I don’t bake homemade baked goods at home very often. Why? Yes, everyone eats healthy, we try to eat less flour and sweets. But sometimes there are times when guests come and they themselves want something so harmful...

And I myself would bake and bake something homemade just because of the aromas. Oh, how I love it when the house smells like baked goods, when you can already smell a special aroma from the doorstep. You immediately feel a special atmosphere at home. Many people probably feel the same way about baking, right?

Why do I like my signature pie so much?

It cooks very quickly, the ingredients are all very simple, it always turns out great (there has never been a time when it didn’t work out). And, of course, I always know WHAT exactly I will put in the pie. And this is always much better than buying something in a store. And it turns out to be quite inexpensive.

This is a shortbread pie, it has a sandy base, and the top is filled with cottage cheese and apples. Some call it jellied, loose sand pie. I heard that someone calls this pie “Royal cheesecake.” Here is the pie recipe itself with step-by-step photographs.

The pie serves approximately 6-8 people. Preparation takes about 20 minutes plus baking time. The calorie content of a serving is approximately 300 kcal.

For the test you will need:

2 cups of flour;
1 teaspoon baking powder;
0.5 cups granulated sugar;
Half a stick of butter (the recipe calls for margarine, but I never bake with it).

For the filling we need:

2 eggs;
250 grams of low-fat cottage cheese;
0.5 cups granulated sugar;
100 grams of sour cream;
2-3 apples;
Vanilla sugar.

How to cook

First we prepare the sand base. To do this, sift premium wheat flour through a sieve, add baking powder and granulated sugar.

Grate the cold butter on a coarse grater and mix with the base (flour, granulated sugar and baking powder) until crumbs are obtained. You can use a spoon first, but it’s better to rub everything right away with clean hands.

Place part of the dough (almost all) on a greased baking pan. The shape can be round or rectangular.

We leave some of the dough for later to sprinkle on top of the filling.

Add granulated sugar to them, continue beating, then add low-fat cottage cheese, sour cream, vanilla sugar. I don't like too much vanilla flavor (I usually use half a packet, but it depends on your preference, you can add a whole small packet of vanilla sugar).

Peel the apples. I take 2-3 apples depending on the size. We grate them on a coarse grater. Mix everything thoroughly again, beat a little with a mixer at low speed.

Sprinkle the remaining shortcrust pastry crumbs on top. You don’t need to leave a lot of crumbs, as it won’t turn out very nice.

Place our pie in an oven preheated to 180 degrees. Bake for approximately 30 minutes.

Tip: to check the readiness of the pie, pierce it with a wooden toothpick. If it's dry, the cake is ready, it's time to take it out.

Some subtleties to note

I always pay attention to cottage cheese, because the taste of the pie often depends on it. Do not take fatty or too grainy cottage cheese. It is better to use low-fat and softer ones. Tested more than once. The taste is much more delicate. It is best to take sweeter apples.

Shortbread pie is indispensable when you need to quickly prepare something tasty for tea. For baking you will need the simplest and most affordable products. In addition, the proposed recipe allows the hostess to serve a new dish of cottage cheese to the family table if the casserole or cheesecakes have become a little boring.

List of ingredients for the dough:

  1. 100 g butter (margarine);
  2. 2.5 cups flour;
  3. 1 egg;
  4. 1 tbsp. sour cream;
  5. 1 cup of sugar;
  6. salt on the tip of a knife;
  7. vanillin to taste;
  8. 2 tsp baking powder.

For filling:

  1. 500 g cottage cheese;
  2. 1 egg;
  3. 3 tbsp. semolina;
  4. 3 tbsp. granulated sugar;
  5. 3 medium apples.
Preparing the pie:

In order to knead the dough, you will need softened butter (margarine), so you need to take it out of the refrigerator in advance. Grind soft butter with granulated sugar. The mass will be more homogeneous if the sand is replaced with the same amount of powdered sugar.

Add an egg, a tablespoon of sour cream, a little salt to the oil mixture, stir well.

Sift the flour combined with baking powder and vanilla into a bowl and quickly stir everything with a spoon.

Use your hands to combine the crumbling mass into one lump. After a few minutes you will have a fairly soft dough. Wrap a third of this dough tightly in cling film and place in the freezer for 30-40 minutes.

