How to prepare greenway. Mulled wine. Recipes and cooking recommendations. Composition and ingredients

Mulled wine- a winter hot alcoholic drink, which consists of wine heated to 70-80°C, sugar and spices. In the old days, in the northern part of Germany, at Christmas markets and holidays that were held in the open air, it was customary to drink wine to warm up and cheer up. But someone also came up with the idea of heating the wine and adding spices to it, which was both pleasant and gave a double effect of warming.

Many people don't know how to make mulled wine at home, and buy semi-finished products in bags in stores. I advise you to cook it yourself, creatively, so I’ll tell you how to make mulled wine at home. Moreover, the recipe for mulled wine at home is no different from a restaurant recipe, except that you choose your own wine and other ingredients, and do not trust the restaurant. So here's the recipe homemade mulled wine with orange.

Ingredients

  • dry red wine 750 ml
  • water 100 ml
  • orange 1 PC.
  • sugar 2 tbsp. spoons
  • cinnamon 1 stick
  • ground ginger 1 teaspoon
  • carnation 5 buds
  • nutmeg 1/4 teaspoon
  • cardamom 3 grains
  • star anise 2 stars

- Usually for mulled wine use inexpensive dry or semi-dry red wine. Or, for example, a wine that for some reason you didn’t like, let’s say you thought it was very sour or too tart, it would be perfect for mulled wine. There is no need to buy very expensive elite wines to make mulled wine; adding spices and fruits to the wine will cause it to lose its entire bouquet of aromas. But you shouldn’t buy very cheap wines either.

— Try to use whole spices, not ground ones, because... ground spices make mulled wine cloudy and more difficult to filter. But still, if you can’t find cinnamon sticks, replace it with half a teaspoon of ground cinnamon.

— It’s the same with cardamom: you can replace it with a quarter teaspoon of ground cardamom.

— Mandatory spices in mulled wine are cinnamon and cloves. Therefore, if you do not have cardamom, ginger or star anise, then simply do not use them; the flavor bouquet, of course, will be poorer, but will still remain quite spicy and pleasant. In general, you can experiment with the composition of homemade mulled wine, add other spices and fruits that you like. For example, orange or lemon peel, allspice, and instead of sugar add honey.

— If you want a sweeter drink, you can add another spoonful of sugar. Focus on your taste.

Preparation

We prepare all the necessary ingredients. Wash the orange.

Place all the spices in a saucepan or small saucepan, add 100 ml of water and stir.

Bring to a boil, boil for a minute, remove from the stove and let stand for 10 minutes.

Strain the resulting broth through a sieve or cheesecloth into a separate bowl. Rinse the pan with water and pour the broth into it.

Slice the orange into thin rings.

Add wine, sugar and chopped orange to the pan and stir. Adding orange this way is one option. It's perfectly acceptable to simply cut an orange in half and squeeze the juice directly into the pan. But it's not as authentic. Heat the mulled wine, stirring, to a temperature of 70-80°C. It is not recommended to boil wine, since light aromatic alcohols will evaporate during boiling, but heavy ones will remain, and a taste of alcohol may appear. Remove from the stove.

Let it steep under the closed lid for 2-3 minutes, then serve in tall transparent glasses or ceramic cups that retain heat. Classic mulled wine at home ready! Let's drink it while it's hot. Reheated mulled wine loses its aroma and taste. So, if you don’t have company, it’s better to cook small portions and drink right away. Bon appetit!

By the way, you can make non-alcoholic mulled wine. If you are interested in this kind of mulled wine, the non-alcoholic recipe uses not wine, but grape and apple juice. But it seems that's another story.

The winter cold, as well as the Christmas holidays, invite you to treat yourself to warming aromatic drinks. These include the world famous mulled wine recipe for preparing this hot elixir at home and will be the topic of today’s article. But before you learn how to prepare alcoholic and non-alcoholic mulled wine at home step by step, I suggest you briefly recall its benefits. These questions are not only interesting, but also encourage a new look at the strong drink.

The classic mulled wine recipe involves the use of alcohol. It is not for nothing that when translated from German, these words mean “hot wine.” But now many formulations have been invented without alcohol, which is a godsend for non-drinkers.

What are the benefits of mulled wine?

