Guatemala is ahead of India in its production

Green coffee from Guatemala

Guatemala ranks 9th in the ranking of green coffee producers, losing 9th to Peru. Most green coffee from Guatemala is exported to the US. in the world for the production of green coffee and is one of the largest suppliers of green coffee beans to the United States market. Guatemala offers green coffee for mass consumption, and exclusive types of green coffee under the Specialty coffee brand for further roasting and other purposes. You can buy green coffee from Guatemala on the New York Coffee Exchange.

Green coffee production in Guatemala

Coffee trees were brought to the country in 1750 by Catholics. The monks grew coffee trees near their monasteries, and the mass production of green coffee was established by German settlers at the end of the 19th century. Today the coffee business is concentrated in 8 main regions. Connoisseurs and gourmets often prefer coffee from Guatemala to any other for its complex bouquet of aromas. The best among the best is Guatemala SHB. An unusually large variety of coffee maragogype from Guatemala fame throughout the coffee world. Several US roasters source green coffee from the famed regions of Antigua Guatemala and Hahaltenango for their limited-edition gourmet coffees.

Green coffee immediately ensured the growth of the economy of the Republic of Guatemala (The Republic of Guatemala). Today, the country's coffee industry employs about a third of the country's able-bodied population. Unfortunately, the unstable domestic political situation does not contribute to the prosperity of the coffee business.
Most of the small entrepreneurs involved in growing and harvesting coffee are descendants of the Indians. Such farms fall under the tutelage of organizations to promote small businesses. Many aid programs are financed by the United States and other governments, which are extremely interested in regular supplies of high-quality green coffee. In general, the interests of leading roasters are being respected, who are now striving to expand the market for selected specialty green coffee (Specialty coffee). Also, some assistance programs encourage local growers to turn coffee berries into finished green coffee beans, but most of the bright red coffee fruits end up in dealers, often right on the side of the road.

The Maya Nuevon Cooperative, which supplies raw coffee to export company Unitrade, is an example of how aid programs, in this case from the European Union, are changing the lives and work of local coffee farmers. Thus, the production of green coffee changes the collection address to the address of the processor of coffee berries.

Antigua Guatemala or La Antigua (Antigua Guatemala)

Antigua Guatemala or La Antigua (Antigua Guatemala, which means "Old Guatemala") is a small region located near the old colonial capital of the same name. This is the most famous green coffee growing and production area in Guatemala. Located at an altitude of 1533 meters. There is such a high demand for local products that local farmers have united and founded a special zone for growing elite coffee under the brand name "Antigua". Actually, in most cases, Guatemalan coffee appears on the world market under this name - Guatemala Antigua. And this is one of the varieties of coffee that is often faked. Without being a literate and qualified coffee connoisseur, it is very difficult to distinguish the green grain of Guatemala Antigua from other varieties of the same Guatemalan coffee. And even more so when fried. On the palate, despite the distinctive and characteristic features of taste and aroma, it is often confused by beginners who have never tried real Guatemalan coffee Guatemala Antigua.

Coffee Guatemala Antigua has its place on the world map just like the best wines in the world. One of the best Finca plantations in the region. Its grain takes the best places at exhibitions, has many well-deserved awards and regular customers, including Starbucks. The Bella Vista plantations grow and process green coffees such as Santa Ana la Guerta, Bella Carmona, Pulkal, all of which proudly carry the Antigua label, known throughout the world. Green coffee from Antigua is famous, first of all, for its high quality beans. Roasted coffee tastes richer, the bouquet is more complex, the fragrant "smoke" is more noticeable compared to other types of Guatemalan coffee (Guatemalan coffee).

Cardamom (lat. cardamomum listen)) is a herbaceous perennial plant and its fruits or seeds used in cooking and medicine. Cardamom belongs to the ginger family and has two main genera. Both genera are native to the evergreen forests of India, Nepal, and Bhutan, so they have a similar structure, small seed pods about 1-2 centimeters long, thin outer shell, and small black seeds. The plant itself looks like a reed and grows up to 4 meters in length.

