Brushwood with vodka (with alcohol). Recipe for brushwood with vodka Delicious crispy brushwood recipe with vodka step by step

At home, prepare a wonderful delicacy for your loved ones - brushwood! Crispy and flavorful!

Fragrant and crispy brushwood will not leave anyone indifferent! Very easy and simple recipe!

  • egg - 2 pcs.
  • sugar - 2 tbsp
  • milk - 1 tbsp
  • salt - a pinch
  • flour - 1 -1.5 cups
  • oil - for deep frying
  • powdered sugar - to taste

Mix eggs, salt and sugar in a small container. You don't need to beat it too hard, just break the yolks.

Pour milk into the egg mixture and stir.

Next, sift the flour and begin kneading first with a spatula, and then continue with your hands. The dough is ready when it stops sticking to your hands, but there is no need to fill it with flour! I got 286 grams of dough.

We put the dough in a bag and put it in the refrigerator for 20 minutes.

Roll out as thinly as possible and cut into small rectangles with a pizza cutter.

Making brushwood is very simple, just make a small cut in the middle and wrap one of the parts there. When half of the dough has been wrapped, let the deep fryer heat up and finish the rest.

The brushwood cooks very quickly, about a minute on each side. We place a plate with a napkin or a piece of newspaper nearby so that the fried twigs can be transferred and excess oil can drain off. Since the dough is not very sweet, each twig must be sprinkled with sugar. At first I wanted to pour powdered sugar into the bowl, pour in the twig and shake it, expecting it to stick with powdered sugar. Unfortunately, nothing worked, so I advise you to immediately do it through a sieve.

It turns out to be a fairly large bowl of fragrant and crispy brushwood! Bon appetit!

Recipe 2: brushwood at home (step by step)

Brushwood can safely be called an anti-crisis dish. Firstly, the ingredients for it are almost always available to any housewife. If something is missing, then one ingredient can be replaced with another. Secondly, there are many recipes for brushwood, and you can always find one that will be acceptable in a given case.

Cooking brushwood at home is very quick, so this dish can be made even when you have unexpected guests and there is no time to run to the store.
Well, for students brushwood is a lifesaver. This unpretentious dish helped our mothers and grandmothers in Soviet times, when there was a shortage of food products.

The most common recipe for brushwood at home is the one with vodka. In addition to alcohol, we also need flour, sugar and an egg. This is all. You can prepare cookies with milk, kefir, sour cream, and yogurt. In a word, we experiment and choose our favorite recipe. It’s even better if there are several of these recipes.

You can experiment not only with the recipe, but also with the shape of the cookies. The name itself suggests that brushwood is made from thinly rolled dough, cut and twisted like dry twigs, which we call brushwood. Such dry twigs do not come in the same shapes and sizes, so the cookies can be cut in any way, as long as they are thin (they will increase in size when frying).

  • Kefir 0.5 glass
  • Sugar 2 tbsp. spoon
  • Sunflower oil 1-2 cup
  • A pinch of salt
  • Flour 1.5 cup
  • Soda 0.3 teaspoon
  • Egg 1 pc.
  • Powdered sugar to taste

Knead the dough from eggs, flour, sugar and kefir with the addition of soda and salt. Even such a small piece will yield quite a lot of firewood.

Take half or a third of the dough and roll it out thinly.

Today I will be making brush using cookie cutters and flower fondant. I have three of them, different sizes. We'll need two. Cut out flowers from the dough. We will collect the rest of the dough, roll it out again and cut out the flowers again.

We will place one flower on top of another (of different sizes) and fasten it in the center.

Cooking brushwood at home is done in a large amount of oil. In the sizzling oil, the flowers unfold in different directions, and the cookies rather resemble thorns, but this is what makes it original.

Place the finished brushwood on parchment to drain the oil. Then sprinkle it with powdered sugar.

When the dough stops being liquid, you should move on to manual kneading. When kneading the dough well, you need to make sure that it is soft and not sticky.

The finished dough is laid out on a work surface sprinkled with flour and rolled out into a fairly thin layer. From the amount of dough received, approximately 3 layers of dough two millimeters thick are easily rolled out.

Cut the layers of dough with a knife into rectangles, in the middle of which make a thin cut of a few centimeters. The larger the rectangles, the more brushwood will come out; be guided by the size of your dishes in which you will cook the product.

Then thread one end of the brushwood through the cut, making a kind of loop.

Heat sunflower oil in a medium-sized casserole. Dip the finished brushwood into the oil for a few seconds until golden brown, then remove it and place it on paper or paper towels to drain the remaining sunflower oil.