Hot wine with spices, herbs and fruits has a considerable number of beneficial properties. It is recommended to use it:

  • for cough and runny nose
  • at a temperature
  • for a cold
  • to restore immunity
  • to improve blood circulation
  • with hypothermia
  • for insomnia
  • from depression

How to make mulled wine at home - step-by-step recipe

Choice of alcohol

Many of the recipes below call for wine. And the question of his choice is sometimes important. But there is no clear answer as to which wine is best for mulled wine. Almost all wines are suitable: red, white, sweet, semi-dry, dry. A specific recipe for making mulled wine at home most often indicates which wine to use. But that doesn't mean you can't experiment and replace it with whatever is available at the moment.

It is not at all necessary to take expensive aged red wine for this drink. On the contrary, experts advise preparing mulled wine using cheap varieties, because heating will in any case change the quality of the alcohol.

It is also worth taking note of the fact that if you brew the drink with fortified sweet wine, you will get a too cloying taste that smacks of alcohol. That is why most often recipes include not very strong dry or semi-dry wines.

The best recipe for making mulled wine includes light young wine, in which the alcohol content ranges from 8.5 to 12%.

But if you choose White wine, then it is desirable that it be semi-sweet. However, do not forget that after heating, mulled wine made with white wine will sour more than with red wine. And one more thing - in a recipe with white wine, orange, rather than lemon, looks much better.

If you want an exotic taste, then try making mulled wine with sparkling wine. But in this case, you need to monitor the heating temperature of the liquid - it should not exceed 50 degrees. With higher heating, the drink will get a bitter-sour rancid taste.

Also suitable spirits. Their choice is quite wide: vodka, cognac, tequila, rum, liqueurs, port wine, liqueurs. With regard to the amount of strong alcohol, it is necessary to adhere to moderation. Otherwise, the hot elixir will resemble regular alcohol.

How to make mulled wine

In relation to this winter drink, the word “simmering” is more suitable than the word “cooking”. The liquid is heated over a fire to a temperature of 60-70 degrees - this is the maximum, which should not be exceeded. Under no circumstances should the contents be brought to a boil.

When heated, a white foam appears. It is necessary to keep the pan on the fire until it disappears. After turning off the heat, you can drink the drink immediately, or you can let it brew for another 30-40 minutes.

In order not to heat the mulled wine, you can pour it into a thermos. There is another advantage to this - the wine liquid will thicken a little and acquire a more intense aroma. However, if the recipe used lemon zest, it is better to remove it, otherwise the drink will begin to taste bitter within an hour.

Alcoholic mulled wine - homemade recipes

Classic red wine mulled wine recipe

Place an orange in an enamel container, into which about 10 cloves are stuck (as in the next photo), nutmeg (¼ teaspoon), cinnamon (1 small stick), ginger (a couple of slices) and sugar (3 tablespoons).

To prevent mulled wine from being cloudy, the spices should not be ground, but whole.

Pour dry red wine (750 ml) over the spices and place on the stove. Heat to a temperature of 60-70 degrees, turn off the heat and leave for an additional half hour.

Mulled wine - recipe with water

The seasoning for this drink requires a little preparation. To do this, take a small lemon with a thin peel. Stick a clove into the citrus and leave it like that for about an hour. The wine is heated, then boiling water is carefully poured into it along the edge. This allows you to preserve the wine bouquet of aromas.

After this, without removing the clove buds, add lemon to the wine and continue to simmer over low heat. As a result, the drink absorbs all the aroma of lemon and cloves.

Mulled wine with herbs

For “hot wine” you can safely use mint, lemon balm, fireweed, thyme, St. John's wort, oregano and other aromatic herbs. This additive gives the drink a unique natural flavor and freshness. Here is an example of one simple recipe with apples and herbs.

One apple cut into cubes, two or three lemon slices, a cinnamon stick, 3-4 cloves, 5-6 lemon balm or mint leaves are poured into a bottle of dry white wine. Heat to 60-70 degrees, then infuse additionally.

Dissolve a spoonful of honey (more is possible) in slightly cooled mulled wine. Pour into glasses and garnish with a sprig of mint and a slice of lemon.

A simple recipe for mulled wine with honey and ginger

A hot drink with honey is more aromatic, warms you better in cold weather and, of course, it is healthier than one made with sugar. Pour a glass of water into a container, bring to a boil, add orange and ginger cut into rings. Let the infusion stand for about 15 minutes.

