiled, then chopped and fried in vegetable oil with onions and added butter. And let the mushrooms cool. Then mix the batter from flour, milk and eggs (as for pancakes), add a little melted butter to make the pancakes softer and tastier. Then fry the pancakes and let them cool.

Then we make envelopes and fill them with mushroom filling, wrap them and fry them in batter. The dish is served hot.

Step 1: prepare the minced meat.

Take high quality ground pork and ground beef and combine them in one deep bowl.
Then add salt, ground black pepper, allspice and hops - suneli to the total mass to taste. To ensure that the minced meat is not dry, it should be liquefied by adding a couple of tablespoons of pure distilled water to the minced meat.
Mix the minced meat seasoned with spices and salt thoroughly with a tablespoon until smooth. Set the minced meat aside and let it sit for a while. 10 – 15 minutes. During this time, prepare the pancakes.

Then fold the last edge of the pancake, and you will get a triangular pancake with minced meat, a semi-finished product - binderik. Make binderiki from the remaining pancakes and minced meat and place them on a large flat plate.

Step 4: Beat the eggs.


Take a deep plate and beat the required amount of raw chicken eggs into it. Beat the eggs with a fork until smooth and fluffy, about 4 – 6 minutes until a fluffy yellow foam forms on the surface.

Step 5: envelop the benderiki in the egg.


Place a frying pan with the required amount of vegetable oil on the stove, turned on to medium level, and heat it. While the fat is heating, dip the pancakes in the beaten eggs on all sides.

Step 6: fry the meat tenders.


Carefully place the still raw benderiki into hot fat and fry them on both sides until golden and bubbly. Fry 1 side for 1 – 2 minutes. Then turn the benderiki over with a kitchen spatula and fry them for 1 minute. Then cover the pan with a lid and let the benderiki steam 2 – 3 minutes.
Preheat oven to 150 – 160 degrees and place a frying pan with benderiks in it on 15 – 20 minutes, so that the minced meat reaches full readiness. Place the finished benderiki on a large flat plate and go ahead and taste it!

1. Of course, let's prepare the pancakes first. Beat the eggs until foamy, add some milk. Sift all the flour into the dough and mix well so that there are no lumps. Then add the remaining milk. To make pancakes with holes, add a pinch of soda and quench it with lemon juice. Stir again and leave the pancake dough to rest. After 15–20 minutes you can fry the pancakes. Let's prepare the filling. Scroll the meat through a meat grinder twice. Either chop the onion very finely or pass it through a meat grinder. Add chopped herbs to the minced meat. Add salt and pepper to your taste.

  3. While beating the mixture, add flour and vegetable oil.
  4. Place the batter in a cold place for 50-60 minutes. This will make it more tender.
  5. Grind the meat, onion and garlic in a meat grinder, preferably twice. You can also use a blender. Add salt, pepper and milk until the mixture becomes viscous.
  6. Beat the whites and add to the dough.
  7. Fry thin pancakes.

While the hostess is frying the pancakes, it is better to put the filling in the refrigerator, where the meat will marinate well.

Then cut the fried pancakes in half. The minced meat is spread on the more fried side.
