Kissel made from starch and frozen cranberries. Cranberry pudding from frozen cranberries

Earlier, in the days of pre-revolutionary Russia, kissels were prepared on the basis of barley and oats with the addition of peas, and the name itself meant “sour”. Berry and fruit drinks began to appear much later - they were brewed from apples, raspberries, strawberries, cherries, etc. Today we propose to make cranberry jelly. According to its taste, it corresponds to the original interpretation, since these berries are quite sour and at the same time they contain a huge amount of vitamins and minerals, which is very useful for the body of both children and adults.

Cranberry jelly with health benefits

Before you figure out how to cook cranberry jelly, I want to say a few words about its incredible benefits. The berry itself is rightfully recognized as a powerful natural medicine that can be used at home throughout the year. Due to the high content of acids, frozen fruits are perfectly preserved for several months and do not lose their healing properties.

On a note! Unlike many other berries, cranberries can provide not only the prevention of colds, but also cure the flu!

Cranberry jelly is very useful in diseases of the gastrointestinal tract - it has a positive effect on the condition of the mucosa and has an alkalizing effect. In addition, such a drink has a mild diuretic property and, together with urine, removes pathogens of viral and bacterial infections from the body.

Let's start cooking!

Kissels from berries

Cranberries contain a sufficient amount of pectin, and therefore, in the process of preparing jelly, you do not need to add too much starch. In addition, it is quite possible to make a healthy drink from both fresh and frozen fruits.

Kissel from fresh cranberries

So, how to cook jelly from fresh cranberries and starch. You will need:

  • 100 g of berries;
  • 6 tablespoons of sugar;
  • half a liter of water;
  • 4 teaspoons potato starch.

Pour the fruits into a large bowl and carefully sort them out. We discard spoiled berries and vegetable debris. We shift a good cranberry into a colander and wash it in several waters. Leave over the sink to drain excess liquid. Now we return the fruits to a large bowl and, using a pusher or a regular spoon, knead them until juice is formed. We pour it into a glass container and send it to a cool place, you can put the juice in the refrigerator.

Pour the pomace into a saucepan, pour the specified amount of hot water and put on the stove. Turn on the medium gas supply, bring the contents to a boil and cook with constant stirring for 5-6 minutes. We turn off the fire.

Place a colander on the bowl that previously contained the berries and drain the resulting broth. At the same time, about 200 ml of broth is poured into a separate container and allowed to cool. We throw away the pulp. We return the broth from the bowl to the saucepan, add sugar and put everything on the stove. Let it boil, remove the foam and turn off the gas supply.

Now we take a set aside portion of the broth and dilute the starch in it. Mix thoroughly so that all the starch is dispersed and there are no lumps. We return the saucepan with the syrup to the fire, pour the broth with starch into it and bring it to a boil again. While the mixture boils, it must be constantly stirred. Immediately after boiling, remove the jelly from the stove.

Important! Kissel should not boil for a long time, otherwise it will turn out to be too watery!

Let the drink cool slightly and pour in the cranberry juice, which we squeezed earlier and put in the refrigerator. Once again, mix everything well and pour into a glass container.

Kissel from frozen cranberries

The recipe for cranberry jelly from frozen cranberries involves the use of similar products:

  • 350 g frozen berries;
  • 250 g sugar;
  • 4 tables. spoons of starch;
  • 2 liters of water.

First you need to prepare the berries. If you have frozen clean fruits, then you just need to transfer them to a bowl and wait until they completely thaw. Store-bought cranberries are best pre-rinsed and only after defrosting. In this case, the bowl must be covered with gauze, so that later it would be more convenient to squeeze the juice from the fruit. So, knead the melted cranberries and pour the juice into a separate container.

Pour the cake with the indicated amount of water and bring to a boil, then pour everything into a bowl through a colander, discard the cake, and return the broth to the saucepan. Add starch to cranberry juice and mix thoroughly. Just pay attention to the fact that starch must be diluted without fail in a cold liquid, otherwise it will immediately gel and take lumps. Pour the juice with starch into the saucepan and wait until everything boils again.

Important! In the process of boiling, the contents of the saucepan must be constantly mixed, otherwise the starch will settle and again lumps will form!

After our jelly boils, reduce the gas supply to a minimum and cook for five minutes. Remove the saucepan from the stove and let cool.

Kissel from cranberry juice

There is a recipe for jelly, which is made not from cranberries, but from juice. To make this drink you will need:

  • liter of juice;
  • 5 tables. spoons of starch;
  • a glass of sugar.

