I don’t use all the bananas, I save them for decorating a delicious cake in a hurry. I put the cake in the refrigerator for three hours.

To prevent marshmallows from sticking to the knife blade, moisten them with hot water from time to time.

The next step is to prepare the strawberries (200 g): the berries need to be washed and cut lengthwise into thin slices. Next are two kiwis. I peel it and cut it arbitrarily to suit my mood.

Nuts (80 g) can be coarsely chopped, I grind them in a blender - a couple of revolutions. The main components are ready, it’s time to create the cream.

Recipe for marshmallow cake cream without baking

I will soak the simplest cake in a hurry with simple cream. Beat sour cream with powdered sugar until stiff foam. To prevent the cream from floating on the marshmallow, I will add a thickener for sour cream or cream.

Now I’m putting together a quick cake using a simple recipe.

I place layers on the bottom of the springform pan in the following sequence: marshmallows, cream, strawberries, cream, marshmallows, kiwi, cream, marshmallows.

For this cake you will need to make a cookie cream filling and icing. You can decorate it to your taste, I like to do it with nuts, since they are also in the middle of the dessert. Cooking time will take about 30 minutes. After cooking, you will need to wait until the treat hardens for about 3 hours.

Ingredients:

  • shortbread cookies - 800 gr.
  • walnuts (can be hazelnuts, cashews or others to your taste) - 100 gr. + for cake decoration
  • sugar - 200 gr.
  • cocoa powder - 60 gr.
  • butter - 150 gr.
  • water - 240 ml
  • vanillin - 1 tsp.
  • cream 35% - 120 gr.

Cooking method.

In a large bowl, break all the cookies into small pieces.

100 gr. The nuts need to be dried in a dry frying pan over low heat. This will take about 5 minutes, be sure to stir constantly, otherwise the nuts will burn.

Pour the toasted nuts over the broken cookies.

Let's prepare the cream. Pour 200 g into a saucepan or stewpan. sugar and 60 gr. cocoa. Mix these dry ingredients together.

Now pour gradually!!! water (240 ml), stirring constantly to obtain a homogeneous mass without lumps.

When the water, cocoa and sugar are well mixed, put the butter in a saucepan (150 g).

Place the mixture over medium heat and cook our delicious chocolate cream for about 7-8 minutes. Don't forget to stir so that the cake filling doesn't burn.

When the cream is cooked, remove it from the heat, add vanillin, stir and let cool slightly.

Now you can fill the pieces of cookies with nuts with cream. And stir well until the mixture becomes homogeneous.

Take a springform baking pan. In this case, the diameter of the mold is 23 cm. Place the resulting mass into the mold and compact it well with a spoon. Cover with a lid and place in the refrigerator. Chocolate cookie cake needs to be covered with icing. Let's cook it.

Pour the cream into a saucepan and bring it to a boil on the stove. Break the chocolate into pieces and pour hot cream over it. Let the chocolate sit for about 1 minute to melt. After this, mix everything thoroughly until smooth.

This cake is easier to prepare than the previous chocolate one. Here the cream is made with sour cream, with the addition of banana. Shortbread cookies are also used, which break and crumble well. You can decorate this dessert with any fruit or berries that are in season.

Ingredients:

  • shortbread cookies – 600 kg
  • sour cream - 1 l
  • sugar - 6 tbsp. l.
  • banana - 1 pc.

Cake decoration of your choice: grated chocolate, fruit, nuts.

Cooking method:

Cut the banana into pieces. Pour sour cream into a bowl, add chopped banana and add sugar. Mix everything well. This will be the cream.

Break the cookies into pieces. They don’t have to be small, they will soak well and cut well.

Take a large bowl in which you will assemble the cake. Line a bowl with cling film. This is necessary so that the treat can be easily removed later.

We assemble the cake in layers. The first layer is sour cream with banana. The second layer is cookies. Cover the gaps between the pieces with crumbs. Then again a layer of sour cream, followed by a layer of cookies. Continue this way until the sour cream runs out. Sour cream is the last layer.

Cover the cake with cling film and press down with your hand until it is firm. Place the bowl in the refrigerator for 2 hours.

Cooking method.

At the very beginning we make the cream. For Napoleon it is customary to prepare custard. This is the most difficult part of making this cake. If you do everything according to the instructions, everything will work out.

Beat 3 eggs into a bowl and add sugar.

Using a mixer, beat eggs with sugar until white foam.

Sift the flour to saturate it with oxygen. Pour vanilla sugar into the beaten eggs and gradually add flour, beating with a mixer. This will be the base for the cream.

Now you need to pour half a liter of milk into our thick base and stir to get a homogeneous mass. Pour milk in parts and stir.

Take the container in which the cream will be brewed. Do not use enamel dishes; the cream is likely to burn in them. Use stainless steel or non-stick cookware. You can brew the cream in a large frying pan with a thick bottom.

Pour the resulting mass into a saucepan or frying pan, pour in the remaining milk, and stir. Brew over low heat, stirring constantly. It is important to stir so that the eggs do not curdle and the cream does not burn. Cook the cream until it boils. By this time it should thicken.