Then add spices: nutmeg (2 g), cloves (5 pcs), cinnamon (1 stick). Pour in a liter of dry or semi-dry red wine. Heat over low heat. After turning off, add honey (50 g) to the mulled wine.

Mulled wine - recipe with fruits and berries

You can add a variety of fruits to the drink: lemon, orange, lime, bananas, kiwi, plums, peaches, pineapple, cherries. The berries used are blueberries, cranberries, strawberries, currants, and raspberries. Even dried fruits will do. Gastronomic imagination is limitless here.

You just have to take into account a small nuance - with seasonal fruits, mulled wine turns out more aromatic and rich. As for dried fruits, they need to be taken in small quantities so that the drink does not become like compote.

Mulled wine with orange and apple

The recipe for mulled wine with apples and oranges is very popular among connoisseurs of winter warming drinks. Mulled apple wine with orange and honey is prepared with red vermouth. It should be taken in the amount of one liter and diluted with two glasses of cold purified water. This is necessary in order to reduce the strength of alcohol.

After putting it on the fire, add all the other ingredients to the vermouth: cinnamon, cardamom, allspice - a level teaspoon of everything. Next - oranges and apples cut into slices (two pieces each), as well as a couple of lemon slices. You can pre-squeeze the juice from orange and lemon slices - the aroma will be stronger.

The contents are heated for about ten minutes, without bringing to a boil. Put a little honey in each glass and pour ready-made mulled wine with oranges.

Mulled wine with orange juice

This recipe for regular mulled wine with oranges is also good because its exact calorie content is known - 213 kcal. If you follow a diet, it won’t hurt to know.

You need to squeeze the juice out of the oranges to make 500 ml. To it add a bottle of dry red wine, 125 g of brown or regular sugar, 2 cinnamon sticks and one orange, cut into slices.

This is a fairly simple recipe for homemade mulled wine. Heat the pan with the future drink for about 10 minutes, without allowing the contents to boil.

With citrus and spices

The recipe requires different citruses: two tangerines, one lemon and one lime. Squeeze the juice out of the tangerines into a saucepan and add the zest from the lime and lemon. Pour in 200 g of sugar, throw in cloves (6 pieces) and one cinnamon stick.

Pour a small amount of dry red wine so that it just covers the sugar. Place on low heat, after boiling and complete dissolution of sugar, add 2 star anise and pour in the rest of the wine (there should be 2 bottles of 750 ml each). Heat the contents for five minutes and turn off the heat.

Abrikosovo - cherry mulled wine in a slow cooker

This unusual mulled wine drink is called crumble. Its composition is quite unusual for mulled wine. Try to cook it sometime and appreciate the whole palette of taste and aroma. It is prepared in the oven, but if you have a slow cooker, you can safely use that too.

Cherries and black currants (150 g each) are placed in a multicooker bowl (or in a saucepan if you decide to cook the crumble in the oven). Next, pour dry red wine (200 ml), add brown sugar (5 tablespoons), cinnamon (1 piece) and star anise (2 stars). Turn on the “Porridge” mode for 30 minutes. Next, lay out the top layer of pitted apricots (400 g).

Grind flour (100 g), chopped butter (50 g) and sugar (50 g) with your hands to form crumbs. Sprinkle this mixture over the berries and set the “Baking” mode for 30 minutes. Although this apricot-cherry mulled wine is served warm, it goes very well with ice cream.

HOW TO MAKE MULL WINE AT HOME

The main components of classic mulled wine are red wine, sugar and spicy spices. Oranges and other citrus fruits are often added to this base. Other fruits are added less frequently: apples, pears, plums, peaches.

  • To reduce the strength of the wine, either add grape juice, or brewed tea, or just water.
  • Some, on the contrary, do not reduce the strength of the wine, but increase it by adding another 15-20 grams of rum to this strong drink.
  • For children, in general, non-alcoholic mulled wine is made from grape juice heated with spices.

Mulled wine is a hot drink. There are two ways to prepare it.

The first method: spices and citrus fruits are heated in water or tea, brought to a boil, infused, and filtered. Then this hot liquid is added to the wine.

Second method: spices and fruits are heated in wine immediately. Add water or juice if necessary. The drink is infused. Then it is used.

MULL WINE AT HOME

There are a great many recipes for mulled wine.