We dilute the indicated amount of starch in 200 ml of juice, pour the rest into a saucepan and bring to a boil. With the appearance of the first air bubbles, we begin to add cold juice in a thin stream and, with constant stirring, let the contents boil.

Add sugar. Cook everything for about five minutes, then remove the jelly from the heat and let it cool.

In general, it is not difficult to prepare cranberry jelly, but in order to make it as tasty as possible and have the necessary consistency, some features should be taken into account.

  1. As you know, cranberries are quite sour berries, especially if the fruits are not quite ripe. For this reason, ripe cranberries should be purchased - in this case, the squeezed juice will have a more pleasant taste.
  2. To make the drink have a bright color inherent in ripe fruits, you can add a small pinch of citric acid to it. Just be careful not to overdo it, otherwise the jelly will turn out too sour.
  3. It is more convenient to adjust the taste of the drink at the stage of preparing the syrup. Take a sample and put the sugar in advance, because after adding the starch, the consistency will be thick, the sugar will take much longer to dissolve, and you risk overcooking the jelly.
  4. Instead of potato starch, it is quite possible to use corn starch. But just remember that the astringent properties of the latter are somewhat worse, and there is a high probability that the jelly will turn out to be too watery. If you put too much starch, the taste of the drink will be lost.
  5. Frozen cranberry jelly does not like long boiling. After you have added starch, it is recommended to cook it for no more than five minutes.
  6. Frozen fruits provide an opportunity to enjoy the taste and benefits of cranberry jelly at any time of the year, even at the end of the berry season.

Cranberries contain antioxidants that protect body cells from premature aging and a number of serious diseases. Frozen cranberries can lie in the freezer for a whole year without losing their beneficial properties. Cranberries are high in B vitamins and minerals, and cranberries also help the body flush out toxins that build up in us during a cold. Ingredients

  • 1 glass of berries
  • 0.5 - 1 glass
  • 2 tbsp (with slide)
  • 2 liters of water

Cranberry jelly - recipe how to cook

1. Berries should be rinsed with water.

2. Pour water into the pan and immediately put the cranberries and sugar. We put on fire and cook for 10 minutes after boiling. In the process of cooking, the berries must be crushed with a spoon in order to “extract” more juice.

Berries can be put in a saucepan already pre-mashed, then they will need to be cooked for 5 minutes, no more. So the jelly will turn out to be more “lively” and useful.

3. Put a colander in a large cup and pour cranberry broth into it. We throw away the cake, and pour the strained broth back into the pan and put it on the stove.

4. Stir the starch in half a glass of cold water and pour it into a boiling broth in a thin stream. Pour into the center of the pan, stirring constantly. It is convenient to do this with two hands - pour with one hand, interfere with the other hand.

5. As soon as the jelly boils, remove from heat and cool. You need to cool the jelly either under the lid, or with constant stirring. This will protect it from the formation of a film unloved by all.

Delicious sweet jelly, my love for this drink has remained since childhood. And although some of us prefer other drinks with age, I think we should not forget about jelly. Especially if it is brewed with your own hands and not from concentrates. So, I offer a cranberry jelly recipe from frozen cranberries.

INGREDIENTS

  • Fresh or frozen cranberries - 300 g;
  • Sugar - 6 to 10 tbsp. l. (here it is already as you like: either with sourness, or very sweet);
  • Potato starch - 2 tbsp. l.

COOKING

  1. To begin with, put a pot of water on the fire (about 3 liters) and immediately pour cranberries into it. (If the cranberries are from the swamp, then we will wash them.)
  2. We are waiting for the water to boil along with the berry.
  3. In the meantime, dissolve the starch in a glass of cold water (200-250 g).
  4. If the water boils, we look at the state of our berries. If all the cranberries burst, then we filter the water through a fine sieve or gauze, otherwise we will get not jelly, but porridge. If the berries are preserved, then just take them out of the pan.
  5. We do not turn off the stove, the water should boil. Add sugar to taste to the pan.
  6. And now - the final and crucial moment. Pour the starch dissolved in water slowly, in a thin stream, into boiling water. At the same time, mix everything well so that lumps do not form.
  7. As soon as everything is mixed, remove the pan from the heat, because the cranberry jelly is already ready!
  8. Now let's wait for our cranberry jelly to cool down. And when it cools down - serve to the table and enjoy! Your kids will definitely like cranberry jelly. Bon appetit!