Recipe 7, step by step: thin crispy brushwood

When I first heard about this recipe, a fascinating question arose: “Why do cookies have the name “brushwood”?” Having prepared it, you realize that it really resembles fragile and gnarled tree branches. This homemade brushwood looks very original, and we will cook it in a frying pan! Using this step-by-step simple recipe for delicious brushwood, we will prepare crispy cookies.

  • 250 g flour;
  • 2 eggs;
  • 1 tbsp. spoon of vodka;
  • 2 tbsp. spoons of sugar;
  • vegetable oil;
  • powdered sugar.

Place some of the flour in a bowl, add salt and sugar.

Add vodka and eggs.

Now you need to stir in all the remaining flour. It’s easier to do it on the table, but everyone does it as they feel most comfortable. The main thing is to get a very tight dough.

Next steps are very important! Roll out the dough thinly. It should be so thin that even a landscape sheet will seem thicker than it. The layer should be like gauze. We cut it into strips, inside of which we make cuts.

We scroll through the cookies.

Once or twice, whatever you like. As you can see in the photo, the first two things on the right were twisted once, and the rest, I twisted twice. Adjust the length of the product yourself. It is determined based on the diameter of the pan. You should feel comfortable turning the cookies over while frying.

Heat the oil. The cookies fry at lightning speed, so don’t step away from the frying pan, otherwise you’ll end up with embers. To avoid tearing the cookies, place them on a board and bring them to the frying pan. Fry until equally golden on both sides.

Thin brushwood fried at home is covered with air bubbles and becomes unusually fragile. I think that all lovers of this sweet dessert will agree that these are very tasty cookies, light, airy, crispy! Decorate it with powdered sugar.

When eating it, you may not notice that it was not baked in the oven, but fried in oil in a frying pan. There is no excess oil on it. Prepare and see for yourself.

The second and third recipes use a video not from the TK.

Step-by-step recipe for thin, crispy, sweet brushwood with photos

Kitchenware: deep frying pan or heavy-bottomed saucepan, spatula, bowl, slotted spoon, fork, pizza cutter, rolling pin or noodle maker, paper towels.

Ingredients

Step-by-step preparation

  1. Break 1 chicken egg into a bowl and lightly beat it with a fork.
  2. Add 25 ml of cognac or vodka to the egg and mix well. Did you know? Alcohol is needed to make the dough crispy, but during the cooking process it will completely evaporate, so these cookies can be given to children. Then add 140 g of flour in small parts. The flour must first be sifted. Mix everything with a fork, and when it becomes difficult to stir, knead the dough with your hands until smooth.

  3. Dust the table with flour as needed. The finished dough should be quite dense. We leave it for 10 minutes, and then we can move on to forming brushwood.

  4. Roll out the dough thinly using a noodle machine or rolling pin. The thinner the dough, the tastier the brushwood will be.

  5. The dough will be thin enough that pressing with your finger will not leave an imprint.

  6. Cut it into rectangles using a pizza cutter.

  7. Then we make a cut in the center of each rectangle and turn one edge of the dough through it.

    You can also use a noodle machine to cut some of the dough into wide or thin strips.

  8. Pour 130 ml of vegetable oil into a thick-walled pan and heat it over medium heat.

  9. Place the brushwood in hot oil and fry for 10-15 seconds on each side.

  10. Remove the finished cookies to a plate with a paper napkin.

  11. We fry the dough strips in the same way, but it will take only 5-7 seconds to cook on each side.

  12. Sprinkle the hot brushwood with powdered sugar and serve with tea.

Brushwood is a tasty, budget-friendly delicacy that children of the 90s could devour with tea almost every day. There was a twist in that brushwood that gave it a unique crunch: alcohol. This does not mean that brushwood is contraindicated for children: the alcohol evaporates, leaving behind a pleasant fragility and softness. How to cook brushwood with vodka so that the delicacy tastes like childhood? Read the material.

Considering that the dish is a budget option for delicacies, it requires a small list of ingredients that will be needed for preparation.

Cooking time – 20 minutes (excluding waiting time).

  • Vodka – 1 tbsp. l.;
  • flour – 190 g;
  • eggs – 2;
  • salt – 1/3 tsp;
  • powdered sugar – 3 tbsp. l.;
  • oil – 160 ml.

