  • 0.5 tbsp. sugar or to taste

  • 1 tbsp. flour
  • 1 tsp. soda
  • 1 tbsp. l. lemon juice
  • 1/2 tsp. cinnamon

How to make Lenten pie from carrot cake

Mix sugar with carrot cake and a pinch of salt.


Quench soda with lemon juice. Baking soda reacts much more difficultly with lemon juice than with vinegar. Therefore, the soda can be thoroughly mixed with the juice so that no lumps remain. Or add a little more lemon juice.


Pour in vegetable oil and add a small amount of flour. To stir thoroughly. Knead the dough, gradually adding flour.


Add crushed nuts and ground cinnamon. Mix well.


Grease a baking sheet or baking dish with vegetable oil. Pour the dough onto a baking sheet and place in a preheated oven at 200 C° and bake until golden brown.

We leave our dough to sit for 10-15 minutes, after which we pour it into a clean dish for baking in the oven:

Their meeting is very significant for all of us, yes, yes. This is another reason to smile, invite each other to visit and spend the whole evening in warmth and comfort, which, you see, is priceless in this endlessly rainy autumn. Therefore, you should not put off until tomorrow what you can bake today. Come on!

For eggless carrot cake we will need:

  • 1 cup whole grain wheat flour;
  • 1 cup regular flour;
  • 1.5 cups grated carrots (about 3 medium carrots);
  • 3/4 cup orange juice;
  • 1/2 cup vegetable oil;
  • 1/2 cup of any syrup (I used rose hips);
  • 1/2 cup raisins;
  • 1/2 cup nuts (I used hazelnuts);
  • zest from one orange;
  • 1 tsp baking powder;
  • 1 tsp soda;
  • 1 tsp ground ginger (or 2 tsp grated fresh);
  • 1 tsp cinnamon;
  • 1/2 tsp. nutmeg;
  • 1/2 tsp. salt.

If we are so good (and we are) that we peeled the orange in advance, chopped the carrots and nuts (separately) in a blender and washed the raisins, then the beginning will be as follows: mix the flour with baking powder, soda, salt and spices (cinnamon, nutmeg , ground ginger).

Leave the flour mixture alone for a while.

Now we will need a blender again to create a homogeneous mixture of butter, orange juice, syrup and zest.

Who's too lazy to squeeze juice out of an orange? To me. So I simply ground the whole orange, along with the “films,” into dust with a blender. You can follow my example, if suddenly. Or you may not take it.

To the mixture of liquid components of the pie, add carrots and fresh grated ginger, if we have fresh ginger. And mix everything.
