Today we have a “quick breakfast”: lavash pies with cottage cheese.
My husband and daughter really don’t like cottage cheese in its natural form. And I feed them cottage cheese in these pies. It doesn’t even have time to warm up much, so it retains all its original properties.

For a 200g pack of cottage cheese I need another 2 tbsp. spoons (without slide) sugar, 2 tbsp. spoons (without a slide) of sour cream, one and a half sheets of pita bread.

If for pies with a filling, for example, from potatoes, I cut a sheet of lavash into 4 parts, then for pies with cottage cheese into 6 parts. Because it is dangerous to put a lot of curd filling in them. And it is inconvenient to eat (it can leak), and they can break through. I choose a mold for small pies with a tube.

I heat the frying pan very high, pour in vegetable oil (not a lot, but don’t barely grease the bottom). I lay out the pies and immediately lower the temperature. And I don’t leave the frying pan at all. Because the pies are ready almost instantly!

Well, here we are, fried on both sides - and bon appetit!

But for breakfast, there are “envelope” pies stuffed with potatoes and fried onions. I prepared the filling the day before, so all the worries in the morning are to “assemble” and fry the pies.

I made the lavash myself; I couldn’t find it in the store near my house.

  • 3 cups flour
  • 1 glass of hot water
  • 0.5 tsp salt

Sift the flour into a heap, dissolve salt in water, pour small portions into the dough, knead the dough until it comes off your hands. (this doesn't last long at all). Leave to rest for 20-30 minutes.
Tear off a piece of dough about the size of a chicken egg and roll it out thin. Poke the dough with a fork - and into the oven at a temperature of approximately 300 C (gas), bake in less than a minute! I folded it into a slide, sprinkled it with cold water, and put it in a towel. Pita breads remain flexible.

I'm preparing the filling.
Meat (mostly I take chicken and breast). Marinate with spices and vegetable oil in advance, 1-2 hours in the refrigerator. You can quickly marinate it in your favorite spices for 30 minutes. Cut it into small pieces. I fry it in a frying pan.
I cut the potatoes into chunks and fry them in a small amount of vegetable oil until golden brown, but leave them not crispy, but soft.
Finely chop the white cabbage, sprinkle with salt, and lightly mash.
I cut fresh cucumber and tomato into thin slices. Greenery.
Prepare the sauce: mix mayonnaise, sour cream, a little garlic, a little ketchup (all to taste).
We take pita bread, spread it liberally with sauce, then cabbage, potatoes, vegetables (cucumbers and tomatoes), meat, greens.

  5. Next, finely chop 15 g of green onions.

  6. Then take 2 boiled eggs and cut into small cubes.

  7. Salt and add black pepper to the filling to taste, and then mix the resulting mass. Our filling is ready!

  8. Take 1 thin pita bread, cut it in half with scissors, and then cut each sheet into 4 parts.

  9. We take one piece of pita bread and cover the rest with a towel so that they do not dry out. Then place 1-2 tablespoons of the prepared filling on the edge of the pita bread.

  10. First, fold in the sides of the pita bread, and then roll up the pie.

  11. Similarly, wrap the remaining filling in pita bread. You can wrap the pies in any way convenient for you.
  12. Grease a baking sheet with vegetable oil and place our pies on it, seam side down.

  13. Break 1 egg into a small bowl and add 1 tbsp. l. milk, and then stir everything until smooth. Brush the pies with the egg mixture using a silicone brush and place them in the preheated oven.

  14. Bake the pies at 190 degrees for about 20 minutes.