You can get tasty and crispy brushwood by following these steps:

  1. Break the eggs into a bowl suitable for kneading the dough.
  2. Next is salt. It will contrast with the powdered sugar that is used to decorate the brushwood.
  3. Whisk: you don’t need to try too hard - a regular fork will do the job.
  4. Now it’s the turn of vodka: pour it in and mix well. Note! Vodka is not the only alcoholic drink that is suitable for the recipe. Rum, spirits, brandy and cognac, as high-percentage drinks, will also help make the brushwood crispy.
  5. Without further ado, add in the entire amount of flour: the dough should be stiff.
  6. The resulting mass, which, by the way, should not stick to your hands (if it sticks, add more flour), roll it into a ball and, wrapping it in cling film, place it in the cold for 30 minutes.
  7. Roll out the rested dough portionwise into thin layers. We remember that the airiness depends on the thickness: the thinner, the more porous.
  8. We cut the resulting sheet into longitudinal strips or diamonds.
  9. With any slicing method, we make a hole in the center through which you need to turn one edge of each flour product.
  10. Since the brushwood is fried quite quickly, before sending it into boiling oil, the entire dough should take the form of inverted strips or diamonds.
  11. We fry the dessert with vodka at home in a frying pan or deep fryer.
  12. After a short frying process, place the cookies on paper towels so that excess oil does not spoil the taste.

Sprinkle the thin, crisp brushwood generously with powder. If desired, combine with vanilla or cinnamon for a pleasant aroma.

Cooking at home

Now a version of thin, crispy brushwood, but with a sweet dough.

Cooking time – 20 minutes.

To prepare brushwood, take the following products:

  • flour – 400 g;
  • vodka – 25 ml;
  • sugar – 100 g;
  • eggs – 2;
  • salt - a pinch;

  • oil – 500 ml;

  1. Beat eggs with sugar and salt.
  2. Pour in vodka. Remember that any strong alcohol will do.
  3. Add water - it should be at room temperature.
  4. Start adding flour one tablespoon at a time.
  5. Knead the dough with vodka. You have achieved what you wanted if the dough becomes tight. At this point, stop kneading and proceed to the next step.
  6. Roll out to a thin circle and cut several times from edge to edge: we get triangles with one edge rounded.
  7. From the side of the round edge, stepping back a little, we make a cut and turn the product inside out.
  8. Having converted all the dough into brushwood, we proceed to frying. This should be done using a large amount of oil.

Quick recipe in 15 minutes

Cooking time – 15 minutes.

To prepare the vodka dough, in addition to 30 ml of alcohol, take:

  • eggs – 2 pcs.;
  • flour – 2 tbsp;
  • salt – 2 pinches;

  • oil - about 10 ml.

Preparation:

  1. We start again by beating the eggs. Only this time, before mixing in the salt, you need to pour in the vodka.
  2. We achieve fluffy foam, not to be confused with stable foam. Advice! If children are included in the tasting, we recommend taking 50 g of sugar.
  3. Pour a couple of tablespoons of flour into the egg mixture: immediately after adding, knead.
  4. When the dough becomes difficult to knead in the bowl, sprinkle the work surface with flour and continue kneading on the table.

Fry the delicacy in boiling oil, and when ready, sprinkle with powder.

Option with cookies

Did you know that brushwood dough can be liquid. In this case, you get interestingly shaped cookies. The only difficulty is that you will need a special form to manipulate the dough.

A delicacy from the times of total Soviet shortage, which is still popular today. Brushwood (crunchies) is one of the types of cookies, often sweet for tea or coffee, but you can also make salty crunchies, for example, as a natural snack for beer. Thanks to a specially selected dough recipe, the cooking technology does not change - the difference between the dessert and savory version is only in the sprinkling of salt or powdered sugar.

Vodka is added to get the classic crispy brushwood - ethyl alcohol makes the dough more brittle. During the roasting process, the alcohol evaporates, so the finished dish can be given even to children.

Ingredients:

  • wheat flour – 1 cup + a third of a cup for kneading the dough;
  • chicken eggs - 2 pieces;
  • vodka – 1 tablespoon;
  • salt - a quarter of a teaspoon (in the dough);
  • refined sunflower oil – 400 ml;
  • powdered sugar - 3 tablespoons (for dessert option).

Recipe for brushwood with vodka

1. Beat the eggs into a deep bowl, mix with a fork or beat with a whisk. Add salt and vodka, mix (beat) again until smooth.

2. Add half a glass of flour, mix, then gradually add the remaining flour to form an elastic dough.

3. Divide the brushwood dough into 4 even parts, roll each of them into a layer 1-1.5 mm thick.

While working, it is very important to add flour in time so that the dough does not stick to the work surface.

4. Cut the layers of dough into rectangles measuring 3 by 5 cm. Make a 1.5-2 cm oblique cut in the center of each piece, then roll one half of the rectangle through the cut in the middle as in the photo. You will get a shape characteristic of brushwood.

5. Pour vegetable oil into a saucepan, saucepan or deep frying pan and heat over medium heat until slightly smoking.

6. Fry 3-5 pieces at a time until golden brown on each side (usually 20-30 seconds).

The cookies should float freely in the oil without touching the bottom.

7. Place the finished vodka-infused brushwood on paper towels to remove any remaining fat.

8. After cooling to room temperature, transfer the crisps to a plate. Sprinkle with powdered sugar or salt.
