We reveal some secrets of the ingredients for preparing a tasty and satisfying dish in its different types, but the same for all recipes:

Rice should be felt in the dish, so choose steamed or long-grain rice.

Round rice contains a lot of starch; during cooking, it will simply “dissolve” in the meat and become “hardly visible,” which violates the aesthetics of serving.

Recipe:

  • Rice – 200 gr.;
  • Meat (1-2 varieties) – 800g;
  • Egg – 2 yolks;
  • Tomato paste – 3-4 tbsp./l.;
  • Black pepper – ½ tsp;
  • Butter (100 g) or vegetable oil (100 ml);
  • Salt - to taste;
  • Bay leaf – 2 -3 t.;
  • Flour – 1 tbsp;
  • Carrots – 2 large carrots, grated;
  • Onions – 2 medium-sized heads;
  • Cream (sour cream) – 150 gr.;
  • Water for broth – 2 – 3 glasses;

Cooking technology:

  • Rinse the rice well until it is clear of milk. Boil for 4-6 minutes until half cooked, drain in a colander
  • Grind the meat through an electric meat grinder or chopper, add chopped onions, salt, pepper, and the yolk of 2 eggs to the meat;
  • Mix with rice, add ½ cup of water for juiciness;

Attention! Beat the resulting meat mass on the working surface of the table. Meat juice soaks the rice, making the hedgehogs in tomato sauce tender and airy in the finished dish.

  • We form hedgehogs on a baking sheet with hands moistened with water. This way they mold better and are enveloped in a film of water on top, forming a tender crust in the oven;
  • In a frying pan, fry onions and carrots in oil;
  • Add flour and stir;
  • Add tomato paste, bay leaf, salt, stir occasionally;
    At the end of frying, pour in cream (sour cream) plus 2.5 cups of water, fry everything for 8-10 minutes;
  • Pour the sauce over the cooked hedgehogs, put in the oven for 40 minutes at 180 - 200 degrees;

Cooking in a slow cooker

In a slow cooker, hedgehogs in tomato sauce are cooked quickly, resulting in a tasty, spicy and satisfying dish from simple ingredients: rice, meat, tomato paste, raw onions, carrots and some spices.

Recipe:

  • Meat (pork + beef), ready-made frozen or fresh – 1 kg.
  • Rice - 350-400g;
  • Egg -2 pcs.;
  • Onion - 3 pcs.;
  • Carrots – 2 pcs.;
  • Tomato juice – 1 liter or tomato paste – 4 tbsp;
  • Salt, pepper - to taste;
  • Bay leaf -2 pcs.;
  • Butter or sunflower – 100 ml;
  • Wheat flour – 2 tbsp;
  • Water for minced meat and gravy – 1.5 cups.

Technology:

  • Pass the meat through a manual or electric meat grinder, add raw onion, salt, pepper, eggs, add water for juiciness;
  • Beat the resulting meat mass with your hands on the work table for juiciness;
  • Rinse and boil for 5 minutes. Place rice in a colander to drain, do not rinse, so that gluten remains;
  • Mix meat mixture with rice;
  • Form large meat hedgehog balls and place carefully in the slow cooker;
  • Fry the onions and carrots in a frying pan, sprinkle flour on top, after 2 minutes of frying, pour in tomato juice or tomato paste diluted in water, add salt and pepper, fry the gravy mixture for another 5-6 minutes;
  • Pour the prepared gravy over the hedgehogs in the multicooker and turn on the “stew” mode for 1 hour.

Hedgehogs cooked in a frying pan

The simplest, “bachelor” way to cook hedgehogs is in a frying pan.

Recipe:

  • Minced meat (ready, chilled) – 500g;
  • Rice -100 gr.;
  • Egg – 1 pc.;
  • Tomato paste (2 tbsp.) or tomatoes (3-4 pcs.);
  • Onion – 1 pc.;
  • Vegetable or butter – 50g;
  • Spices – bay leaf, pepper, salt;
  • Flour -1 tbsp;
  • Water for minced meat and gravy – 500 ml;
  • Cream or sour cream -100 gr.

Technology:

  • Mix the meat with finely chopped onion, egg, pepper, salt, add the egg, beat the mixture on the table;
  • Add rice to the minced meat, pre-boiled for 5-6 minutes;
  • Make large hedgehog balls;
  • Fry the onion in a frying pan, sprinkle with flour, throw in the bay leaves, pour over tomato juice or diluted tomato paste;
  • If you don’t have tomato paste, ready-made tomato sauce, which already contains thickeners for gravy, is perfect;
  • You can add cream or sour cream to the boiling gravy;
  • Carefully place the hedgehogs into the boiling sauce, after 5 minutes reduce the heat, close the lid, and simmer for 15-20 minutes.
  • Spices: salt, pepper, bay leaf;
  • Sour cream with a fat content of 20-25% - 200-300 g;
  • Onion – 3 pcs.;
  • Carrots – 3 pcs.;
  • Water – 1.5 cups.
  • Technology:

    • The rice is soaked and thoroughly washed in running water until transparent, until the “milky” color disappears;
    • Add to the minced meat in order: raw onion, finely chopped, salt, egg, black pepper, you can add 2 cloves of garlic for a bright and aromatic smell;
    • If the meat is fresh from the store, then when grinding in a meat grinder, you can add raw onion, two eggs (you can only use yolks) and pepper, salt, a little water for juiciness, beat the mass as for cutlets, mix with slightly boiled rice;
    • Prepare gravy from fried onions and carrots and add sour cream to the gravy, salt, pepper, dilute with water for volume;
    • Now you can form large round hedgehogs, pour gravy with sour cream and cook them in a frying pan, in the oven, and in a slow cooker, everywhere the dish will be a decoration for a family dinner or breakfast.

    When you don’t have to think about how to make something so tasty and quick for dinner, minced hedgehogs with rice in tomato sauce immediately come to mind.

    Everyone loves this dish: both children and adults. Mothers with imagination make the most amazing edible things out of hedgehogs, for example, hedgehogs under a sail, placing them on a platform made of bread, and instead of a sail, they impale a sail on a skewer from a thin layer of cheese, plus, of course, a side dish of porridge or potatoes.

    • To prepare the dish we will need:
    • Minced meat - about 400 grams
    • Rice (preferably short grain) - 100 grams
    • Onion - 1 pc.
    • Carrots - 1 pc.
    • Flour - 2 tbsp.
    • Tomato paste - 2 tbsp.
    • Oil for frying
    • Salt, spices to taste

    Recipe for minced hedgehogs with rice in tomato sauce

      To prepare hedgehogs, we need approximately 400 grams of minced meat. We took homemade minced pork and beef. The minced meat must be salted and peppered. We will also need 100 grams of round grain rice, which must first be washed in water. Combine the minced meat and rice and mix well.

      Pour about 2 tablespoons of flour into a plate. From the resulting minced meat we form hedgehogs - round small balls. We roll each hedgehog well in flour.

      Pour oil into a frying pan, heat it up and lay out the resulting hedgehogs to fry on all sides.

      Peel the onion and cut into cubes. Peel the carrots and grate them on a coarse grater. Fry the vegetables in a small amount of oil.

      When the vegetables are ready, add a little flour to them, literally 1 level teaspoon, 2 tablespoons of tomato paste, mix well. Immediately pour about 1 cup of boiled water.

      Place fried hedgehogs from minced meat and rice into the resulting tomato sauce. If necessary, add more water so that it practically covers our hedgehogs. Salt, add spices to taste and cook the hedgehogs, turning them occasionally, for about 35-40 minutes over low heat. The finished dish can be sprinkled with herbs. Bon appetit!

    • 20 ml oil;
    • 750 g minced meat;
    • 1 egg;

    • 160 g rice;
    • 70 g sour cream.

    Time – 1 hour and 25 minutes.

    Procedure:

    1. Rinse the rice until transparent, place in a saucepan;
    2. Pour in the same amount of water (160 ml) and cook for ten minutes;
    3. After this, transfer it to a bowl to cool quickly;
    4. Peel the onion, rinse and chop it;
    5. Heat the oil in a frying pan, add the onion and simmer until soft;
    6. Add minced meat, onion, egg and half of the tomato paste to the rice;

    • 30 ml tomato paste;
    • 30 g flour;
    • 60 ml sour cream;
    • 1 carrot;
    • 140 g sweet pepper;
    • 240 g minced pork;
    • 260 g minced beef;
    • 1 onion;
    • 170 g rice;
    • 400 ml water;
    • 40 ml oil.

    Time – 2 hours.

    Calories – 163.

    Cooking method:

    1. Peel carrots, peppers, onions, wash all vegetables;
    2. Chop the onion with a sharp knife, grate the carrots, and cut the pepper into strips;
    3. Place the minced meat in a bowl, add onion and spices to it;
    4. Rinse the rice with running water and also add to the meat;
    5. Beat the mass on the table until the mass stops crumbling;
    6. Form meatballs from the minced meat and set them aside;
    7. Pour oil into a bowl, place vegetables;

    • 5 g dry basil;
    • 650 g chicken fillet;
    • 5 g flour;
    • 1 bell pepper;
    • 1 can of canned tomatoes;
    • 1 egg;
    • 50 g jasmine rice.

    Time – 1 hour and 20 minutes.

    Calories – 93.

