Compound:

  • 150-200 g each of broccoli, cauliflower and Brussels sprouts
  • one sweet pepper

  • vegetable oil
  • 50 g cheese

Meatballs with vegetables

This is the amount of ingredients for several servings - for a large family or for guests. I have a mold of 25 x 35 cm, which makes 5-7 servings.

Place a layer of thinly sliced potatoes (no more than 0.5 cm) in the mold, cut the carrots even thinner (no more than 0.3 cm). These vegetables take the longest to cook in the oven. Therefore, they need to be placed at the bottom of the mold, where there will be more liquid and more heating.

Layer of bell pepper. I have frozen peppers. Lightly salt these layers.

Then spread the cabbage evenly. also add a little salt and pepper. If you use frozen cabbage, you must first defrost it at room temperature. Otherwise, baking in the oven will take much longer, since it will take time to heat the cold vegetables first.

Now, from the pre-prepared minced meat, we form meatballs and also spread them evenly on the vegetables. I have minced pork and beef 50:50. You can, of course, use any minced meat you like.

Place the sour cream in a glass and fill it with water, preferably hot, until full. Stir, add salt to taste and pour into the mold. Sprinkle with vegetable seasoning (I use potato seasoning) and ground coriander, which will give the dish a richer, deeper flavor and aroma.

Top with pre-sautéed onions.

Cover the form with foil. We put it in the oven, already heated to 230 degrees (these are the parameters of my oven, perhaps 200 degrees is enough in your oven). Cooking times will vary for everyone. It depends on the quantity of products, whether they are at the same temperature and on the baking dish. First, everything should warm up to a boil (it took me about 30-35 minutes), now lower the temperature to 200 (corresponding to 180 for your oven). From the boiling time, cook for another 30-35 minutes.

Carefully remove the almost finished dish from the oven and sprinkle with grated cheese. Place in the oven until the cheese melts and browns.

Meatballs are added to vegetable stew at the end of cooking, so you need to prepare the vegetables first. Cut the potatoes into pieces or slices, into medium-sized cubes.

Cut the onion into half rings, not quite thinly. Cut the carrots lengthwise into four parts, then cut into pieces 0.5-1 cm thick.

Cut the tomatoes into 4-6 pieces or cut into large slices. Remove the seeds from the sweet pepper and cut it into strips of 2-3 cm.

Heat the oil in a cauldron or deep frying pan. First, add the onion and fry it a little until soft. Then add carrots and fry lightly. Add bell pepper and continue frying for 1-2 minutes. If you are preparing vegetable stew as a dietary option, then reduce the amount of oil or simmer the vegetables with the addition of water.

Lay out the potatoes, season the stew with spices (choose to your taste, you can add any spices to the stew).

Stir and continue frying the vegetables until the potatoes are saturated with oil. You can lightly fry it, but then the potatoes in the stew will not turn out crumbly, they will remain in pieces.

Add water or broth and salt to taste. Bring to a boil, cover the stew with a lid and simmer the vegetables for 20 minutes until the potatoes are completely cooked. Then add the tomatoes and continue to simmer for another 5 minutes without opening the lid. The heat is medium, the vegetables should not boil too much.

While the potatoes and vegetables are stewing, use the minced meat to make small meatballs for the stew and fry them in oil until golden brown on all sides. If you buy ready-made minced meat, add spices and salt to it, you can also finely chop or grate the onion. If you are making minced meat from a piece of meat, then pass one onion and a slice of white loaf soaked in water through a meat grinder along with the meat. Season with salt and pepper, knead the minced meat to a thick viscous mass and make meatballs.

Add fried meatballs and cauliflower to the stew. The cabbage must be boiled in water in advance until half cooked, otherwise the stew will taste like boiled cabbage. Simmer the stew under the lid for 5-6 minutes, turn off the heat and leave to simmer for a few minutes.

Place the hot vegetable stew with meatballs on plates, season with any finely chopped herbs and serve. This delicious hot dish can be served with vegetable salad, fresh vegetables or sour cream - your choice. Bon appetit!