The first genus of cardamom is eletarian (lat. Elettari a), which is also known as green cardamom. Second is amomum(lat. Amomum), which includes black cardamom. According to their properties, green and black cardamom are very similar and have an equally pleasant aroma, and in appearance they differ mainly in color and in that black is slightly larger in size.

Cardamom is highly valued for its qualities and due to this, in regions with opportunities for its growth, cardamom is an important resource. After all, it is in third place on the world podium in terms of high cost among spices, second only to saffron and vanilla. Today, the largest producer and exporter of cardamom in the world is Guatemala, which has overtaken the birthplace of cardamom, India, in its production, shifting it to second place.

By its origin, cardamom is considered one of the most ancient spices in the world, the history of which goes back several thousand years. But throughout its history, it has been a valuable resource, being both a culinary delight and a healing agent.

Indeed, despite the fact that India is considered the birthplace of cardamom, there is written evidence that cardamom was known as a medicine in Egypt for many centuries. Concrete proof of this is the mention of cardamom in the Ebers Papyrus, one of the oldest writings containing a list of various diseases, their symptoms and treatments, dating back to around 1500 BC. The Egyptians used it as medicine, embalming and other ritual ceremonies. They even chewed cardamom pods to clean their teeth and freshen their breath.

Cardamom was also known in Babylon and the Assyrian empire. The Greeks and Romans mainly used cardamom as a material for perfumes, ointments and aromatic oils. And like many spices, for centuries, cardamom has been a symbol of luxury and royalty.

But, despite its popularity, in general, most of the world's supply of cardamom was carried out by collecting seeds from wild plants. The first plantations were created by British colonists only in the 19th century.

Useful properties of cardamom, side effects and contraindications

Starting to talk about the specific healing properties of cardamom, let us recall once again that the Egyptians used it as chewing gum and, as modern science shows, they did it very correctly. Cardamom is currently widely used in South Asia in the treatment of diseases of the oral cavity, in particular teeth and gums, as well as soothe them with a scratchy throat or eliminate hoarseness. And the fact that cardamom is the best way to protect against bad breath has been adopted even by some chewing gum manufacturers.

The essential oil found in cardamom has been shown to relieve inflammation in the gastrointestinal tract, making cardamom an excellent product for people with digestive problems, bowel problems, dysentery, or simply indigestion. It is even able to soothe bloating and heartburn. Although, in principle, cardamom eliminates any indigestion. In this case, cardamom can be used as a separate seed, as a seasoning, or as a tea.

Also cardamom in South Asia is a folk remedy in the treatment of problems with urination. Together with banana leaves and other local remedies, cardamom helps to reduce discomfort during the removal of stones from the kidneys, acts as a diuretic, and is anti-inflammatory for problems with the kidneys and urinary tract.

And the aromatic qualities of cardamom, appreciated by the Romans and Greeks, can serve as aromatherapy to relieve tension and even in the fight against depression. In this case, cardamom oil can be added to baths or ground cardamom can be used when making tea.

Cardamom also contains phytochemicals such as indole-3-carbinol and diindolylmethane, which are known cancer fighters.

In addition, cardamom is rich in antioxidants, which protect us from the aging process and stress, as well as prevent the occurrence of well-known diseases. Cardamom essential oil has only recently attracted the attention of scientists for its healing properties, while Asian and Indian cultures have been using its properties for a very long time. In conclusion of the enumeration of the healing properties of cardamom, we note it as a source of potassium, calcium, magnesium, iron and manganese.

How to choose and store cardamom

On sale, cardamom is available all year round, both in the form of pods with seeds, and in the form of ground seeds, spices. Depending on the identity of the cardamom, its skin can be light green or dark brown. Fresh cardamom pods are heavy and have a sweet aroma, especially if you scratch the skin a little with your fingernail. And, of course, avoid pods that have a suspicious color or spots of unknown origin on their surface.

Wish you success!

Choose a recipe to your liking and enjoy the new, unforgettable tastes that cardamom can give you!