    Cooking method:

    1. Rinse the meat, trim off the fat and dry the fillet;
    2. Chop coarsely and place in a blender to grind into mince;
    3. Transfer it to a bowl and set aside;
    4. Wash the pepper, remove the core and chop finely;
    5. Peel the onion, rinse and finely chop;
    6. Place the onion and pepper in a blender and blend until smooth;
    7. Then place in a sieve or cheesecloth, squeeze and add the mixture to the minced meat;
    8. Add the egg and start kneading the mixture;
    9. Season to taste, add dry rice, stir;
    10. Open the can of tomatoes, drain the liquid, add flour to it and stir;
    11. Grease the mold with oil, place the formed hedgehogs there;
    12. Pour the tomato liquid over the whole thing and sprinkle with basil;
    13. Place in the oven for 50 minutes at 180 Celsius.

    If you prepare the minced meat yourself (as we did in the last recipe), the meatballs will be much more tender and juicier, since then there will be juice left in the meat, which will make the dish tastier.

    You can add some soaked bread to the meatballs. It is important to squeeze it out and add it in this form. Next, it will absorb all the meat juice, and since the meatballs are baked, the bread will not allow this juice to go beyond the meat ball.

    Add herbs and spices to the meat mixture. They will make your hedgehogs even tastier, fresher and special. Use tarragon, rosemary, basil, coriander, paprika.

      The basis of any meatballs is minced meat. It is best prepared at home from a fresh piece of beef or pork; you can also add chicken fillet. We wash the selected meat in cold water, dry it with a paper towel and pass it through a meat grinder.

      The next step is to fill the minced meat with a wide variety of spices. Any ready-made sets of seasonings for meat will be suitable for this purpose; standard salt and ground black pepper will not do here either. Add the entire prepared palette of spices to the bowl with the ground meat and mix the ingredients thoroughly.

      We leave the minced meat to infuse with spices for a while and during this time we prepare the rice: you can take it of absolutely any variety. Cook the washed rice in a deep saucepan according to the instructions on the package. Place the finished, cooled rice into a bowl with meat, and add the specified number of chicken eggs there.

      Onions are not listed in the list of ingredients, but if desired, you can fry them with a clove of garlic in vegetable oil and also add them to the meat. Mix the minced meat thoroughly with a spoon or even with your hands: we should get minced meat that is very dense in consistency, which can be easily molded.

      With hands soaked in cold water, we divide all the minced meat into equal equal parts, and then form them into fairly large meatballs. We place the prepared hedgehogs in the form chosen for cooking so that they do not touch each other.

      Combine the specified amount of tomato paste or tomato juice with a small amount of water in a deep plate. Pour the resulting mixture into the contents of the frying pan and place it on the fire.

      Peel the carrots and grate them on a coarse grater, pour the chopped carrots on top of the hedgehogs in the frying pan. Bring the liquid to a boil and simmer the dish under a closed lid for 20 minutes over not too high heat. After the specified time has passed, remove the lid and cook the meat until fully cooked.

    • Rice – 0.5 tbsp.;

    • Tomato juice – 1-1.5 tbsp.;
    • Sour cream – 100 ml;
    • Water – 200 ml;
    • Vegetable oil – 2 tbsp;
    • Salt - to taste;
    • Spices - to taste.

    Preparation

    Wash the rice thoroughly in warm water.

    Peel the onion and finely chop it, then fry it in a heated frying pan with 1 tbsp. vegetable oil until light golden brown. Let cool for a couple of minutes.

    Place the chilled minced pork in a deep bowl (if it was frozen, defrost it first), add the egg, washed rice and fried onion. Season with salt and spices at your discretion. Mix thoroughly with your hands so that all ingredients are evenly distributed.

    From the resulting mass we make identical medium-sized balls. Place them in a saucepan or frying pan with high sides.

    For the sauce, in a separate bowl, mix flour and sour cream.

    Pour tomato juice and water into the sour cream mixture, stir until smooth.

    Peel the carrots and cut them into fairly large cubes. In the frying pan in which the onions were previously fried, add the remaining tablespoon of oil and the prepared carrots, sauté until soft.

    Gently transfer the finished carrots into the sauce and mix lightly.

    Pour the resulting sauce over the meat balls so that the hedgehogs are almost completely covered with it.

    Place the pan on high heat and wait for it to boil. Then reduce the gas to a minimum, cover the dish with a lid and simmer for 30-40 minutes. You can serve hedgehogs with mashed potatoes, sprinkle with sauce and garnish with parsley.

    On a note:

    • For those who like a leaner dish, you can take minced meat from beef, chicken, turkey, or mixed instead of pork.
    • It is convenient to form meat balls with your hands dipped in cold water. This way they don't stick to your palms.
    • To prevent the hedgehogs from falling apart during stewing, before pouring in the sauce, you can first fry them over high heat until golden brown or lower them into boiling water for a few seconds.
    • Alternatively, hedgehogs with rice in tomato sauce can be baked in the oven or cooked in a slow cooker. To do this, in the first case, they are laid out in a heat-resistant form and simmered in the oven for about 40 minutes, and when using a multicooker, the dish is put in the “Stew” mode for about an hour.