Spices in mulled wine always include star anise, cinnamon and cloves. Cinnamon is most often placed in sticks (bark), although ground cinnamon is also suitable. Ground nutmeg and ginger, especially fresh, add too much flavor and harshness to this drink. This drink is more reminiscent of a medicinal composition. Although some people we know like it, we don't use nutmeg or ginger in our recipe.

MULL WINE AT HOME - RECIPE

  • Red wine - 0.5l;
  • Orange - 1 piece;
  • Grapefruit - 1 piece;
  • Cinnamon - 1 stick;
  • Cloves - 3g (5-7 pcs.);
  • Star anise - 2g. (2 stars);

HOW TO MAKE MULL WINE

Mulled wine is not compote; you don’t need to boil it. On the contrary, the main thing in this drink is not to go beyond 72 degrees when heated. Under no circumstances should the wine boil.

  1. Place a saucepan of wine on the stove to heat up.
  2. Prepare the orange zest. Grapefruit gives a bitter taste, if you don’t like it, don’t add it. Eat the orange itself while the drink is being prepared. Fresh contains more vitamins!
  3. Add sugar, zest and spices to the wine immediately. During heating, you need to stir several times so that the sugar does not sit on the bottom and burn. Once it melts, there is no need to stir it.
  4. Heat the wine to 70-72 degrees. If there is no thermometer to measure the temperature in the dish, then look, as soon as bubbles begin to rise along the edge of the saucepan, as if boiling, then remove the drink from the hot stove.
  5. Let the mulled wine brew for 5-7 minutes under the lid. During this time it will cool down a little. Then pour it into glasses or mugs through a strainer.

CLARIFICATIONS AND NOTES FOR RECIPE

  1. We prepare mulled wine at home without water or juice. Only on wine. You can take the simplest wine in a plastic bottle or packaged. It is better to drink good wine in its natural form. Look at the sugar content. Our wine contains 12% sugar. Yours may have less or more. And you and I may have different tastes. The amount of sugar in the drink depends on this. Sometimes even wine of the same brand, but from different years, has different sweetness.
  2. The wine we use is called "Pilin". It's something like vermouth. It contains many different useful herbs infused. You can also add dry herbs to mulled wine: thyme, St. John's wort. There are those who add black peppercorns and even garlic. But... be careful. Medicinal herbs can behave completely differently in a wine drink. Your heart rate may increase and your blood pressure may rise. For people with various health problems, it is better to start with the “children's version” of mulled wine, where wine and juice (water, tea) are in a 1:1 or 1:2 ratio. You will get such a low-alcohol compote.

I like to drink mulled wine from a mug, climbing into a chair with legs and covering yourself with a soft fluffy blanket. You hold the mug with both hands and inhale the spicy orange aroma. Hops and warmth envelop you, cold and dampness recede. Peace and tranquility sets in. Coffee is the drink of awakening, and mulled wine is the evening magician. This is our opinion.

Be healthy, have a nice evening.

As the weather gets colder and the days get shorter, it's always mulled wine season. For a long time, this spicy hot alcoholic drink has been considered a traditional companion for winter evenings, merry festivities, New Year and Christmas markets.

Mulled wine (Glühwein) translated from German means “flaming wine”. Its recipe as a cure for ailments was known back in the thirteenth century (Dr. Arnaldo de Vilanova recommended his patients make and consume this warming drink with spices). Over the centuries, this recipe has undergone changes. As a result, it has become the best remedy for colds and winter blues.

  1. To prevent mulled wine from losing its taste, do not bring it to a boil (under any circumstances). The optimal heating temperature for it is 70-80 degrees.
  2. Cook in small portions, as frequent heating will lose flavor and aroma.
  3. According to many recipes, the ideal base for making mulled wine at home is red wine.
  4. Use only whole spices. Ground spices will make your drink cloudy.
  5. Let the drink brew for half an hour (minimum) after it is ready. This will help the aroma of the spices to develop in the best possible way.

Wine selection

Since “flaming wine” is a rather sweet drink due to the ingredients (sugar and honey), it is better to use dry, weak wines for its preparation. Since mulled wine is traditionally made from red wine, the following are best suited as a base:

  • dry red table wine (Saperavi, Merlot, Kindzmarauli, Cabernet);
  • red semi-dry wine (Khvanchkara);
  • inexpensive wine from a cardboard box (from Chile or Argentina).