For baking you will need a rectangular pan with dimensions of 16x25 cm. Grease the pan with vegetable oil and line the bottom with parchment paper to make it easier to remove the finished cake. You can take a round springform pan with a diameter of 24-26 cm. Distribute two thirds of the prepared dough over the bottom of the pan. You need to do this with your hands, as the dough is too soft to roll out with a rolling pin.

Place apples, cored and cut into thin slices, on top of the dough layer. Prepare the filling by mixing cottage cheese with sugar, semolina, egg and sour cream. Spread the curd filling over the apple layer.

The rest of the dough, which should have cooled well by this time, is removed from the freezer, grated on a coarse grater and sprinkled with the resulting shavings onto the curd layer.

Bake the pie for about 45 minutes at 175°. The pie should be well browned during this time. Let it cool, then remove from the mold and cut into portions. Enjoy your tea!

I won’t say that cottage cheese is considered a very healthy product, but my children don’t really like it, but they gobble up such a delicious shortbread pie with cottage cheese very quickly, and even ask for more.

To prepare this recipe you will need the following products:

  • Flour - 3 cups

  • 2-4 eggs
  • A stick of butter. Of course, you can replace butter with margarine, but if you love your family and care about their health, then it’s better to buy butter. I would also like to advise you to buy butter with a higher fat content, since the higher the fat content of the butter, the tastier and fluffier the shortbread cake with cottage cheese turns out.
  • Sugar - 150 grams (but I always add to taste, as they say, by eye).
  • You can also add baking soda on the tip of a teaspoon, but this is not necessary. I did it with and without baking soda and didn’t feel any difference.

For the filling you need to take:

  • Cottage cheese - 2 packs, or 400 grams by weight.
  • Sugar - 150 grams (I also add to taste)
  • Sour cream (or cream) - 3-4 tablespoons.
  • You can also take any berries or apples to your taste.

At the very beginning, when I prepared this pie with cottage cheese, I took the butter straight from the refrigerator. The oil was cold and I kneaded the dough for a very long time until it reached the desired consistency. Well, what can I do, the young woman was not experienced, but now I take the butter out of the refrigerator in advance in the evening so that it becomes soft. And after 30-40 minutes, my family gets a delicious pie with cottage cheese for breakfast (I get up very early, so I have time to prepare it for breakfast).

Sift the flour through a fine sieve, add sugar and mix well.

Then add butter to the flour and sugar and stir thoroughly so that the result is not dough, but crumbs.

Then add the eggs and stir well. It should be crumbly. If the mass becomes dough-like, add a little more flour.

After the dough is ready, we start preparing the filling. There is nothing complicated here, just combine cottage cheese, sugar and sour cream and mix well.

So, now we need a baking sheet, the bottom of which I cover with foil, but this is not necessary, it’s just more convenient for me, and I don’t like to peel off pieces of burnt baked goods from the baking sheet later (yes, this happens).

Place half of the dough on the prepared baking sheet. If you are preparing a pie with cottage cheese and apples, then lay the next layer with apples and sprinkle with a little sugar.

The next layer consists of cottage cheese, so we lay out all the cottage cheese, and pour the rest of the shortcrust pastry on top.

The oven needs to be preheated in advance and our future pie with cottage cheese should be placed in it for 20-30 minutes (in general, until ready).

pudding or starch 1 sachet or 40 g
lemon 1 pc.
vanilla extract 5 drops
milk 2-3 tbsp.
apricot jam 3 tbsp.
almond flakes to taste

Knead the dough from flour, 20 g of sugar, yolk and milk. Distribute it evenly in a springform pan, forming sides, and put it in the refrigerator for an hour. Prick the dough with a fork and bake for 15 minutes in an oven preheated to 200 degrees.
For the filling, peel the apples, slice them thinly and sprinkle with lemon juice. Beat 100 grams of sugar with 3 yolks, lemon zest, vanilla, cottage cheese, cheese, sour cream and pudding (starch).
Separately, beat the whites into a thick foam and add them to the curd mass. Place 2/3 apple slices on the dough, cover with curd mixture and arrange the remaining apples beautifully.
Bake the pie for about 50 minutes. While still hot, spread with jam, sprinkle with almond flakes and cool.