Transfer the cream to a bowl to cool. The cream turns out smooth, tender and tasty.

When the cream has cooled, you need to mix it with softened butter. You can quickly do this with a mixer or blender, or you can add the cream in parts to the butter and mix with a spoon to get a homogeneous mass.

Now you need to assemble the cake. Take a plate on which you will present your Napoleon. First, grease the bottom with a little cream so that the “ears” don’t fidget. Place the first layer of cookies on top. Cover the empty spaces between them with pieces. There is another layer of cream on top. And then again “korzh”. Place the second layer of cookies in a checkerboard pattern to cover the joints of the previous layer.

The “Anthill” cake is loved by all those with a sweet tooth. How can you not love it if the cream in it contains condensed milk? I don’t know a single person who would be indifferent to condensed milk.

“Anthill” can be made very quickly, literally in 15 minutes, if you make it from cookies. It will be delicious to take baked goods with baked milk flavor or coconut flavor, but you can use any base that you like.

Ingredients:

  • cookies - 700-800 gr.
  • walnuts or hazelnuts - 200 gr.
  • butter - 200 gr. It should be softened, remove from the refrigerator in advance.
  • boiled condensed milk - 0.5 l
  • sugar - 1 tbsp.

Cooking method.

First you need to roast the nuts to make them tastier. Pour the nuts into a dry, heated frying pan; dry the nuts over medium heat, stirring constantly. Make sure the nuts don't burn. It is enough to fry them for 3-4 minutes. Then transfer to a bowl to cool the nuts.

Making cream. Beat the butter with sugar using a mixer. Add boiled condensed milk to the mixture and beat again. Chop the nuts with a knife or rolling pin, or blender, as you prefer. The nuts can be chopped finely or larger, it all depends on the preferences of the eaters. Mix everything together again. The cream is ready.

Break the cookies into pieces directly into the cream. Now use a spoon to mix the mixture well so that there are no dry slices left. Place the resulting mixture in a heap on a plate.

You can leave the cake as is. Or you can grate the chocolate on a fine grater and sprinkle on top. It will look as if the ants are still crawling :) Place the finished dessert in the refrigerator to harden and soak for about 1 hour. After which you can taste it.

Sweet crackers are ideal for this cake. But you can use any sugar cookies you find. The cream is prepared very simply and quickly. Try this delicacy and you won’t regret it. The finished soaked dessert turns out soft and cuts well with a fork.

Ingredients:

  • sweet crackers (or other cookies) - 400 gr.
  • butter - 100 gr.
  • sugar - 100 gr.
  • cottage cheese (low-fat) - 400 gr.
  • sour cream - 200 gr.

Preparation:

1. Remove the butter from the refrigerator in advance so that it is softened and easily whipped. In a deep bowl, combine the butter with sugar and beat with a mixer until fluffy.

2. In another bowl, combine cottage cheese with sour cream. To obtain a homogeneous mass, beat everything with a blender. You will get a mass of creamy texture.

Since there is quite a lot of fat in the cream, take low-fat cottage cheese.

3. Two separately whipped mixtures must be combined together using a mixer. Beat until smooth.

4. Assemble this quick cake. Line the pan with parchment paper. Place cookies on the bottom in one layer, brush them with cream.

5. Place another layer of cookies on the cream, and cream again on top. Then repeat. And the final layer is cookies. There is no need to lubricate it. Cover the pan with cling film and refrigerate for at least 2 hours. Better not at night. Do not use all the cream, leave a little to coat the cake before serving.

6. Carefully remove the cookie cake from the pan, holding it by the parchment, and place it on a plate. Apply the reserved cream to the top and sides.

7. Turn several cookies into crumbs and decorate the sweets with them. The baked goods can be broken by hand or crushed in a blender.

Use a silicone spatula to grease the cake with cream and sprinkle the sides with crumbs.

8. That's all. It cooks very quickly. In the evening we put together dessert, and in the morning you can drink tea with it!

Cookie coffee cake with sour cream

This is a chocolate cookie cake. And it becomes coffee when the cakes are soaked in fresh coffee. This is done for greater softness and flavor. The cream will be white, sour cream. But if you wish, you can add cocoa to it, then you get a completely chocolate treat.

Ingredients:

  • chocolate cookies - 650 gr.
  • sour cream - 400 gr.
  • sugar - 4 tbsp.
  • thickener for cream - 2 packs. (16 gr.)
  • sweet coffee - 1 tbsp.

Cooking method:

1. Making the cream: add sugar to the sour cream and beat with a mixer until the sugar is completely dissolved.

2. Add a thickener to the sour cream to make it thicker. Without a thickener, the cream will be liquid and a lot of it will drain. If there is no thickener, then take homemade thick sour cream and beat briefly. Or you can make weighed sour cream from the store. To do this, put the sour cream in cheesecloth and twist tightly. Place the cheesecloth with sour cream in a colander, and place the colander in a bowl. And put it in the refrigerator overnight. In the morning, all excess liquid will drain into the bowl, the sour cream will be thick.

If you are making weighed sour cream, then initially take 600 grams of it; after the whey has drained, the required amount will remain.

3. Take a plate on which you will make the cake. Place the cookies on the bottom, dipping each one in fresh sweet coffee for a second. You don't need to soak it for a long time.

5. Also grease the top cake with cream, and also coat the sides.

6. Make crumbs from several cookies and sprinkle the cake on all sides.

7. Place the cookie cake in the refrigerator for 2-3 hours to soak.

8. Now it cuts well, has become soft, tasty, tender. I recommend this delicacy to coffee lovers.

This cookie cake is not as quick to prepare as the previous versions, because here you need to make raspberry jelly and curd mousse. The dessert has three layers: the first layer is an oatmeal cookie crust, the second layer is a delicate curd mousse and the third layer is jelly. It will be very beautiful, summer-like, refreshing and tasty.

Ingredients:

For the crust:

  • oatmeal cookies - 400 gr.
  • butter - 150 gr.

For the curd layer:

  • cottage cheese - 700 gr. (any fat content)
  • sour cream - 300 gr. (any fat content)
  • raspberries - 350 gr.
  • gelatin - 30 gr.
  • sugar - 150 gr.
  • vanilla sugar - 10 gr.

For the jelly:

  • gelatin - 20 gr.
  • raspberries - 150 gr.
  • water - 600 ml
  • sugar - 60-100 gr. (taste)

For decoration:

  • raspberries - 100-150 gr.

Preparation:

1. Pour 20 and 30 g of gelatin into two bowls. 20 gr. gelatin, pour 100 ml of water, room temperature and stir. 30 gr. gelatin pour 150 ml of water. Leave the gelatin to swell aside and start preparing the cake.

2. Place 150 g of soft butter into the blender chopper. Break oatmeal cookies to go with it. Turn these products into a homogeneous mass - buttery crumbs. If you don’t have a blender, you can do without it. First, crumble the cookies with your hands.

You can also crumble it in another way: put the baked goods in a plastic bag and tie it. Use a rolling pin to leave some crumbs in the bag. Then add soft butter to the crumbs (take it out of the refrigerator in advance) and rub it with your hands.

3. To assemble the cake, take a springform pan with a diameter of 26-18 cm, since the number of ingredients is large. If you have a small shape, then take proportionally less food. Line the bottom of the pan with parchment. Place cookie crumbs on the bottom, level and compact very tightly. This can be done by hand or with a potato masher.

4. Place the pan with the cake in the freezer for 10 minutes to harden and compact.

5. Now prepare the second layer. It also needs to be done in a blender, which will chop and mix everything perfectly. Place cottage cheese, sour cream, raspberries, sugar and vanilla sugar in a bowl and beat. You will get a beautiful pink mass.

If you don’t have a blender, then these components can be mixed with a mixer.

6. Grind the resulting mass through a sieve to make the mousse soft and without raspberry seeds.

7. 30 grams of gelatin, which by this time has already swollen greatly and has absorbed all the water, needs to be melted in a water bath or in the microwave. It is important that the gelatin does not boil, because then it will not harden well. Heat and stir, when it is completely dissolved, remove. If you heat it in the microwave, heat it in short periods of time, take it out and stir.

8. Pour the melted gelatin into the curd-raspberry mixture in a thin stream, while whisking with a mixer or whisk.

9. Remove the cake pan from the freezer and pour the curd mixture on top. Use a spatula or spoon to smooth it out and place it in the freezer for another 20 minutes to set.

10. All that remains is to prepare the jelly. Place 150 g in a small saucepan. raspberries, sugar to taste (from 60 to 100 g) and pour 600 g. water. Place on the fire until the water boils. Cover the pan with a lid. When the raspberry compote boils, turn off the heat and let it sit covered for another 10 minutes for a richer flavor.

11. Strain the compote through a sieve so that there are no cooked raspberries in it. Let the liquid cool.

12. When the compote has cooled, melt the remaining 20 grams of gelatin using the method described above (when you melted gelatin for curd mousse). Pour gelatin into the raspberry broth and stir.

13. Remove the mold where the curd layer has already hardened from the freezer. Place fresh raspberries on it for decoration. Decorate according to your taste and desire, laying out the raspberries in any pattern.

14. Using a ladle, pour some raspberry jelly into the pan to form a thin, even layer. The jelly is not poured in immediately, because the raspberries will float and it will be ugly. The raspberries in a thin layer will freeze and remain in place.

15. Place the mold in the freezer for 5 minutes until a thin layer of jelly sets.

16. When the thin layer has hardened, pour all the jelly over the cake and put it in the freezer for 20-30 minutes until completely hardened. You can also put it in the refrigerator for 1-2 hours.

17. When the jelly has completely hardened, the cake must be removed from the mold. To do this easily, you need to soak a towel in hot water and apply this towel to the sides of the mold for a few minutes. The outer jelly will thaw a little and the mold will be easily removed. Open the sides of the mold, twist them a little and remove them.

18. That’s it, the cake made from cookies and cottage cheese is ready! It is beautiful, bright and even contains vitamins and minerals, which not all confectionery products can boast of.