Making shortbread dough:

  1. First, sift the flour through a sieve.
  2. Mix flour and 2/3 cup sugar. You should also add a pinch of salt and 1 tsp. baking powder.
  3. Grate the margarine previously frozen in the freezer.
  4. Add grated margarine and 1 egg to the prepared mixture of flour and sugar.
  5. Knead the resulting dough and divide it into 2 parts: one of which is approximately 2/3 of the total mass, the second - 1/3.
  6. We pack the dough in cellophane and put it in the refrigerator to cool down.

Let's move on to making the curd-apple filling:

  1. Grate the previously peeled fruits using a coarse grater.
  2. Squeeze out excess juice from the apple mixture, then add vanilla.
  3. Mix sour cream and remaining sugar into the cottage cheese, ground through a sieve.
  4. Mix the resulting mass with mashed apples and cottage cheese.

Now that both the dough and filling are ready, let’s start preparing and baking the dessert:

  1. Line a baking pan with parchment paper and grease it with butter. To prepare this recipe, it is most convenient to use a 23-24 cm springform pan.
  2. Take most of the dough and roll it out. The diameter of the resulting layer should be slightly larger than the shape in which the dessert will be baked.
  3. Place the dough in the mold: the layer thickness is approximately 2 cm.
  4. Cover the dough with a layer of curd and apple filling.
  5. Roll out a smaller part of the dough in a layer equal to the diameter of the mold, and cover the top of the pie with it.
  6. Raise the protruding edges of the bottom layer of dough and connect them with the edges of the top one.
  7. Place the pie in the oven preheated to 180°C. The baking process lasts 30-40 minutes.

The delicious treat can be sprinkled with vanilla or cinnamon on top. After the dessert has cooled, it should be served.

  • butter (82.5%) – 220 g;
  • wheat flour – 720 g;
  • granulated sugar – 240 g;
  • baking powder - 1 tbsp. spoon.

For filling:

  • fat cottage cheese – 450 g;
  • eggs (large) – 2 pcs.;
  • vanillin – 1 packet;
  • powdered sugar – 140 g;
  • apples (sweet and sour) – 2 pcs.

Preparation

Place the oil on the table and let it sit for 30-40 minutes. Now we transfer it to a bowl and sift into it the flour previously combined with baking powder and add fine granulated sugar. We rub the ingredients with our hands so that not a solid lump of dough comes out, but loose crumbs.

Take another bowl and crack large chicken eggs into it. Add powdered sugar and aromatic vanilla to them and beat everything with a hand whisk. Add the fatty cottage cheese to the mixture of eggs and sugar and, immersing the blender in the container, beat the mass until fluffy and homogeneous. We completely cover a deep baking tray or mold with baking paper and spread half of our dough over its entire surface. We evenly place puffed cottage cheese on top of it and cover it with small strips of peeled apple pulp. We finish the pie with a layer of the remaining crumbs and immediately send it to the oven preheated to 195 degrees. After half an hour, we remove the pie from the cabinet and enjoy its tenderness.

Ingredients:

For the test:

  • high quality flour – 620 g;
  • butter –90 g;
  • chicken egg – 1 pc.;
  • sour cream – 2 dessert spoons;
  • fine sugar – 220 g;
  • baking powder - 1 packet.

For filling:

  • – 420 g;
  • chicken eggs – 2 pcs.;
  • sour cream – 3 tbsp. spoons;
  • fine sugar – 130 g;
  • apples (large) – 3 pcs.;
  • – 2/3 tbsp.

Preparation

Melt the butter in the microwave, add fresh eggs, fine white sugar, sour cream and rub everything well with a whisk. Next, add baking powder to this mixture and diligently knead the flour into a fairly dense dough. Wrap it in a piece of cling film and put it in the freezer for 35-40 minutes.

Place all the cottage cheese in a large blender bowl, add the freshest eggs, fine sugar and sour cream. Turn on the appliance and beat the ingredients until the curd mass is fluffy. We peel the apples from seeds and peel, and chop the pulp itself into cubes. We divide the chilled shortcrust pastry, crushed apples and jam into two parts, and then form the layers of the pie on parchment lined in a deep pan: grate the dough, grease it with jam, put apples on them and cover them with a mass of airy cottage cheese, and then again, apples -jam-dough.
